For me, a quick jam pie is an opportunity to quickly bake something sweet for tea and at the same time use up a jar of jam, marmalade or thick preserves that I started. In the summer, you want to prepare more and more of everything, but as winter approaches, it becomes clear that you won’t be able to eat everything before the new harvest. That’s when the recipe for jam pie becomes especially relevant, especially if it’s quick pie. I cook it from shortcrust pastry, the filling goes thick plum jam. However, any jam that tastes sour will do, and in the recipe I will tell you how and with what you can thicken it.

Ingredients

To prepare a simple and quick jam pie you will need:

  • margarine – 180 g;
  • eggs – 2 pcs;
  • granulated sugar– 1 glass;
  • thick plum jam - 2/3 of a half-liter jar;
  • baking powder - 1.5 tsp;
  • vanilla sugar– 0.5 package;
  • wheat flour – 3-3.5 cups.

The base of the jam pie is shortcrust pastry. I made it with margarine, you can take it butter. I put the bowl with margarine on low heat, and while it softens, I prepare other products. Break two eggs into a deep bowl and add sugar.

Whisk vigorously until creamy thick mass lightish color.

Please note that the margarine has not completely melted, the pieces have softened and melted by half. If you make it liquid, you will need more flour, but the dough will turn out soft and crumbly.

Pour the melted margarine into the bowl with the egg-sugar mixture. I stir with a whisk. The mass will become almost homogeneous.

I sift three glasses of flour. That's enough for now. If the dough is too soft, I will add more during kneading. But if it turns out cool, you will have to add butter or milk and knead again. Since shortbread dough cannot be kneaded for a long time (it becomes hard), it will be difficult to save the pie.

Add baking powder and vanilla sugar. You can also flavor it with cinnamon or any spices you like.

At the first stage, I knead the dough with a spoon so that I can knead it less with my hands. When all the flour is moistened, it will be clear whether you need to add more or not.

You need to knead shortbread dough for a pie quickly, and don’t knead it for a long time - it doesn’t like it. As soon as all the ingredients are combined, the lump becomes smooth and oily - the dough is ready. If it’s too oily or too soft, I add flour and quickly mix it in. The consistency will be such that you can roll it out with a rolling pin or knead it into a cake with your hands.

I divide the dough in half. One part will be the base, I will roll it out on a baking sheet. I flatten the second one into a thinner layer, wrap it in film and put it in the freezer for 15-20 minutes. Just while the oven is heating up to 180 degrees, the dough will harden.

I decided to make the pie higher, instead of using a baking sheet I used round shape with a diameter of 30 cm. I did not roll out the dough, but put it in a mold and kneaded it with my palm into a layer of equal thickness.

Lay out thick plum jam and spread evenly over the dough. The layer can be made thin or thicker.

Advice.If you don't have much thick jam, remember two ways to thicken it. The first is to add starch to the syrup and mash the berries. Mix everything and put it on the pie. When heated, starch will prevent the jam from spreading. The second way is to add crushed nuts. I'm drying walnuts in a dry frying pan, grind in a mortar or grind in a blender into very fine crumbs. I combine it with jam and spread it on the pie. In this case the taste finished baked goods acquires a slight nutty note.

The dough has hardened a little in the freezer, now you can grate it through a coarse grater. I rub it directly onto the filling. A simpler option is not to freeze it, but to roll it out and cover the filling. But I like this particular one - the jam pie is not only tasty, but also elegant, with cute curls.

Try to immediately distribute the chips in an even layer. If you move it from place to place, the dough will stick together and you will have to start all over again.

Place the pie in the oven on a medium rack. I bake for 20-25 minutes, temperature 180 degrees. You shouldn’t set it higher; the cake will be dark on the bottom, hard on the inside, and the top will remain light. In order for the curls to brown, I move them to the top for ten minutes and slightly increase the temperature (up to 200-210 degrees).

As soon as I take the pie out of the oven, I immediately cut it into pieces without letting it cool. Shortbread dough after cooling it becomes brittle, the top of the pie will crumble, and you are unlikely to want to serve such pastries to guests.

Well, the pie with jam is ready in a hurry; there is no need to cool it. You can also try it warm. Perhaps someone will think - not such a quick pie. But friends, compared to yeast pies, there is much less fuss with it. In general, all recipes that require less than an hour to prepare fall into the category of quick baking. The taste of grated pie has been familiar to us since childhood. It's simple homemade pie no frills. There are many filling options for this pie, but jam and jam remain the priority. Let's prepare grated pie with jam for tea drinking.

Mix yeast and 1 tablespoon of sugar in warm milk.

Place in a warm place for 10-15 minutes to allow the yeast to start playing.

Add salt, the remaining 4 tablespoons of sugar, vanilla sugar, melted butter and vegetable oil to the prepared yeast. Stir everything well until the sugar is completely dissolved.

Gradually add sifted flour.

Mix well each time. You should get a soft dough.

Cover it and put it in a warm place for 1-1.5 hours so that the dough increases 2-3 times.

As soon as our dough has risen, we deflate it and put it on the table, greased a little vegetable oil. Divide the dough into two equal parts.

Carefully roll the circle of dough onto a rolling pin and transfer it to the mold (pre-greased with vegetable oil; if the mold is silicone, then there is no need to grease it).

Lubricate with jam at room temperature.

From the second part of the dough we make a braid, lay it around the perimeter of the mold, thereby creating a side, and from the remaining dough we make any decorations on the surface of the pie. I made small braids and placed them on top.

Place our pie in a warm place for 20-25 minutes and turn on the oven at 180 degrees. Our cake has risen and the oven has warmed up. Let the pie sit for 35-40 minutes.

We check readiness with a torch.

Take the finished yeast pie with jam out of the mold and leave on a wire rack until it cools completely.
