Open pie with cottage cheese and herbs

I bring to your attention a delicious, easy-to-prepare open pie with cottage cheese and herbs. Such a pie will perfectly replace bread (it is very tasty with soup!), And in the morning with a cup of hot coffee - a great breakfast! The pie is delicious both cold and warm (can be heated in the microwave).

Cottage cheese is better to take soft. If there is no soft one, just wipe the cottage cheese through a fine sieve.

For cooking, prepare the products according to the list.

Add cold butter to the flour and chop into crumbs. I did this in a food processor. If you don't have it, just chop it with a knife and rub it quickly with your hands.

Add egg and salt.

Knead a fairly stiff dough. If the dough is liquid, add flour, if it is thick - 1 tbsp. water. We put it in a bag and put it in the refrigerator exactly at the time that we will be preparing the filling.

For the filling, mix chicken yolks, cottage cheese, chopped greens, lemon juice and paprika. Mix everything, salt, pepper to taste. And beat the whites into a strong foam.

We introduce the proteins into the curd mixture and try to mix gently. Get a lush mass. The filling is ready.

We take out the dough from the refrigerator, put it in a baking dish (mine diameter is 21 cm). Hands distribute in shape, forming the sides. If your pan has a non-stick coating, you don't need to grease it.

Put the filling on the dough. We level. Sprinkle with herbal mixture. Bake in an oven preheated to 180 degrees for about 40 minutes. The filling should not be liquid.

An open pie with cottage cheese and herbs is ready. Cool on a wire rack so it doesn't get damp.
