Lenten pancakes. Yeast pancakes (lean). Pancakes on gas water

The simplest recipe you can come up with - lean pancakes with yeast, fluffy like pies and so rosy! They are good not only during Lent. You don’t always have milk or kefir or eggs, but this recipe only needs water, flour and yeast. In water, the yeast dough for pancakes rises perfectly, they fry quickly, and in an hour there will be a pile of lush, delicious pancakes on the table. If desired, you can add grated apple, frozen or fresh berries, cinnamon, raisins or other additives allowed during Lent to the dough.

Ingredients:

  • Warm water – 1 glass (250 ml);
  • fresh yeast – 12 g;
  • salt – 1/3 tsp;
  • sugar – 2 tbsp. l;
  • flour for dough – 2 tbsp. l. with a high mountain;
  • in the dough - 4 tbsp. l. with a large slide;
  • vegetable oil - for frying.

Preparation

For the dough for yeast pancakes, we will take a deep, spacious bowl so that during proofing it can rise well and not run away. Crumble a piece of fresh yeast, add salt and sugar.

Stir, grind everything into a liquid paste with grains of sugar.

We heat the water warmer than room temperature, approximately +37-38 degrees. It should be pleasantly warm and not burn your hands. Pour the yeast mixture with warm water, stir, dissolve the grains of sugar and salt.

Sift flour into the water with yeast, about two heaped tablespoons. By weight it will be 80-90 grams.

Stir with a spoon, whisk or use a mixer. You may need to add a little flour so that the dough is not very thick, like low-fat kefir or pancake batter.

Cover the dish with the dough and put it in a warm place for 25-30 minutes. Fresh yeast will begin to work very quickly, and after half an hour the dough will be covered with air bubbles, holes, and begin to foam. A characteristic sourish smell of fermentation will appear.

Gradually add more flour, adding in small portions. Mix first with a whisk, and when the mass thickens, stir with a spoon.

The consistency of the dough for lean pancakes with yeast will be thick, viscous, and will stretch behind a spoon like a wide ribbon. It needs to be thoroughly ground and kneaded so that it is stiff and homogeneous, without lumps or areas of dry flour.

Place the dishes in a warm place and cover. Or we put it near the battery. It will take 40-50 minutes, the proofing time depends on the strength and freshness of the yeast, the quality of the flour, the air temperature and other factors. The present yeast dough will rise three times (or more), become loose and fluffy. The surface is full of holes and will begin to sag and sink in some places. It is not recommended to leave it longer; the yeast may lose its ability to rise and the pancakes will remain flat when frying.

Pour oil into the frying pan, the amount depends on the diameter of the frying pan. You need to pour so much that the entire bottom is covered by 1-1.5 cm. Heat over medium heat. Without stirring the dough, scoop it up with a spoon and place it in hot oil, giving the pancakes the shape of rounded cakes. Fry for two to three minutes.

Use a spatula or fork to lift the pancakes and turn them over. Fry the second side for about two minutes. Keep an eye on them; they fry quickly and can burn unnoticeably. Remove the finished pancakes to a plate. Add oil; if there is little left, add the next portion.

Lenten fluffy yeast pancakes are ready! You can serve them for tea with a variety of additives allowed during Lent: jam, marmalade, honey, pureed berries, stewed apples with cinnamon and sugar. Lean pancakes are also great for soups instead of bread. Bon appetit!

Lenten pancakes, the recipe for which we will consider below, turn out to be just as tasty and satisfying as those products that are prepared using animal products (eggs, kefir, milk, etc.).

Today we will present the most popular and simplest ways to prepare such pancakes. It is recommended to put the recipes into practice during Lent or if you are a vegetarian.

Delicious lean pancakes: recipe without yeast (using sparkling mineral water)

It’s no secret that carbonated mineral water makes baked goods fluffy and very tasty. In this regard, we recommend preparing lean pancakes with this drink.

So, to prepare the pancake base we will need:

  • sifted light flour - 1 full glass;
  • sparkling mineral water - 1 full glass;
  • baking powder - full (you can replace ½ spoon of table soda and a few drops of lemon juice);
  • sugar and salt - use to taste (additionally you can use honey);
  • Refined oil - used for frying pancakes.

Knead pancake dough with sparkling water

Lenten pancakes are not only very tasty, but also relatively inexpensive. After all, to prepare them we only need water and flour, which cannot be said about ordinary pancakes, which are made using milk, eggs, kefir, cooking fats, etc.

To make fluffy and tasty lean pancakes, you need to pour carbonated water into a deep container, and then add baking powder or table soda, previously quenched with lemon juice. After adding salt and sugar to taste to the liquid, pour the sifted flour into the same bowl. After mixing the components, you should get a base whose consistency resembles thick and fatty kefir. It is from this dough that you will get very fluffy and soft pancakes, and not with holes.

Frying products in a frying pan

Like regular pancakes, lean pancakes must be cooked on or in a special pancake pan. The prepared container should be placed on high heat and warmed thoroughly. Then you need to pour it into it (about 4 large spoons), you need to wait until a light smoke comes from the frying pan. After this, place the pancake dough in a hot bowl. To do this, it is advisable to use a large spoon (1 spoon - 1 pancake).

After browning the bottom sides of the pancakes, turn them over with a spatula and cook in the same mode for the same amount of time.

The fried pancakes must be placed on a plate, and a new batch of products should be placed in the frying pan. In this case, it is recommended to grease the finished dessert with hot vegetable oil.

Serve to the table

Lenten pancakes must be served only hot. Additionally, they can be sprinkled with powdered sugar and decorated with a stream of fresh liquid honey, berries or fruits. It is advisable to serve sparkling water pancakes to guests along with a cup of black tea.

Lenten pancakes: recipe using “quick” yeast

If you adhere to vegetarianism or Lent, you should definitely know how to prepare homemade dessert without animal products. This information will allow you to make delicious and aromatic baked goods without using eggs, milk or cooking fats.

Very often, lean pancakes are prepared using a yeast base. It makes homemade pancakes very fluffy, soft and satisfying. Moreover, such products have an unusual sourness, which is inherent only in pancakes made with kefir.

Thus, using yeast, you can prepare pancakes, the taste of which is practically no different from a standard dessert with familiar products.

So, to make lean yeast pancakes, you need to purchase the following products:

  • sifted wheat flour - about 2 cups;
  • warm (boiled) water - about 1.5 cups;
  • "quick" yeast - a dessert spoon;
  • white sugar - a large spoon;
  • sea salt - ½ dessert spoon;
  • Flavorless sunflower oil - for frying products in a frying pan.

Making yeast dough

Have you decided to make lean pancakes with yeast? It is necessary to knead a fluffy base. To do this, use only warm drinking water. By creating comfortable conditions for yeast, you will get incredibly tasty and porous dough.

So, to knead the base for pancakes, you need to dissolve white sugar and sea salt in regular warm boiled water. Having combined the sifted flour with “quick” yeast in a separate bowl, you should add the mixture to the sweet liquid and mix thoroughly with a large spoon. At the same time, you should get a thick but loose dough. It must be covered with a towel and left warm for 25 minutes. During this time, the base should become fluffy and viscous. The risen dough usually gives off a pleasant sour aroma (a sign of fermentation).

It should be noted that the longer the yeast pancake dough is kept warm, the more sour it becomes. Therefore, it is not recommended to overexpose it.

Cooking pancakes in a frying pan

As in the previous recipe, yeast pancakes must be cooked in a thick frying pan or a special pancake maker. It should be heated strongly with refined oil, and then 1 large spoon of aromatic dough should be placed on it.

Cooking yeast products is required over medium heat until the bottom of the pancakes is browned and the top is swollen and covered with multiple bubbles. After this, the pancakes should be carefully turned over and fried in the same way.

Final stage

Having prepared the first batch of yeast pancakes, they need to be taken out and placed on a plate. As for the empty frying pan, you should pour a little refined oil into it again, and then lay out the base (1 spoon - 1 pancake). Additionally, there is no need to lubricate the finished products with hot vegetable oil.

Serve lean pancakes to the table

Having made a lot of fluffy and tasty pancakes on a yeast base, you should place them in a heap on a dish and then sprinkle with powdered sugar. These products taste very much like kefir pancakes. They are just as aromatic, sour and have a peculiar “dampness”.

It is recommended to serve yeast pancakes to the family table along with a cup of hot tea. They also need to be presented with jam, condensed milk, jam or fresh honey. If desired, the products can be decorated with fresh berries or pieces of fruit.

Lenten pancakes - the secrets of splendor

Pancakes - in my opinion, this is one of the most popular dishes. They are perfect for breakfast, a snack, and they are perfect for dessert with sour cream or jam.

2. Test structure. One of the significant characteristics of splendor is the structure of the dough. It should be smooth, without clumps, and should fall off the spoon, not slide.

3. The dough should rest. After kneading the dough, it should be allowed to “rest” for about twenty minutes. This will allow the gluten in the flour to swell, and the dough will become more elastic.

4. Toppings. In order to diversify the tastes, it is possible to supplement with all kinds of contents: apples, berries, raisins, zucchini, minced meat, sausage, mushrooms and whatever you want. But I advise you to grind everything very finely and put in not a large amount, otherwise the heavy filler may have a bad effect on the splendor.

5. Smell. The presence of a pronounced aromatic smell makes the pancakes even more appetizing and delicious; they can be baked in a variety of flavors. Therefore, it is possible to add vanilla, cinnamon if you have sweet pancakes, and finely chopped herbs if you have savory pancakes.

6. Baking method. First, you should heat a dry frying pan well, and then pour in the sunflower oil. To tell if it's hot, drop a drop of batter in one edge; if bubbles appear, it means it's ready to fry.
