Olivier with corn instead of peas

If you and your guests like Olivier, but decided to add a new touch to its composition, then today I propose to make an updated version of it. It will be Olivier with chicken fillet and corn instead of peas. The salad is bright and festive. Instead of chicken fillet, you can use boiled sausage or ham.

This recipe is perfect for those who, for some reason, want to replace green peas in Olivier. Green peas are easiest to replace with corn, and some people also prepare this salad with beans. If you do not like canned foods, then prepare a salad of frozen vegetables.

If you want to add a little new note, then using half of the corn and green peas is also an option.

Ingredients for 2-3 servings:

  • chicken fillet (boiled or baked) 250 g;
  • potatoes (boiled in a peel) 2-3 pcs.;
  • boiled carrots 2-3 pieces;
  • pickled or sour cucumbers to taste;
  • boiled egg 2 pcs.;
  • corn 7 tbsp. l.;
  • green onions to taste;
  • parsley and dill to taste;
  • mayonnaise 3-5 tbsp. l.;
  • salt and spices as desired.


How to cook salad "Olivier" with corn instead of peas

Boil the chicken fillet the day before until tender in salted water with spicy spices. Alternatively, the fillet can be baked in the oven in foil or parchment. Chicken fillet can also be fried in a pan for salad. Well, if you have boiled sausage, then you can make Olivier with it.


Corn for such a salad can be used canned or frozen. This time I used frozen corn kernels. To prepare the corn for the salad, pour the corn into a bowl and add half a glass of water. Place a bowl of corn on the fire and bring to a boil. Remove the pot from the stove and let the corn cool. Now it can be added to different dishes and salads. You can buy frozen corn in special departments of frozen vegetables and fruits.

It’s even easier with canned corn, open the jar, drain the liquid and delicious corn for salad is ready.


Finely chop the chicken fillet and send it to a bowl where you will mix all the ingredients for the olivier.

Boil carrots and potatoes in salted water for 35 minutes and cool. Peel boiled carrots and potatoes in advance, and then cut into small cubes.

Add chopped boiled chicken eggs to the rest of the ingredients in a bowl.


Cut sour or pickled cucumbers into cubes and add to a bowl. Alternatively, you can take fresh cucumbers for Olivier.


Strain the corn with a slotted spoon and transfer to a bowl. Chop some green onions and other herbs (parsley and dill) to taste, add to the salad.


When all the ingredients are already in the bowl, you can add mayonnaise, salt and spices to taste, mix well with a spoon. If you want to slightly reduce the calorie content of the dish, then replace some of the mayonnaise with yogurt or sour cream. Now the olivier can be covered with a film and let it brew in the refrigerator for about one hour.


If you have prepared your own corn olivier for the festive table, then make a beautiful and neat presentation. To do this, use a serving ring and serve this salad on two or three small plates.


On top of the Olivier salad, you can decorate with corn and a sprig of parsley or dill.
