How to cook beef heart goulash in a pressure cooker

1. Let's prepare all the components from which we will make goulash. The frozen heart, of course, is defrosted in advance. Wash the heart very well, cut (if the heart is not cut in the store) in half lengthwise, wash again, then pour cold clean (preferably filtered) water for about two to three hours.

2. Clean carrots and onions must be chopped. I cut the onion into half rings, and the carrot into quarters of the rings (i.e., I cut the carrots into 4 pieces along, and then into slices).

3. We take out the heart from the water, wipe it with a paper towel and proceed to processing. Processing consists in cutting off the fat (you can leave a small amount of fat) and be sure (!!!) to remove all vessels, valves, films, membranes. Next, cut the heart into strips. We try to keep the size of all strips approximately the same. The cut strips of the heart are again washed well under cold water, then squeezed out, getting rid of excess liquid.

4. Pour oil into the pressure cooker bowl and heat it up by turning on the “Frying / Deep Frying” mode. Put the pieces of the heart into the hot oil and fry, stirring often and with the lid open.

5. When the liquid has evaporated, add the onion to the heart and continue to fry, not forgetting to stir as well.

6. After about 6-7 minutes, lay out the carrots. Now fry everything together for about five minutes, after which we turn off the "Frying / Deep Frying".

7. While hot, salt and pepper to your taste. We put tomato paste or tomato sauce (I have sauce) and bay leaves. Pour one and a half glasses of hot water, which was previously boiled in a kettle (but, of course, boiling water should not be poured). 8. After the end of the program, in order not to be scalded by the steam, it is better to wait about 15 minutes, and only then open the steam valve and remove the lid. Then, we switch the pressure cooker to the "Frying / Deep Frying" mode and we will make the sauce thick. At the first sign of boiling, carefully and gradually pour flour in small doses.
