How to make quick shortbread cookies with cottage cheese

The main ingredient on which the quality and taste of the finished cookies will directly depend is cottage cheese. Under no circumstances use liquid dairy product, otherwise the baked goods will lose their shape. Try to choose the driest cottage cheese. If you already have the desired dairy product in the refrigerator and it is a bit runny, put it in a sieve and leave for 2-3 hours. During this time, excess moisture should drain.


Place the cottage cheese in a deep and wide enough bowl, and mash thoroughly with a fork - the more uniform the consistency, the better. The butter must be removed from the refrigerator in advance so that it softens well. Chop it into small pieces of arbitrary shape and add it to the cottage cheese.


Using a fork, thoroughly mix the cottage cheese and butter. Add a pinch of salt, vanilla sugar and grind the mixture until smooth.


Quench the soda with vinegar (can be replaced with lemon juice) and combine with the curd mass. If desired, you can use baking powder for the dough. Replace soda with it, adding 1 tsp. powder.


Sift wheat flour through a sieve. Add it slowly to the prepared mass, kneading the dough. Depending on the type of flour and the moisture content of the cottage cheese, the first one may take you a little longer. The result should be a shortbread dough structure - quite loose, oily, but not sticking to your hands or surface.

At the end of kneading, crumbs should remain at the bottom of the bowl. Gather it into a single lump with the dough.

  3. Bake in an oven preheated to 170-180°C for about an hour (in my oven). We determine readiness this way: if the filling does not ripple around the edges, but the middle still “quivers,” then the cheesecake is ready. Let it cool in the mold, cool it in the refrigerator for at least 6 hours (if you can stand it that long, of course).

The filling can also be prepared with cream. They are whipped into a strong foam, then cottage cheese and sugar are added to them.

You can add fresh berries, finely chopped fruits, nuts or dried fruits to the filling. Mix everything well.

The dough is distributed over the mold, making sides, and then filled with curd mass. You can cover the filling on top with a second layer of dough, or leave the pie open.

Recipe 1. Quick pie with cottage cheese

Ingredients

150 g cookies;

a handful of raisins;

85 g butter;

lemon zest;

120 g sour cream;

25 g starch;

400 g cottage cheese;

75 g granulated sugar.

Cooking method

1. Preheat the oven to 170 C. Add three tablespoons of sour cream to the grated cottage cheese. Beat the egg separately and add to the cottage cheese. Add lemon zest and starch here. Grind everything thoroughly or blend with a blender until smooth. Wash the raisins and add to the cottage cheese. Mix everything with a spoon. The result should be a mass with the consistency of thick sour cream.

2. Break the cookies and place them in a blender container. Grind it into crumbs. Add soft butter and sour cream to it. Knead the dough. Place it in a springform pan and spread it with your palms along the bottom, forming sides four centimeters high.

3. Place the curd mixture on the crust and smooth it out. Place the pan in the oven for half an hour. Bake at 180 C. When the pie is browned, remove it from the oven and cool completely. Slice and serve with drinks.

Recipe 2. Quick pie with cottage cheese and blueberries

Ingredients

Dough

margarine – 150 g;

baking powder – 10 g;

granulated sugar – 150 g;

a glass of flour;

vanilla sugar – 10 g.

Filling

cottage cheese – 600 g;

blueberries – 300 g;

four eggs;

potato starch – 100 g;

sugar – 150 g.

powdered sugar.

Cooking method

1. Grind soft butter with cane and vanilla sugar. Beat in the egg and mix. Combine flour with baking powder. Add the resulting mixture to the egg-butter mixture and knead the dough.

2. Place the dough in a springform pan, grease it with oil. Form high enough sides.

3. Separate the whites from the yolks. Grind the latter with sugar. Now add the pureed cottage cheese and starch. Mix everything well.

4. Add a pinch of salt to the whites and beat them into a thick foam. Add the whipped whites to the curd mixture and mix gently with a spatula.

5. Place the resulting mixture onto the dough and smooth it out.

6. Save some blueberries for decoration. Place the remaining berries in a blender bowl, add a spoonful of sugar and blend well.

7. Pour the berry mixture over the curd cream. If you wish, you can make patterns with a fork. Place the pie in the oven for an hour, preheated to 180 C. If the top starts to burn, cover the pie with a sheet of foil. Remove the finished pie from the oven, sprinkle with powdered sugar and garnish with blueberries.

Recipe 3. Quick pie with cottage cheese from puff pastry “Kosa”

Ingredients

packaging of finished puff pastry;

a handful of raisins;

half a kilogram of cottage cheese;

two tablespoons of sugar;

75 g semolina.

Cooking method

1. Completely defrost the finished puff pastry. Preheat the oven.

2. Grind the grated cottage cheese with sugar and egg. If the mass turns out to be liquid, add semolina.

3. Wash the raisins and fill them with hot water. Leave it for a quarter of an hour and drain the water. Dry the raisins on a paper towel and stir into the curd mass.

4. Thaw the defrosted dough and cut it in half. We roll out each part and mentally divide the dough layer into three parts. We cut the left and right parts diagonally into strips two centimeters wide. Place a mound of curd filling in the middle.

5. Place strips of dough on top of the filling one by one, as if braiding a braid. We pinch the edges of the pie. From the second piece of dough we make the same pie with cottage cheese. Place the pies on a baking sheet lined with parchment. Brush the top with beaten egg. Place the pan in the oven and bake until the top is browned.

Recipe 4. Quick pie with cottage cheese “Tvorozhnik”

Ingredients

Dough

baking powder – 7 g;

butter – 150 g;

granulated sugar - glass;

flour - two glasses.

Filling

low-fat cottage cheese – 400 g;

sugar - glass;

raisins and dried apricots;

Cooking method

1. Add granulated sugar, baking powder and flour to the soft butter. Grind everything until it becomes crumbly.

2. Beat eggs with sugar and add grated cottage cheese. Beat everything well until smooth.

3. Cover the pan with parchment and lightly grease with oil. Place half of the dough and level it out. Place the cottage cheese filling on top of the dough and sprinkle with the remaining dough.

4. Bake the pie for half an hour at medium temperature. As soon as the top of the pie is browned, remove it from the oven and cool.

Recipe 5. Quick pie with cottage cheese “Udachny”

Ingredients

300 g cottage cheese;

6 g baking soda;

three eggs;

a glass of sugar;

two glasses of flour.

Cream

a glass of sour cream;

half a glass of granulated sugar.

Cooking method

1. Turn on the oven at 180 C. Place the cottage cheese in a bowl and grind thoroughly. Add soda, eggs, granulated sugar and mayonnaise to it. Beat everything with a blender. Now add flour little by little and knead the dough thoroughly until it reaches the consistency of homemade sour cream.

2. Grease the mold with a piece of butter and sprinkle with flour. Place the dough into the mold and level it out. Place the pan on the middle rack of the oven and bake until golden brown for forty minutes. Remove from the oven and leave the cake in the pan for another five minutes. Then take it out and put it on a plate.

3. Carefully cut the cooled cake in half. Beat sour cream with vanilla and a glass of sugar with a mixer. Grease the cakes with sour cream and leave to soak for an hour.

Recipe 6. Quick apricot-raspberry pie with cottage cheese

Ingredients

Dough

milk – 30 ml;

flour – 200 g;

soft butter – 125 g;

sugar – 75 g;

a bag of vanilla sugar;

salt - a pinch.

Filling

125 g raspberries;

low-fat cottage cheese – 750 g;

canned apricots – 250 g;

four eggs;

vanilla pudding with creamy taste - pack;

sugar – 150 g;

zest of half a lemon;

salt - a pinch;

vanilla sugar - pack.

For lubrication

water – 30 ml;

apricot jam – 80 g.

Cooking method

1. Pour flour into a deep container, add the remaining ingredients and mix everything with a mixer, starting at low speed. Then knead the dough with your hands, wrap it in film and put it in the refrigerator.

2. Place half of the dough in a springform pan and knead it along the bottom with your hands. We pierce it with a fork in several places. Preheat the oven to 180 C and place the mold in it for ten minutes.

3. In a deep bowl, combine the cottage cheese with eggs, pudding mixture, sugar, lemon zest, salt and vanilla sugar. Mix everything thoroughly with a blender into a homogeneous mass. We put the apricots in a colander to get rid of the juice. We sort and wash the raspberries.

4. Roll out the rest of the dough into a rope and form a side out of it, four centimeters high. Place the curd mass into the mold. Place raspberries and apricot halves on top. Place the pie in the oven for an hour. Take it out and cool completely.

Ingredients

250 g flour;

Ingredients

4 g baking soda;

150 g butter;

sugar – 50 g;

fresh or frozen cherries – 400 g;

powdered sugar.

Cooking method

1. Wash the cherries and remove the pits. Place the berries on a sieve and reserve.

2. Grind soft butter well with sugar. Beat in the egg and continue beating until smooth. Add flour and baking soda and knead into a plastic dough.

3. Grease the pie pan with oil and place the dough into it. Using your hands, distribute it evenly over the bottom and sides.

4. Separate the yolks from the whites. Add sugar to the yolks and grind them until white foam with a blender. Now add vanillin and cottage cheese and continue to beat with a blender until the mass becomes smooth, without lumps of cottage cheese. Add starch and mix.

5. Lightly salt the whites and beat them into stiff foam with a mixer. Place the whipped whites into the curd mixture and mix carefully so that they do not settle.
