By itself, the dish is fish rolls stuffed with vegetables. It turns out very tasty and nutritious, so they can be treated to relatives or friends. Playing the role of an excellent snack, it becomes clear why the dish has gained immense popularity in European countries.

Perhaps you are a little surprised by the name - nothing unusual, everything is connected with the fashion for pugs that appeared two centuries ago. To the Germans, the Rollmops resembled the muzzles of dogs, and they decided to name them after them. For the first time, such an appetizer was served in Berlin bars, where any visitor could take a dish from the display case. Some literary writers of the 20th century mentioned Rolmops in their works.

Let's no longer waste precious minutes going into the history of the dish, but consider how to cook rolls.

Ingredients:

1. Carrot - 1 piece

2. Onions - 2 pieces

3. Pickled cucumber - 2 pieces

4. Salted herring - 2 pieces

5. Water - 550 ml

6. Vinegar - 80 ml

8. Sugar - 30 g

Cooking method:

As for spices, you can use your own set. We used, and we recommend that you use such - bay leaf, ground cinnamon, cloves, allspice and black pepper. Their number should be minimal so that they do not interrupt the taste, but only complement it.

1. First of all, let's prepare the marinade for the dish. To do this, pour 550 milliliters of water into a convenient saucepan, dip two bay leaves and a third of a teaspoon of ground cinnamon into it.

2. Add two tablespoons of sugar, cloves and both types of pepper there. They will be enough for two peas and fruit.

3. We put the whole thing on fire and wait until it boils. During this time, you can cook vegetables.

4. Cut the onion into half rings.

5. Cut the carrot into thin slices. It is easier and more convenient to do this with a vegetable peeler.

6. When our marinade boils, we send carrots and chopped onions into it.

7. Wait for the water to boil again, mark for five minutes, add vinegar and continue to cook for two minutes.

8. Then, cover the cooked marinade with a lid and remove from heat to cool.

As for fish, it is advisable to buy salted or lightly salted. We recommend buying ready-made herring fillets right away. If for some reason this cannot be done, buy a whole fish and clean it thoroughly, removing the entrails, head, fins and skin.

9. When everything is ready, put the fillet on cling film and cover with it.

10. It is necessary to beat off a little with a hammer and a rolling pin. Do not overdo it, it is enough that the fish meat becomes a little flat.

11. After the marinade has cooled, you can transfer the vegetables to a plate.

12. Take a pickled cucumber and cut it lengthwise into four pieces.

Assembly:

13. Now you can start assembling the rolls. We remove the cling film and put carrot strips on the fillet. We send onions on top of it.

14. On the side where the head was, put the chopped cucumber.

15. We tightly roll our fillet into a roll and fix it with a toothpick.

16. We put our rolls in a suitable container in which we marinate them.

18. Fill the fish with the marinade prepared earlier. Make sure the meat is completely covered in liquid.

We cover the container with a lid and send it to the refrigerator for 12-24 hours. Consider this fact to prepare the dish in advance. You can cook rollmops in the evening so that the next day it will be ready.

19. After the fish is well marinated, cut each roll into three equal pieces. To keep them from opening, use skewers or toothpicks.

If you use the second option, do not forget to warn the guests in order to avoid injury and leave only positive impressions about the dish.
