For those who love delicious pastries, I offer a recipe that will not disappoint you - the Log Cake.

Required products

To prepare this cake, you will need not culinary skills at all, but the following ingredients:

  • puff pastry without yeast (I take ready-made in the store, if you wish, you can cook it yourself);
  • condensed milk;
  • butter.

Cake "Log" - a kind of version of the well-known and beloved by many "Napoleon".

If desired, you can add 1-2 tablespoons of cognac - then the Puff Log cake will get a very interesting, special taste.

Cake history

France is the birthplace of this amazing culinary creation. There it is called "Christmas (or Yule) log" and is prepared, respectively, for Christmas.

In France, the custom of baking "Log" is based on the medieval custom of burning a Christmas log. Initially, this cake was made from biscuit dough in such a shape that the cut of the cake resembled a saw cut of a tree, and decorated with powdered sugar, which symbolized snow, and mushroom figures. Nowadays, the log cake has been greatly simplified and began to be prepared from puff pastry.

How to make a log cake at home: a step by step recipe

As I said, preparing the "Log" is quite simple. So:

Step 1. Ingredient: puff pastry - 500 g. Roll it out, cut it into narrow (1.5-2 cm) strips and put them on a baking sheet. I advise you to lay a baking sheet with parchment paper - this way you can avoid sticking, the strips will turn out to be more even and will not break when laying out.

I also bake the trimmings - they can then be used to decorate the log cake (there are enough recipes with a photo of the finished cake on the Internet).

Step 2 Now we set the temperature in the oven to 160-170 ° C and bake for 15-20 minutes. At this time, you can prepare the cream.

Step 3 After the strips are baked (this can be determined by their golden color), I take them out of the oven and give them time to cool.

Step 4 Then I take the cling film and lay the strips in a row. Generously lubricate the layer with cream and spread the second layer on top - again the cream.

There may be several layers of homemade log cake - I spread until I run out of baked strips (always leave 2-3 for decoration).

Step 5 Then I twist the resulting pyramid with cling film into a roll to get the shape of a log, and send it to the refrigerator for 12 hours - the cake should be soaked.



The cake will soak better if left for several hours at room temperature, and then put in the refrigerator overnight. Then it will melt in your mouth.

Many do not like puff pastry and prefer biscuit. In this case, I’ll tell you how you can easily make biscuit dough for the Log cake at home step by step. To do this, you need 60 grams of flour, 60 grams of potato starch, 150 grams of sugar (6 tablespoons), 4 eggs.

Step 1. Separate the whites from the yolks and beat the whites at medium speed, gradually adding half the sugar.

Step 2 Beat the other half of the sugar until white with the yolks.

Step 3 Add some of the proteins to the yolks, mix and put the flour and starch.

Remember to mix the biscuit dough in one direction - from top to bottom.

Step 4 We cover the baking sheet with parchment paper, grease with butter.

Step 5 Spread the dough evenly over the surface and bake for 15 minutes at a temperature of 160-170°C.

Recipe for cream for log cake

Custard may also be suitable for this cake, but since we don’t have much time, I offer the recipe for the “Log” cake with condensed milk, that is, we prepare the cream based on condensed milk.

I prepare it like this:

Step 2 Ingredients: butter - 350 g, condensed milk - 250 g.

Step 1. Take the butter and beat it with a spoon.

Step 2 Then add condensed milk in parts and beat again with a spoon, and at the end - with a mixer until a homogeneous consistency. I also add 1-2 tablespoons of cognac and beat again.

To facilitate the procedure, it is better to soften the butter. Take it out of the fridge first.

How to beautifully decorate and serve the log cake

If you like not only delicious, but also beautiful confectionery, you can decorate the finished cake - the recipe for the Log cake from puff pastry allows you to show your imagination.

So, after the cake has soaked, I put it on a dish, pour over the cream and sprinkle with crumbs from the remaining sticks. If you have nuts, shredded coconut, icing sugar, or marzipan in your home, you can decorate with those as well. I love pouring melted (but not hot) chocolate on top of the cake - very tasty.

Crumbs stick better to the cake if they are pressed with warm hands - they soften the cream.

By the way, for those who think this cake is too high in calories, I can suggest replacing the butter with whipped cream - it will turn out no less delicious.

In general, you can fantasize as much as you like with the Log cake, adding zest, nuts, dried apricots, almonds, cherries, lingonberries, hazelnuts, and candied fruits to the cream. If the children will not eat the cake, you can add liquor, rum or cognac to the cream.

You can make your own marzipan. To do this, grind the almond kernels with powdered sugar in a blender. Add ½ of the egg white, a few drops of lemon juice and any food coloring. Everything is mixed in a separate container. Roll out thinly and refrigerate for an hour. Everything, you can squeeze out any figures from this layer.

If you like chocolate flavor, you can make a coffee-flavoured log cake, the recipe in this case will not differ much, just add 2 teaspoons of natural coffee or cocoa powder to the cream. You can add 50 g of chocolate chips to the dough - it also turns out very tasty.

One more tip: do not spare the cling film - the denser the layer, the easier it will be to roll the cake into a roll. You need to twist it as tightly as possible so that when cutting the cake does not crumble.
