Choice of cottage cheese

It is best to use homemade cottage cheese for balls. This product must be fresh and sufficiently dry. Cottage cheese with excess moisture will “clog” the dough and the ball will not turn out magnificent. For a homogeneous composition of the dough, it is highly desirable to grind the cottage cheese, which will remove all the lumps.

frying

The total amount of oil should exceed the fried products by 3-4 times.
The optimum temperature for deep-frying is 190 C. It should be constant throughout the entire cooking. If you fry the balls in not hot enough fat, they will absorb a lot of fat, which will make them tasteless.

The fryer used must be of high quality. Do not use old oil.

2 eggs
50 g semolina

In a separate bowl, beat 2 egg whites and carefully fold them into the curd mass. The dough is ready.
Boil salted water in a large pot. With wet hands, form small balls.

To be sure, it is better to throw one into boiling water and observe. If it holds its shape, wait a few minutes, fish it out and try. Part of the stuffed balls is the favorite Hungarian stuffing - prunes. Prunes are traditional for the original Hungarian dish. But apricots or dried apricots are also very Hungarian and delicious. Focus on your own taste.
We are waiting for the balls to emerge and keep them on low heat for 5-7 minutes.
Melt a small amount of butter and brown the breadcrumbs in it.
We heat sour cream to 35-40 degrees.

Looking for a quick and easy way to feed your family something delicious? Then rather run to the store for cottage cheese, and we will make cottage cheese balls fried in oil! I made the recipe with a photo step by step mainly in order to clearly demonstrate to you all the accessibility and simplicity of the process. The delicacy comes out high-calorie, but terribly tasty. These lush, tender balls, with an amazingly porous crumb, fly away from the table instantly, without even having time to cool down properly! One has only to turn away to run another batch of frying dough into the oil, small nimble hands manage to drag a couple of balls from the plate. Therefore, despite the fact that I bake them quite often, I have never been able to calculate exactly how many balls I get. Approximately 30 pieces. Cooking such balls is very fast. While the dough is kneading, heat the oil for frying. And then literally 15-20 minutes. frying - and you have a whole hill of fragrant golden curd balls on your plate!

Ingredients:

  • cottage cheese (I have 5%) - 400 g,
  • sugar - 4 tbsp. l.,
  • salt - 0.5 tsp,
  • egg - 3 pcs.,
  • vanillin - 1 sachet,
  • flour - 300 g,
  • baking powder - 1 tsp,
  • vegetable oil (for frying) - about 500 ml.

How to make curd balls

The dough for such curd balls is kneaded very quickly, it does not need to settle, therefore the frying oil can be set to warm up immediately, as you start kneading the dough. For frying, it is better to take a small container with a thick bottom and high sides. I have a 2.5 liter pot. It is necessary to take enough oil so that the balls completely sink in it, I took 0.5 liters.

After we place the cottage cheese in a bowl, fill it with sugar, add some salt and knead the mass until smooth. If your cottage cheese is soft, stir it well with a spoon. It is better to kill granular cottage cheese with a blender - then the surface of the finished balls will be even and smooth, and the crumb will be homogeneous and without small curd inclusions.

Then we introduce eggs and vanillin into the sweet curd mass. Knead everything again one more time, this time just enough with a spoon.

Lastly, add flour and baking powder to the dough. Both of these must be sifted. If the baking powder was not at hand, replace it with 0.5 tsp. soda slaked with a little lemon juice or vinegar. In this case, first we introduce soda into the dough, knead it quickly, then add the sifted flour. In any case, it is better to add flour gradually, because depending on its quality and the consistency of the cottage cheese, it may take a little more or a little less flour.

The finished curd dough is homogeneous, soft, sticky, but at the same time quite dense. If you type it into a spoon, it easily rests on it and does not fall off.

By this time, the oil should already be warm, you can immediately start frying the balls. To do this, we form balls the size of a medium-sized walnut from dough, moistening our hands with water, or using spoons for convenience. It is not necessary to make the balls perfectly round and even - when frying, they increase in size, becoming lush and smooth.

We lower the formed balls into the oil and fry until a pleasant, appetizing golden color, making sure that when immersed, the balls do not stick to each other and do not stick to the bottom of the saucepan.

Ready-made balls are removed from the oil directly onto something that can absorb excess fat. I have a small stack of ordinary paper napkins.

Serve the cooled balls with jam, honey, condensed milk or just sprinkle with powdered sugar. Very tasty!

Rub cottage cheese through a sieve.

Sift flour with baking powder and add to the resulting curd mass.

Knead the dough first with a fork, then with your hands. If desired, you can add an apple, peeled from seeds and skin, cut into small cubes, into the dough and mix gently.

Knead soft dough. It should be viscous, elastic.

Shape the dough into balls the size of a walnut. So that the balls are easily formed, hands must be moistened with water. Roll balls in semolina.

In a saucepan or saucepan, heat the vegetable oil for deep frying to a high temperature, then, after heating the oil, reduce the heat to medium. Fry the curd balls for about 3-4 minutes (they should be golden on all sides). Put the finished balls on a paper towel to remove excess oil.

When serving, sprinkle with powdered sugar if desired. These are the mouth-watering curd balls fried in oil according to this recipe, I got it.

Bon appetit!

So often, cottage cheese that has appeared in the house is not eaten fresh. In most cases, the “stale” product goes to cheesecakes, but sometimes you really want to do something new and unusual! Of course, the recipe for cottage cheese balls is quite difficult to call a novelty, because this delicacy has been familiar to us since childhood. But our kids, spoiled by store-bought goodies, are simply delighted with these ruddy spheres, not even realizing that they consist of cottage cheese they do not like so much. And adult households will certainly experience nostalgia. So why not make your family happy? Several ways to make it as quickly and tasty as possible, we will tell you.

Classic recipe

Ruddy and fragrant balls were a favorite delicacy for several generations of kids, absolutely every housewife knew how to cook them. Now, due to the huge number of different sweets sold in every store, the homemade recipe for cottage cheese balls fried in oil has gradually begun to be forgotten by us. Let's fix this annoying bug! Record!

Ingredients:

  • Cottage cheese - 200 grams;
  • Egg - 1 piece;
  • Flour - 1.5 - 2 cups;
  • Sugar - 3-4 tablespoons;
  • Salt - a pinch;
  • Vegetable oil - for frying;
  • Powdered sugar for decoration;
  • Soda - ½ teaspoon;
  • Vinegar to extinguish soda.

Let's start cooking:

  1. Knead the cottage cheese until the lumps disappear. Separately, mix the egg with salt and sugar. Add to cottage cheese, stir again.
  2. Mix flour in small doses. It is important not to overdo it so that the dough does not become too “tight”, as this will make it more difficult to bring it to readiness.
  3. We extinguish the soda and add to the rest of the ingredients, after which we begin to knead thoroughly. The optimal consistency of the dough is when it sticks to your hands a little.
  4. If you do not know how to make balls, here is the easiest recipe: divide the dough into equal parts, make sausages out of them. The latter must be cut into equal slices, which will later become our balls.
  5. Having made the blanks, we put the pan with oil on the stove. Before frying, the oil must be thoroughly warmed up, after which the fire can be made quieter. You need to try not to get water into the oil, otherwise you will be provided with oil fireworks throughout the kitchen.
  6. We drop one ball at a time into the hot oil, making sure that they do not stick to the bottom. We try to constantly turn them so that they are evenly fried. The appearance of a golden crispy crust is a sure sign of readiness.
  7. We remove the finished donuts and put them on disposable towels or a strainer so that the excess oil comes off. Then sprinkle with powdered sugar, and that's it - the dish is ready!

You can make your own adjustments to this basic recipe by adding spices, for example vanilla or cinnamon, dried fruits: raisins, dried apricots. You can replace homemade sour cottage cheese with ready-made curd mass. It is better to serve with jam, jam or sour cream, as soon as from the stove, and already cooled down.

  • Flour - 150 grams;
  • Egg - 1 piece;
  • Sugar - 150 grams;
  • Cocoa - 30 grams;
  • Milk - 75 ml;
  • Vegetable oil - 50 ml (refined);
  • Boiling water - 65 ml;
  • Soda and baking powder - 5 grams each.

Such a biscuit is prepared like this:

  1. Mix all dry ingredients.
  2. Lightly beat the egg with milk and vegetable oil.
  3. Combine both ingredients and stir until smooth. All dough is ready.
  4. Fill them with curd balls and send them to the oven with the same temperature as the previous recipe.

You can decorate the cake with any kind of icing or powdered sugar with fresh berries.
