I was asked to look at Turkish delight recipes by my ten-year-old grandson Sasha, who has recently become interested in cooking. After successful preparation, we decided to prepare Turkish delight, the recipes for which we found on the internet.

A little history. Turkish delight is a common Eastern sweet, originally from Turkey. It was invented by the Sultan's confectioner at the end of the 18th century. The Sultan ordered him to prepare something sweet and delicate in taste in order to pamper his harem with sweets.

The experiment was a success, I liked the sweetness, moreover, in 1897, the grandson of the confectioner presented Turkish delight at the European exhibition in Brussels, where he received a gold medal. This enabled him to conclude contracts for the supply of Turkish delight to Europe. The confectioner opened a shop in Istanbul and they say that this shop is still in operation under the leadership of his descendants.

As you may have guessed, today, at the numerous requests of our grandchildren, we will prepare Turkish delight according to Turkish recipes.

At the beginning, I want to say that the Eastern sweet Turkish delight is not prepared with gelatin and agar-agar, only with starch, and the fillings can be pistachios, hazelnuts or any other nuts.

Turkish delight can be any color, you can take any pure juice or fresh syrup, which gives it color, as well as food coloring and flavorings. Sprinkle with coconut flakes, powdered sugar, ground pistachios, nuts and even rose petals. There are many varieties of Turkish delight.

Turkish delight orange

The most common Turkish sweet, served with coffee.

We need:

  • 1 tbsp. orange juice (you can use any you like)
  • 1.5 tbsp. water
  • 1.5 tbsp. Sahara
  • 1 tbsp. corn or rice starch
  • 1/2 tsp. citric acid or 1 tsp. freshly squeezed lemon juice
  • coconut flakes or starch for coating

Preparation:

1.Mix water, orange juice, sugar, citric acid in a saucepan until the sugar is completely dissolved.

2. Add starch to the resulting syrup and mix thoroughly so that there are no lumps. Place on the stove and, stirring constantly, over low heat, cook until thickened for 30 minutes.


3. The mold for pouring Turkish delight must be slightly moistened and pour Turkish delight into it. Level the surface well with a spatula or knife and leave to cool.


Then cut the sweetness into squares; we determine the size ourselves.


4. Roll each square in coconut or starch. Afterwards, let it dry.


Tip: While pouring the Turkish delight into the mold, you can add pistachios or other nuts.

Turkish delight lemon-pistachio


We need: 1 tbsp = 250 ml

  • 4.5 tbsp. sugar (if you want it sweeter +)
  • 2 tbsp. corn (rice) starch
  • 1 tbsp + 3 tbsp water
  • 0.5 tsp citric acid
  • 0.5 tsp cream of tartar (tartar), optional
  • pistachios (hazelnuts) to taste, the more, the tastier
  • starch or pistachio flour, for sprinkling

Preparation:

1.Pour sugar into a saucepan, add 1 tbsp. water and put on fire, cook syrup. Cook the syrup while stirring for 10 – 15 minutes. Make the heat moderate so that the hot syrup does not splash on and around the stove.


The cooking temperature is 130 degrees, if there is no thermometer, we determine the readiness of the syrup drop by drop, for which we drop the syrup on a saucer; if it does not spread, the syrup is ready.

Important: At home, in order not to cook for 2 hours, as in production, but to reduce the cooking time, first cook the syrup until it thickens, and then mix with starch. This will significantly reduce the cooking time.

2. At the end of cooking the syrup, add citric acid, stir and let it boil.

Tip: Citric acid or juice is added at the end of cooking the syrup; it will prevent the sugar from caramelizing, the syrup will not harden, will not darken at all, and naturally, it will impart color transparency.

3. As soon as the syrup is ready, immediately set the starch to boil. Dissolve the starch in 3 glasses of water, mix so that there are no lumps, add cream of tartar if desired. Boil until thick, stirring continuously.


4. When the starch mass is ready, add sugar syrup, mix vigorously with a whisk and cook: 22 minutes if you used cream of tartar and from 40 to 80 minutes if without it.


Tip: The longer the mixture is cooked, the harder the Turkish delight will be, and the less it is cooked, the Turkish delight will be soft, like melted jelly, and will not set.

5. Before pouring into the mold, add pistachios to the Turkish delight and mix thoroughly.


6. Prepare the form. You can prepare it in different ways:

  • cover with cling film and generously sprinkle the bottom with starch;
  • cover the bottom with parchment and sprinkle with starch (this is what they do in production);
  • slightly moisten the mold

7. In the prepared form, pour a 1-2 cm layer of Turkish delight, level the surface, sprinkle generously with starch and you can level it again with a rolling pin.


8. Leave the Turkish delight to dry at room temperature for 4 to 24 hours, depending on the thickness of the layer.


9. Afterwards, sprinkle the table with starch, lay out Turkish delight, sprinkle more powdered sugar on top and cut into cubes, roll in coconut flakes, chopped nuts or rose petals.

10. Store Turkish delight in the refrigerator, in a vacuum bag in whole sheets or cubes, the main thing is to roll it well in starch, otherwise it will “sweat”.

Turkish Delight Recipes: Coconut White


We need: 1 tbsp = 250 ml

  • 3 tbsp. milk
  • 1 tbsp. semolina
  • 1 tbsp. Sahara
  • 2 tbsp. starch (any)
  • 30 g butter, optional
  • 10 g vanilla sugar (to taste)
  • 150 ml cream (gives Turkish delight softness)
  • 50 g coconut flakes (optional)
  • crushed hazelnuts for filling

For sprinkling

  • 150 g coconut flakes

For decoration

  • hazelnuts, whole nuts or chocolate spread, finely ground pistachios

Preparation:

1. Dissolve the semolina in cold milk, mix well so that there are no lumps.

2. Add vanilla, starch, sugar to them, mix everything again with a whisk. Place on the fire and, stirring continuously, bring to a boil, cook over low heat for 2 minutes.


3. Add butter, crushed hazelnuts, 50 g of coconut to the hot porridge and mix thoroughly with a whisk or mixer at low speed. Cool the mass.


4. Whip the cream to stiff peaks and stir, carefully, into the cooled semolina porridge.


5. Roll the porridge into small balls and roll them in coconut flakes.

Press the ball on top with your finger and put a nut or ground nut and chocolate paste.

Turkish Padishah Lukum


We need:

  • 1 liter of milk (5 glasses)
  • 1 tbsp. flour (not full, up to the rim)
  • 1 tbsp. Sahara
  • 1 tbsp. butter
  • shanti cream or 200 ml whipped cream with sugar
  • strawberries for decoration
  • 70 g coconut flakes

Preparation:

1.Dilute sugar and flour with cold milk and mix with a whisk. Place on the stove and, stirring constantly, brew until thickened. The consistency should be not very thick custard, then add butter.


2. Take a baking sheet or tray and sprinkle it tightly with coconut shavings so that there are no gaps.

3. Carefully pour the finished mass onto a baking sheet, evenly, slowly, so as not to raise the chips, level the surface with a spatula. Leave to cool.


4. Whip shanti cream (1 tbsp. milk + a bag of cream) or cream and carefully place it on the base layer, leveling the surface.


5. Cut into equal strips (first into 4 pieces, and then each into strips). Using a spatula, roll the strips into rolls and place them on a plate.


Before rolling the rolls, you can place nuts on the surface. Decorate the rolls themselves with strawberries.

Dessert “Pasha lokum”


You can surprise your guests with this dessert.

We need:

  • 1 liter of milk
  • 1 tbsp. flour
  • 1 tbsp. Sahara
  • 250 g cookies, crumbly, any
  • 2 tbsp. butter
  • 10 g vanilla sugar
  • 2 tbsp. orange juice (any juice can be used)
  • 1 tbsp. starch, heaped (corn)
  • 1-3 tbsp. sugar (to taste)
  • coconut flakes (optional)
  • 1/2 part orange zest

Preparation:

1. Take the cookies and, using a blender, either with your hands in a bag or with a rolling pin, crumble them, making a mass out of them, almost like flour.

2. Pour milk into sugar and flour, stir well and put on fire. Cook until thickened for literally 5 minutes, maybe a little more. Stir constantly, without leaving the stove, until the mixture
didn't burn.


Then add vanilla sugar and a little butter for flavor.
When the cream begins to boil, you can keep it on the stove a little longer and turn it off. Beat well with a whisk so that there are no lumps.

3. Now, take the cookies that we crushed into crumbs in a blender and lay them out in a thin, even layer on 2/3 of the baking sheet. The remaining 1/3 of it is covered with coconut flakes.
You can make one cookie for the entire baking sheet, without coconut.
We try to lay it all out in an even layer, without holes.


4. While the cream has not cooled, carefully, using a ladle, pour it onto the cookies and coconut shavings. We level it in an even layer over the surface of the base using a spatula type.
We try to ensure that the dough does not drag behind this spatula, in order to ensure that it does not grab the outer layer and turn over.


5. Place the pan in the refrigerator to cool, and in the cold season you can go out onto the balcony.

6. Meanwhile, prepare the next layer of our sweetness, orange cream. Mix 1-3 tablespoons of sugar with starch and pour in orange juice (any other juice of your choice) for aroma and taste.



7. That’s it, turn on the heat and cook until thick, without leaving, stir. Cook for literally three minutes, it thickens, throw in the orange zest and turn off the stove.

The resulting mass can be eaten even just like that, placed on plates, sprinkled with shavings and this is a ready-made dessert.

8. Take the main part of our dessert (baking tray) and until the orange cream has cooled down, we will lay it out. We try to spread and level the cream over the entire surface.


9. Again, take it out to a cold place and wait until it cools down. Then, you can cut the dessert using, for example, a glass, just circles or measure ten centimeters into strips and cut.
Roll these strips into rolls.


Tip: The thinner the dessert dough, the better it is to roll the rolls. They do not break and will not fall apart.

10. You can decorate the top with a berry, add a walnut or sprinkle shavings,

  7. When the mixture has cooled, cover the top of the mold with film, in which it is worth making several punctures with a toothpick to allow air to get inside.
  8. Leave the product in the cold for 8 hours, then cut the frozen piece into small cubes approximately 2x2 centimeters in size. Roll them in coconut flakes.

Pumpkin Turkish Delight
