To properly prepare the dough, which will bake and be tasty, you need to adhere to certain points. The list of our recommendations is quite simple, so it won’t be difficult to remember:

  1. It is very important to let the dough rest. This process not only mixes all the flavors and aromas together, but also makes the dough more elastic;
  2. If the dough contains yeast, then the milk (or water) should be warm. Yes, of course, they can be cold, but in a warm area the yeast will start working faster;
  3. Yeast dough must (!) rise in warmth. If it is summer, then the issue is resolved automatically, and if it is winter, then it is good to place a bowl of dough near the radiator or hot burner;
  4. To prevent the growing dough from sticking to the dry and clean towel with which the bowl is covered, you can sprinkle the dough with flour or grease it with oil. You can also use cling film instead of a towel;
  5. Before adding flour, we highly recommend passing it through a sieve. This saturates it with oxygen and subsequently the baked goods rise higher and become more fluffy;
  6. It is always more convenient to pour liquid into flour, and not vice versa;
  7. When kneading the dough, you can rub your hands with vegetable oil and then the dough will not stick to your hands;
  8. If you add too much sugar to the dough, it will start to burn and the baked goods will darken very quickly;
  9. Before filling the bowl with ingredients, you need to make sure that it is clean and does not smell anything. Otherwise, the pies will have the added bonus of leftovers from other food or liquid;
  10. To prevent the mass from sticking to the work surface, be sure to use flour or any vegetable oil;
  11. Fresh yeast always works faster and rises the dough more than dry yeast. But their disadvantage is that the packaging must be used quickly, otherwise the product will begin to dry out;

  2. Wait seven minutes for the fizzing reaction to take place and then add vegetable oil and salt;

  5. Add flour until the dough becomes smooth and does not stick to your hands;
  6. Grease a deep bowl with oil and place the dough there;
  7. Cover it with cling film and leave in a warm place for thirty minutes;

  1. Heat the water so that it is warm, but not hot;
  2. Pass the flour through a sieve, then mix it with salt;
  3. Pour warm water into the dry ingredients and add oil;
  4. Next, use your hands to knead the elastic, soft dough;
  5. Stir until the dough becomes smooth and does not stick to your hands - no more than ten minutes;
  6. Now you need to give the dough about fifteen minutes to rest and then you can form it into pies with the desired filling.

Tip: if the pies are sweet, you can add a little sugar to the dough to taste.

In order for the baked goods to have a beautiful, ruddy color, each pie must be additionally greased before baking. This can be a yolk or a whole egg, water with sugar or salt, tea and even coffee with milk.

In order for the pies to be as voluminous and fluffy as possible, they need to be allowed to rest in their finished form. That is, covering a baking sheet with paper and placing the pies on it, give them ten to fifteen minutes. 1.5 cups warm milk
4 (or 2) tablespoons sugar
6 tablespoons +3-4 cups flour
2 eggs

(this quantity of products makes about 20 pies) I think there will be those here who contemptuously reject dry yeast, so I’ll make a reservation especially for them. Instead of dry yeast, you can take 50 g of fresh yeast. The cooking process will increase by only 30 minutes - nothing for yeast dough, right? ;)

First we prepare the dough (don’t be alarmed, everything is elementary). For the dough, mix yeast, milk, sugar, 6 tablespoons of flour. We do this: slightly heat the milk (to “steam” temperature), mix flour, sugar and dry yeast in a bowl, slowly add milk and stir, you will get a dough without lumps, like liquid sour cream. This is our dough.

If the yeast is fresh, dilute it in milk and add everything else mentioned in the previous paragraph.

Let the dough sit in a warm, draft-free place for 15 minutes (or 30 minutes for fresh yeast).

Time has passed, the dough has foamed. Now all that remains is to knead the dough. I will knead with a mixer. But, of course, you can do it with your hands.

But first, beat 2 eggs with a pinch of salt in a separate bowl - not to a stable foam, as for a sponge cake, for example, but simply to a light, homogeneous mass. Add eggs to the dough and mix. Add 3 cups of flour, start kneading, gradually adding vegetable oil (2/3 cup). You need to knead a dough that is not stiff (not like dumplings!!), but elastic and does not stick to your hands, leaving the sides of the bowl and kneaded into one lump; it will take 5-6-7 minutes of working with a mixer. If you knead by hand, trust your feelings, the dough should not stick to your hands. The dough will definitely take three glasses of flour, the fourth is additional, you can add a little from it if it seems necessary.

Is the dough ready? If it has fresh yeast, cover it and leave it on the board for 15 minutes. If you use dry ones, you can immediately make pies and place them on a baking sheet.

The following point is important here: we try not to weigh down the dough with flour anymore. That is, lightly dust the board and hands with flour, it should not stick (we kneaded it well :)) Or this method: grease the table and hands with vegetable oil, and sculpt like this, the dough is guaranteed not to stick either to your hands or to the table.

So, light the oven, let it heat up to 180-220 degrees, and let the baking sheet with pies stand for 20-30 minutes in a warm place. When the pies are ready to bake, brush the tops with a lightly beaten egg for a nice color. And - into the oven!

How to prepare yeast dough with kefir

For me, any dough preparation process begins with the activation of yeast. Pour dry yeast into a small container, add 1 teaspoon of sugar and a little water (1/3 cup). Stir so that the yeast “blooms”, but you don’t need to achieve complete homogeneity, the main thing is that the yeast is soaked. Don't mind the lumps! Leave the resulting mixture for 10-15 minutes. After this time, a foamy head will appear on the yeast, which tells us about a high-quality product, that the yeast has “worked,” which means the dough will turn out great!
This is the “push” that the yeast needs to start the process.
There are many recipes for yeast dough (sweet and soft), but I always start by activating the yeast in this way, no matter whether I bake or not.

Mix vegetable oil (0.5 cups) with kefir (1 cup) and place the saucepan on the stove. Heat the mixture until warm, approximately 40 C. Do not overheat the kefir and butter at this stage, so that you do not have to cool for a long time before combining with yeast (yeast dies at temperatures above 40 C).

So, stir kefir and butter until smooth. Our grandmothers also made kefir dough for pies, because this is one of the most successful methods of kneading (the dough rises well, and its structure is airy and porous).

Another wonderful feature of the dough “like fluff” is that it does not go stale for a long time in finished baked goods. Pies and pies made with this dough will remain fresh and soft for a long time! Many people ask if this recipe can be used for pies in a frying pan, I recommend another recipe -.

Now add the remaining sugar to the kefir mixture.

Salt (1 teaspoon).

Sift 3 cups of flour into a separate bowl and keep it ready. You may not need all the flour! Flour may differ in its density and other characteristics, so each housewife requires a different amount of flour.

When you cook according to recipes from the Internet, focus on the consistency of the dough (usually you can see it in a photo or video). In order not to make a mistake and not to overload the flour, add half a glass at a time and stir.

Pour the rising liquid with yeast into the milk and kefir. Stir.


Add flour in small portions, stirring constantly and checking the consistency of the dough: it should be soft and tender, but not stick to your hands.

Yeast dough “like fluff” is very pleasant to work with, as it contains a large amount of vegetable oil. When forming pies, you practically do not need to add flour!

After kneading, place the dough in the switched off oven to rise. There are no drafts in the oven, the space is closed and convenient for proofing yeast dough. I advise you to completely cover the dough with a towel so that a crust does not form on its surface.

There is an interesting way to proof yeast dough in the oven, which is preheated at 40 C for 10 minutes and then turned off. Place the yeast dough in a low-heat oven to “rise.” I successfully applied this method in practice - the dough actually rises much faster, so this method can be used as an emergency method when there is absolutely no time!

After 30-40 minutes we will see that the dough has grown significantly in size. It should be kneaded and you can begin to form pies or pies.

I don’t roll out the dough “like fluff”, I just separate the pieces with my hands.

I place portioned pieces of dough on the baking sheet on which I will bake the pies and flatten them with my hands, stretching them slightly. Then I spread the filling and join the dough along the seam, pressing firmly.

Remember that already formed pies do not need to be immediately sent to the oven to bake! Yeast dough pies should be spaced and rise properly.

To do this, let them stand at room temperature on the counter.

To prevent the dough from drying out, it is better to cover the pies with a towel (or stretch cling film over the pies). This dough recipe will take 20-25 minutes to proof the pies.

It is recommended to bake the pies with the seam side down, and brush the top with a mixture of stirred egg and milk. In this case, the pies will turn out golden brown, tasty and fluffy. If you want a crispy crust, add a pinch of salt to the coating mixture.

  • We will prepare all the necessary products. Let's knead our dough; to do this, mix yeast, sugar and milk in a small but deep bowl. And leave for a while to ripen in a warm place, a bubbly foam should form on the surface

  • Now let’s proceed to the main stage of kneading, for this we take half the norm of flour and pour our suitable yeast into it, mix, add salt and vegetable oil, mix gently and add the remaining flour in small portions, stirring constantly

  • As soon as your mass has become thick, you can put it on the table and continue kneading, adding a little flour. The mixture should absorb all the flour and not stick to your hands.

  • Afterwards we put our finished mixture in a container and put it in a warm place, for further ripening, it should double in size

And now we can use it for further cooking and bake delicious pies with various fillings from sweet to bland.

Yeast dough with eggs that always works

We will prepare this dough using a straight method, quite quickly and easily. But it will differ in that it contains a chicken egg, and the kneading itself will be done in the most ordinary way

We will need:

  • flour - 500 gr
  • table egg - 1 pc.
  • vegetable oil - 4 tablespoons
  • salt - a pinch
  • milk - 225 ml
  • granulated sugar - 50 g
  • yeast - 0.5 cubes

Preparation:

  • Let's prepare all the necessary products in advance, taking them out of the refrigerator so that they are at room temperature. Take a deep bowl and mix in it a set of the following products: flour, chicken egg, salt and vegetable oil

  • But we will mix the milk and sugar in a saucepan and heat it on the stove, but not to a boil, but to 36 degrees. In a word, it should correspond to our body temperature. Crumble the yeast here and leave it for a while to mature.

  • Pour the yeast mixture into the mixture with flour and mix everything thoroughly with your hands or with a mixer until the dough is homogeneous.

  • Cover the finished dough with a napkin or lid and leave in a warm place for 1 hour, so it will double in size

How to properly place (knead) dough that is put in the refrigerator

The appearance and taste of your future baked goods depends on the correct mixing. I suggest you get acquainted with another universal recipe for pies. We will prepare it with milk with the addition of kefir and water, this mass will turn out to be quite soft and delicate in taste. Thus, our dough will contain 3 liquid products, which will give it the correct consistency

We will need:

  • kefir – 250 ml
  • milk - 250 ml
  • margarine or butter - 100 g
  • chicken egg - 2 pcs
  • granulated sugar - 100 gr
  • dry yeast - 15 g
  • salt - a pinch
  • flour - 1200-1300 gr
  • warm (boiled) water - 0.5 cups

Preparation:

  • The first thing we will do is steam our yeast. Pour a portion of yeast into a deep bowl and fill it with warm water, add 3 tablespoons of sugar and one spoon of flour. Mix everything well and leave in a warm place to ripen.

  • In the meantime, let's start kneading, break the egg into a deep bowl, add sugar and salt, and margarine. Mix everything with a whisk or mixer until smooth.

  • Pour milk and kefir into this, and add a little flour (on average one glass) so that the dough becomes semi-thick (like pancakes). And mix well so that there are no lumps

  • Our yeast has already arrived, pour it into the flour mixture, mix and add flour in small portions, constantly stirring without stopping

  • When our mass has become quite thick, put it on the table, sprinkle with flour and continue kneading. Pressing it with your hands in different directions.

Place the finished dough in a plastic bag and put it in the refrigerator for 2-3 hours. Once our mixture is ready, you can start baking pies.

A simple recipe with milk without eggs

Has it ever happened to you: you want to bake something delicious, but you don’t have some ingredient in the house. This is the recipe we will talk about; it will not contain chicken eggs. Let's try to do without them

We will need:

  • milk - 300 ml
  • margarine - 50 gr
  • yeast (dry) - 20 g
  • sugar - 3 tsp
  • salt - a pinch
  • flour - 4 cups

Preparation:

  • Dissolve the yeast in warm milk, preheating it to room temperature. Let it brew for 5-7 minutes and add melted margarine, salt and sugar.

  • Add a little flour to the same mixture, mix and let our dough brew, putting it in a warm place for 30 minutes, until a lush foamy mass forms.

  • At the end, add the remaining flour in small portions, stirring constantly. Until a homogeneous mass without lumps is formed

Flour must be sifted before adding to the dough, so it will be saturated with oxygen and your dough will be fluffy and soft

  • It is more convenient to mix the dough with a spatula, but if it has thickened quite strongly, you can put it on the table and continue kneading with your hands. Next, leave it for an hour in a warm place, after covering it with a napkin to prevent airing.

Cooking with raw (live) yeast in milk

Yeast is a living, single-celled fungus that releases carbon dioxide during the ripening process. This gives our dough airiness and porosity. And they are divided into two types: dry and live; we will now look at the recipe for cooking with raw ones. Many housewives are accustomed to using crumbly ones and have completely forgotten, or maybe even didn’t know about the other type. So let's take a closer look at it today.

We will need:

  • milk - 0.5 ml
  • sugar - 3 tablespoons
  • salt - 1 teaspoon
  • fresh yeast - 40 g
  • vegetable oil - 1 cup or 200 ml
  • flour - 6-7 glasses
  • vanillin - if the pie is sweet

Preparation:
