  1. The layers are cut into wide (about 6 cm) strips, sprinkled with flour, stacked and chopped into thin strips.
  2. Each sheet of dough, plentifully powdered with flour on top, is rolled up and thinly cut across; excess flour is crushed from the finished long noodles.

During fasting, eggs are banned, but you still need to eat something. So our people figured out how to make homemade noodles for soup without cheap ingredients. And in several versions.

  1. A glass of water, three glasses of flour, salt and a spoonful of 6% vinegar. When kneading, it must be borne in mind that such a dough becomes too dense rather abruptly. We need to stop in time. If after the “rest” the dough seems soft, you can knead it a little more.
  2. A glass of water, two and a half - flour and a couple of tablespoons of starch. In this case, the dough comes out quite soft, so there is no need to be vigilant.

You can, of course, get by with only water and flour, but remember that you will have to roll out the sheet very thinly, and without additional components there is a danger that it will tear.

Hungarian noodle dough

Here the composition, one might say, is directly opposite to the previous one. Hungarians offer a recipe for homemade egg noodles, in which there is no water at all. Three eggs are taken, kneaded with salt and two tablespoons of olive oil, poured into a third of a kilogram of flour - and the dough is kneaded. In finished form, it should not stick to the surface at all and have a slight gloss. The rest of the cooking of homemade pasta is normal.

Lagman noodles

If you think that any pasta is suitable for him, you are mistaken. Even with their homemade standard recipe, you will get the most ordinary soup. Proper homemade noodles for lagman are prepared much more intricately. 3 cups of flour are mixed with salt (somewhere a teaspoon - the dough should be slightly salty), then beaten eggs (2 pieces) are added, and the dough is kneaded for the first time. A glass of water is slightly heated and poured into it. It will stick to your hands for a long time, but you should not add additional flour. The kneaded dough on a lightly sprinkled table is formed into a ball, flattened, and so on again and again. When the result satisfies you, wrap the product in a film and put it in the refrigerator for an hour. Then another glass of water is heated, soda and salt are stirred in it, half a teaspoon each. This solution is rubbed into the dough - to increase the viscosity. And here the most difficult process for a beginner begins: the dough is crumpled, stretched, twisted into a tourniquet, tapped on the table, crumpled and again stretched to the entire length of the arms. When its elasticity suits you, divide it into small balls, roll some kind of sausages out of them and grease on all sides with vegetable oil. With each of them, the actions mastered on a single piece of dough are repeated. In the end, thin flagella will turn out. As they lengthen, they fold in half and stretch out again. Homemade noodles for lagman are boiled immediately, in batches, in a large saucepan, and removed from it immediately after surfacing. The pasta decoction is then put into the finished soup.

Chinese homemade noodles

The composition of the dough is the simplest: flour with water in a ratio of 2.5: 1. The only difference is that the water pours in almost ice cold. But the formation process is somewhat reminiscent of the option for the lagman. You will have to soberly assess your physical form, since only a rather dexterous person can cook homemade noodles for Chinese soup. The kneaded dough is wrapped in a cloth and put in the cold for half an hour. After it rolls into a long sausage and rotates in various ways. You can start with the movements with which children twist the rope when they jump over it, but only in front of the chest. As plasticity increases, the strokes become more complicated - the tourniquet twists and unwinds in different directions. Somehow it all resembles morning exercises. Got elasticity? Now the dough for Chinese homemade noodles is divided into pieces and stretched into threads in the same way. If they are too long, you can cut them later. And you need to use it in a dish right away - during storage, Chinese noodles dry out, begin to break down and lose their taste.

rice noodles

Not only is it, they say, more useful than wheat, but dishes with it acquire new flavors. A real homemade one is prepared with certain difficulties, but all of them can be overcome with a persistent desire to achieve your goal. So, in a large bowl, a glass of a tablespoon of wheat and two of corn starch are combined. With continuous stirring, two glasses of water are poured. The dough is salted and flavored with a spoonful of vegetable oil, kneaded, covered and left alone for an hour and a half. It turns out to be liquid. After that, a water bath is prepared: water is boiled in a large saucepan, a greased oven tray is heated on it, a little dough is poured on it - like a big pancake. After five minutes, the tray is moved to another bowl of water, in which ice floats, for easy separation of the “cake”. And so with all the test. Simplified rice noodle recipe

It is for those who are not ready to mess with a water bath, but who like homemade rice noodles more than store-bought. Even flour for her can be made without leaving home if you have cereal. Rinse it, drain the water, and dry the rice thoroughly. Dry cereal is poured into a blender or coffee grinder and ground almost to the state of dust. Otherwise, the noodles are prepared in the same way as wheat noodles (recipe without water): three eggs are beaten into a pound of flour, salt is poured in, the dough is kneaded until a homogeneous, dense, but plastic state is left for 15-20 minutes under a towel.
