The product is used to make fermented baked milk and is also used for baking. Having become more familiar with the benefits of baked milk, it will be easier to understand whether the ingredient is worth consuming daily.

Baked milk: composition and calories

Despite the thermal method of processing milk, its beneficial properties are retained. Baked milk contains a large amount of amino acids and vitamins. Nutritionists believe that the product is absorbed by the body much better than pasteurized and fresh milk. 6% baked milk contains about 84 calories. 4% contains about 67 kcal and 1% contains 40 kcal.
The product is based on the following elements:
  • vitamins A, D, C, E
  • phosphorus
  • iron
  • calcium

What is the difference between baked milk and regular milk?

In the process of producing baked milk, the technology for its production is more complex than in the case of pasteurized milk. It is important to remember how it differs from the usual one, since the difference is colossal. The taste and consistency of the product is completely different from that of the pasteurized one. For many hours, milk simmers at a temperature similar to boiling. The shelf life of ghee is much longer than that of regular ghee.
The consistency of baked milk is much fatter than whole milk. Milk has a pronounced sweetish taste. The calorie content is higher than usual. Pasteurized milk is white, while baked milk is light brown. Baked milk has a lower content of vitamin C and B. It is based on less water.

Baked milk production technology

After receiving cow's milk, it is further pasteurized. Then the liquid is kept in a closed container at 99 degrees for 3 hours. During the simmering process, it is important not to forget to stir the liquid periodically to make it more homogeneous. The production of baked milk requires considerable time. After all, after simmering, you should wait until the consistency cools to 40 degrees. It is important not to forget to stir the milk during this period. At the final stage, when the milk has cooled, it is poured into packages.
Attention! Baked milk is quite easy to prepare at home. You need to wait until the milk boils, and then pour it into a thermos for 6 hours. The thermos should first be rinsed with boiling water.

But “VkusVill” once again amazed me with its “Greek” yogurt “VkusVill/Izbenka”, so I still decided to buy Greek yogurt made from baked milk, which I never regretted in the future.

But on my second purchase, I ate the yogurt already sitting, at the end of its expiration date, and its consistency was very thick. There was actually a spoon in it! This may be due to the effect of the serum throughout the shelf life of the product.

The taste of Greek yogurt made from baked milk is simply unreal! It's impossible to put into words! Nice! Lactic! I didn’t feel a drop of sourness in it, unlike the Greek yogurt TEOS “Savushkin Product”.

My impressions:

  • I was delighted with the taste of Greek yogurt made from baked milk, I was ready to jump with happiness and run for another one of these yogurts.
  • It is impossible to convey this taste! I don’t particularly like the taste of fermented baked milk, but I absolutely loved this yogurt!
  • I would never have thought that a product containing no sugar or various additives would give me so many positive emotions!

In addition to excellent taste, this yogurt has an excellent composition, ideal for proper nutrition and diet.

BUT! The price is certainly high, 46 rubles for 125 grams, compared to Greek yogurt "Savushkin" which costs an average of 25 rubles per 150 grams - the difference is colossal. If you like the taste of baked milk and love yogurts, you will definitely like this recipe. Today I make yogurt from baked milk. It is convenient to prepare it in a special device - a yogurt maker. This miracle of modern technology will allow you to prepare yogurt without any hassle. However, we have our own miracle - a multicooker, which copes with making yogurt at home just as well. Baked milk yogurt in a slow cooker It turns out thick, with a sweetish taste of baked milk and a subtle creamy aroma. Try this delicious dessert and you will become a fan for a long time. If desired, you can add berries, fruits, jam to yogurt, but even without additives it is surprisingly good.

Ingredients:

  • 1 liter of baked milk
  • 1 Activia yoghurt (I used strawberry)
  • 1 tbsp. l. sugar (optional)
  • clean small jars (the smaller the jar, the thicker the yogurt will be)

Preparation:

Prepare baked milk. Cool the finished baked milk to 40 - 41 °C. Add sugar, mix. Pour in the activia (the starter should be at room temperature). Mix.

Prepare the jars in advance, they must be clean and dry (!) Pour the milk into the jars. Cover the top with lids (do not tighten) or wrap each jar with cling film.

Place a napkin or silicone mat on the bottom of the bowl. Place jars of milk.
Fill the bowl with warm water to the milk level (the water should also be 40-41 °C).

In a slow cooker Panasonic Use the “off” button to turn on the “heating” mode for 15-20 minutes (we mark the time on the clock). Then turn off the “heating” and leave the yogurt in the turned off multicooker for 1 hour.

After an hour, turn on the “heating” again for 15-20 minutes. Turn off and leave again for 1 hour.

By this time, the yogurt should have thickened and the consistency will be similar to thick kefir. Place the jars in the refrigerator for several hours. The yogurt will thicken even more in the refrigerator.

Advice: If the yogurt has not yet thickened after heating, turn on the heating again for 15-20 minutes. And leave it for another hour in the turned off multicooker.

Try making yogurt from baked milk! I'm in love with him! And in general, homemade yogurt is an excellent platform for culinary creativity! after all, you can control the thickness, consistency, taste... and quality, of course!

I make it in a slow cooker, I have a Bork, so I’m writing a method for it, but you can make this yogurt using any method. Plus, I like very thick yogurt, so I always put it extra in a linen bag or gauze to drain the whey.

Ingredients:
2 liters of baked milk 3.5-4% with a shelf life of 5 days (the fattier the milk, the thicker and more yogurt will be)
200 ml of yogurt without additives (also with a short shelf life, I have a 14-day shelf life, but it works great)
cinnamon

Method:
1. Boil the milk together with cinnamon sticks (if you add powder, you can do it later. I boil it in a multicooker (multi-chef mode 100C for 25 minutes). Strain the milk to remove any foam, etc., wash the bowl and return the milk to it. Add cinnamon, if in powder.
2. Cool to 55C, add yogurt, stir. Close the lid, turn the handle so that the lid is tightly closed. You don’t need to turn on the heating, just leave it overnight, or for 8 hours. In this multicooker model, the lid closes very tightly, so the heat is retained quietly all night.
3. Place the finished yogurt in a linen bag or gauze in several layers and hang for several hours until it becomes completely thick. About 4 hours. If it becomes very thick, you can dilute it back a little with whey or the yoghurt you used to ferment it, if there is any left.
4. Transfer the yogurt from the bag to a bowl, beat with a blender until completely smooth and place in jars. Keep refrigerated.

If you make yogurt with baked milk instead of regular milk, you will get a completely different taste of the famous delicacy. It will have a creamy hue, delicate texture and great benefits for the body, because how to cook.

I read that baked milk has more fat and calories because the liquid evaporates from it. But this does not apply to milk that was heated in a Panasonic multicooker, because it is heated so carefully that its mass remains the same from the beginning to the end of the simmering process. Let me remind you that we have already heated and simmered the milk.

However, yogurts were also prepared more than once, for example, fermented at Evitalia.

So in this recipe we will do everything as before, nothing new, as they say.

Yogurt with baked milk in a slow cooker

We will need:

1 liter of baked milk

0.5 bottles of “Evitalia”

2 liters of baked milk

1 bottle of "Evitalia".

Heat the baked milk to 40 degrees (or cool it if you just prepared it), pour a little milk into the Evitalia bottle, stir until the powder disperses and pour into the baked milk:

Pour baked milk with sourdough into dry and clean jars and cover with clean lids.

Place a silicone mat or napkin on the bottom of the multicooker pan and place the jars. Pour warm water up to the neck of the jars.

Heating for 15 minutes - turned off.

We waited 1 hour.

Reheat for 15 minutes. Turned off.

And left for 6 hours.

Then put it in the refrigerator to cool. And store in the refrigerator too.

For owners of other multicooker models, not Panasonic:

- if you have a multicooker, then yogurt can be prepared using this program. Pour baked or regular milk with the starter according to the technology described above into a saucepan or put it in jars, pour in water and turn on the temperature at 35-40 degrees for 6 hours.
