The plant is harvested when the fruits are not yet fully ripe. The fruits are left under the sun for some time, then treated with steam and dried again, this time completely. This treatment prevents premature opening of the pods and allows the spice to retain its rich taste and aroma as much as possible.

The plant has a distinctive island-sweet taste with a hint of orange or grapefruit. Cardamom is rich in essential oils, so it smells bright and fragrant.

What can be replaced

Grains of paradise are not easily replaced. If you don't have cardamom, you can add those spices that will make its absence unnoticeable. So, to replace 1 tsp. spices:

  • As an ingredient in a mixture of curry and tarim masala seasonings: coriander - one teaspoon, cumin seeds - one-half teaspoon;
  • For meat and rice dishes: cinnamon and ginger powder - one-half tsp;
  • For fish: ground pepper - one-half tsp;
  • For baking and desserts: cinnamon and nutmeg - one second tsp.

  • Squeeze 1 lemon;
  • Add a tablespoon of fresh or dried mint and a teaspoon of cardamom seeds to the juice;
  • Add one and a half liters of boiling water;
  • Add honey or granulated sugar to the cooled drink.

  • Filter the alcohol mixture with cardamom and pour into a glass bottle;
  • Add syrup, seal and shake several times.

Keep the finished drink refrigerated. For treatment, you need to drink four tablespoons of tincture an hour before bedtime.

Essential oil

Cardamom essential oil normalizes the central nervous system and disinfects the body from the inside. This is one of the components of relaxation therapeutic baths, skin and hair products.

I would like to offer several interesting recipes - alcoholic herbal tinctures, which can be used as a drink on their own, and as an ingredient in cocktails and baked goods.

In no case do I advocate drinking alcohol! And yet, alcohol occupies a certain place on holiday tables, and not the last. So if you take it, it will be healthy and tasty.

There are several generally accepted rules for preparing tinctures. It is necessary to infuse herbs and fruits in alcohol for two to six weeks, since the essential oil from the raw material needs time to be extracted into alcohol. Such drinks are stored in dark bottles in cool places.

None of the recipes presented have been tested by me yet, but they have a lot of positive reviews from family and friends, whose taste I trust.

Clove tincture

For 0.5 liters of vodka:

Combine the ingredients and let it brew in a dark, cool place for 2 days to a week. It is advisable to strain. They say that this tincture is soft to drink and does not smell of vodka, even if it is prepared on the basis of moonshine. Ginger tincture with cardamom

For 50 grams of ginger root:

Ginger can make the flavor too strong, so vary the amount to suit your taste. Also adjust the amount of sugar to taste - this option is very sweet.

Homemade Becherovka

For 1 liter of vodka:

It is recommended not to use ground spices - you won’t be able to strain it properly. Place the spices in a container and fill with vodka, leave for a week, shaking occasionally. After a week, add sugar syrup to the infusion. After a day or two, we check the quality of the infusion: it smells quite intense - we filter it, if not, let it infuse some more.

There is no wormwood in this recipe, but connoisseurs of real Becherovka assured that this homemade version is in no way inferior to the original, even more pleasant. The original drink contains about 20 herbs; in this recipe we use only spices. Nevertheless, the infusion is quite decent.

Herbal mead

For 1 liter of vodka:

  • 3 tablespoons honey
  • mint leaves
  • oregano leaves
  • sprig of thyme (thyme)
  • 5 boxes of cardamom.

It is recommended to use buckwheat honey. Dissolve it in a glass of vodka and pour into a container. We add a sprig of mint, oregano and thyme; it is advisable to open the cadamom pods and release the grains; we also place them in a container. Add vodka and let it brew for a month, shaking several times. You don't have to strain it.

The infusion has a very beautiful amber color and an amazing aroma!

Sambuca domestica

Thanks to anise, the tincture is reminiscent of Sambuca.

For half a liter of vodka:

  • bunch of fresh mint
  • 3-5 boxes of cardamom
  • 2-3 star anise
  • zest from half a lemon
  • 1 tbsp sugar.

We combine all the ingredients in one container, let it brew and strain after one and a half to two weeks. The color of the infusion is dark amber.

Lavender tincture

For 1 liter of vodka:

  • tablespoon lavender flowers
  • 2 cloves
  • small piece of cinnamon stick
  • 2 tbsp sugar.

Infuse the mixture for at least a week, without straining.

Another option

For 1 liter of vodka:

  • tablespoon lavender flowers
  • a few sage leaves
  • sprig of rosemary
  • 3 juniper berries (crush)
  • 1-2 tbsp sugar.

Let the mixture steep for at least a week; you don’t need to strain it.

Now the main thing is accuracy, since a large amount of this seasoning can not only help, but also cause harm, do not add more cardamom than is written in the recipe.

    Place in a sterilized jar 4 grams cardamom, open the bottle of vodka and pour it into the jar with the spice. We need 500 milliliters of vodka for this drink, it should be n less than 40 degrees. We close the jar with a plastic lid, so that it fits tightly to its neck and so that the alcohol vapors contained in the vodka cannot evaporate.     Step 2: cook the syrup.


    Cook light syrup. Turn on the stove to a high level, place a kettle with running water on it and bring it to a boil. Take a deep saucepan, rinse it under running water, scald it with boiling water from a kettle, let it dry and pour it into 500 milliliters pure distilled water. Bring the water to a boil on the stove, set to high, and use a measuring cup to pour it into a pan of water. 300 grams sugar and dissolve it. The resulting sweet water is called “light syrup” and is often used to prepare various types of tinctures. Cool the syrup to room temperature.

    Step 3: strain and combine ingredients.


    With the stove turned on, place a kettle with running water on high and bring it to a boil. After the water has boiled, remove the kettle from the stove, take a watering can, two half-liter glass bottles with lids tightly fitting to their necks and sterilize them in boiling water. Take a clean sterile bandage and cut it off 20 centimeters and fold the bandage in half. Take the cooled “light syrup” and pour it through a watering can into sterilized bottles, half into each. Each bottle contains approximately 250 grams syrup. We do not remove the watering can from the bottle; we place a sterile bandage folded in half on its bottom; the tincture must be strained so that there are no grains in it.

    Open the vodka with cardamom infused in it and quickly pour it into a watering can. Pour the aperitif until the bottle is almost completely full. When there is 3-4 centimeters of free space left to the surface, remove the watering can and immediately insert it into the second sterilized bottle, and close the one into which the aperitif was poured with a lid. It should fit snugly to the neck of the bottle. We take a second clean bottle with a watering can inserted into it, open the bottle with the tincture and repeat the entire previously performed operation - pour it, close it tightly. When you strain the finished tincture, this must be done quickly, since the alcohol vapor in the vodka can evaporate and the tincture will not be strong enough, which will naturally spoil its taste and reduce its medicinal properties.

    Shake the bottles with the tincture for a minute; this time is enough for the syrup to mix with the infused vodka. Let the finished drink sit for a couple more days with the syrup in a cool, dark place. Before use, cool the tincture in the refrigerator until -6 – 8 degrees V. Cardamom tincture is ready.

    Step 4: serve cardamom tincture.


    Cardamom tincture is served chilled, up to about – 6 -8 degrees. Just before serving, you can pour it into a carafe. You can garnish the glass with a slice of lime or lemon, and add a couple of mint leaves to the drink itself. This aperitif goes well with any hot or cold appetizer. Very often, cardamom tincture is added to tea, especially in the winter or autumn seasons. The tincture stimulates, relaxes and gives strength to the body. If you have a cold, after drinking a couple of glasses of this tincture, forget about the fact that you might be bothered by a runny nose or cough. Cardamom tincture is an ideal medicine that brings pleasure.

Pour the tincture into a saucepan, stir with sweet water and pour into prepared bottles. But! Remember that during this bottling process the aperitif loses 30 percent of its strength.

    - − Cardamom tincture in vodka is contraindicated for children; they can stir a couple of pinches (2 grams) of regular powdered cardamom in a cup of tea and drink it hot. It will help with diarrhea, indigestion, dry cough and colds.
