All this time, you just need to patiently stand over the stove and constantly stir the mass of mushrooms, allowing all the moisture to evaporate.

After 25 minutes have elapsed from the start of cooking, you can add spices to your taste to the mushrooms - bay leaf, pepper, salt and dill sprigs. About half a tablespoon of salt goes into one pan, but, as they say, in the saying - "undersalt on the table", so it's better not to be zealous in the use of spices.

You can find out when the mushrooms are ready by several signs. First, the intensity of water release either completely disappeared or decreased markedly. Secondly, in ready-made mushrooms, the surface takes on a pleasant chocolate shade. Thirdly, readiness can be recognized by how mushrooms are separated with a fork - ready mushrooms can be separated by a device without any effort.

After cooking, mushrooms are laid out in sterilized jars, after which they can be stored in the basement all winter and even much longer!
