The other day I thought, homemade soda is real. It’s summer, it’s hot, and I want to drink and drink, so it was decided to make homemade soda with my own hands at home. I can already feel the sarcastic smiles of some people and their thoughts about the fact that it’s easier to buy sparkling water in the store. I agree, but since the site is called “How to make it yourself,” we try to do it ourselves.

Homemade soda is made faster, and you can prepare it according to your own recipes and tastes.

First, a little theory and history. Sparkling water is very easy to make. To do this, you need to add carbon dioxide CO2 to the water.

Its main properties: colorless, odorless, does not burn, heavier than air, soluble in water and has a sour taste.

Those who saw Soviet times and soda fountains on the streets remember them with great warmth. There was a large cylinder of carbon dioxide in them and the gas was dissolved in water under pressure.

There is also a way to make homemade soda using a siphon and carbon dioxide canisters. These siphons are still sold now, but they cost a lot. As you can see, to make soda at home, you need water and carbon dioxide. There are no problems with water, but where can we get carbon dioxide?

How to make homemade soda with your own hands

Carbon dioxide can be made from things you can always find in the kitchen. This is baking soda and vinegar. When they are mixed, carbon dioxide, water and salt are obtained. If you know how to cook, then you know that in some recipes it is customary to extinguish soda with vinegar and it is carbon dioxide that makes the dough soft and porous during baking.

Therefore, to make homemade soda we prepare:

  • Baking soda - 2 teaspoons
  • Vinegar 9% - 7 tablespoons
  • Plastic bottles - 2 pcs (preferably dark ones from beer)
  • Water – 1 – 1.2 liters per 1.5 bottle
  • PVC tube - 1 meter
  • Bottle caps - 2 pcs with holes for tubes

The tube is a cambric tube, taken from a television cable.

The tube should fit tightly in the lids and not allow gas to pass through in these places. To do this, we make holes in the covers smaller than the diameter of the tube and pull it in with force.

This bottle will contain water for homemade soda. And in another container we will mix vinegar with soda. In order for the reaction to be delayed with some delay, wrap the soda in a paper napkin and add it to the bottle with vinegar. Therefore, before the gas starts to be released, we will have time to close the lid and not lose some of the carbon dioxide.

In the photo above, instead of a napkin, I used a plastic bag, pouring baking soda through a funnel and cutting off the top.

While mixing carbon dioxide and water, the water bottle should be shaken well for 3-4 minutes. In the photo I have too much water for homemade soda, please note that you need less.

This way I managed to make sparkling water or homemade lightly carbonated soda with my own hands.

It is better to use dark bottles, without scratches, they can withstand more pressure than light ones. In no case, when repeated, do not increase quantity soda and vinegar. If there is too much gas, the bottle can explode with a loud bang and damage your eardrums, fingers and eyes. This is well explained in the video using liquid nitrogen as an example.

Over time, I think I’ll improve the recipe so that homemade soda can be made easier and safer with my own hands, but this requires equipment and experiments, so for now I’m publishing this slightly carbonated method.

Anyone who lived through the times of the Soviet Union probably remembers the vending machines from which you could drink regular drinks for one kopeck and syrup for three. Representatives of the older generation recall with nostalgia the smiling saleswomen standing behind cone-shaped vessels with taps: for 4 kopecks soda with standard syrup, for 8 kopecks for double syrup. Now, alas, the food industry has become so intertwined with the chemical industry that it’s scary to even think about which periodic table we use under the Citro or Coca-Cola brand. But you can prepare drinks, the taste of which we remember from childhood, with your own hands. How to make soda at home?

First, just a little theory. Any soda - simple, sweet, with a variety of flavors - contains two main components. These are water and carbon dioxide. In the language of chemistry, this is a solution of CO 2 in H 2 O. Everything else: syrups, herbal decoctions, caramelized sugar are just flavoring additives. Let's assume that clean water can be found in any home. Where can I get this one and, most importantly, how to dissolve it in water? In a word, how to make soda at home? The easiest way is to use a siphon. This is a container with a spray can. When the handle is pressed, it is pumped under pressure into ordinary water, so a bubbling drink is obtained in the glass. You can pour fruit drink, juice, compote or herbal decoction into the siphon. In short, this is a necessary thing in everyday life. But now it’s difficult to get a siphon, and such tanks cost a lot. How to make soda at home without it, is it possible?

Yes, and without any special costs. If you love cooking, you probably have all the ingredients you need in your kitchen. Remember what they do to make the dough airy? That's right: they add a little to it. The chemistry textbook for the 6th grade presents us with the simplest rule: an alkali neutralizes an acid, and as a result of this simple chemical reaction, carbon dioxide is released. If we drop vinegar or lemon juice (acid) onto (lye), the expected reaction will occur: the mixture will begin to foam, releasing bubbles. The smartest people have already figured out how to make soda at home. But let me explain: pour a spoonful of soda and half a spoonful of citric acid into a glass and fill it with cold boiled water. That's it - the foamy drink is ready.

Once you have learned how to make homemade soda, you can learn how to make drinks based on it. For example, “Baikal” is “our answer to Chamberlain,” or rather “Coca-Cola,” invented in 1967. For 3 liters of drink we will need 10 g of St. John's wort, eleutherococcus, licorice, fir needles, half a lemon and a glass of sugar. Pour hot water over the herbs and pine needles and let them brew for 3 hours. Strain the liquid, boil again, add sugar, cool, squeeze out lemon juice, mix with soda.

There is another way to make soda at home. You need to mix the catalysts for the chemical reaction directly in the glass. Make fresh pear juice from one juicy fruit, dissolve sugar in it to taste. Squeeze the juice of a third of a lemon into this mixture. Pour some baking soda into a glass and pour in the juice. The famous drink “Duchess” is ready.

Once upon a time, the grass was greener and the sun was brighter. And sparkling water in our Soviet childhood was much better and tastier than it is now. And no wonder. In the Soviet Union, natural products, herbs, and lemons were used for lemonades.

Citro(5-6 servings)


(Perhaps the oldest soft carbonated drink. In Soviet times -proper name of one of the produced types of lemonade. Now often used by many people as a common name for all types of carbonated drinks. The Soviet “Citro” was created decades ago by selecting combinations of citric acid, sugar, flavorings and syrups of various citrus fruits. Thus, the aromatic basis of the Citro-Extra drink was infusions of orange, tangerine, lemon with the addition of vanillin.)

4 lemons;

1 cup of sugar;

5 glasses of water (via siphon) or 1 liter of store-bought highly carbonated water.

Grate the zest of 1 lemon. Squeeze the juice from this lemon and three more.

Put everything in an enamel pan, add sugar. Pour water.

Boil for 10 minutes, remove from heat, strain and cool.

Pass through a siphon (optional).

Serve with lemon slices and ice.

Duchess(4 servings)


(The pear carbonated drink “Duchess” was an excellent substitute for sweets and cakes for Soviet children. Pear infusion was added to the usual lemonade base, and the picture was completed with lemons, sugar and carbon dioxide bubbles. Both children and adults adored this soda. After all, the aromatic, sweet pear lemonade “Duchess” perfectly quenched your thirst.)

4 pears;

2 lemons;

8 tsp. Sahara;

800 ml soda or just sparkling water.

Squeeze the juice from the pear and lemon, then stir. Add sugar diluted with a small amount of water.

Add sparkling water, stir and let it brew for a while.

Pinocchio(20 servings)


(The most famous Soviet soda. The childhood of almost every person born in the Soviet Union is connected with Buratino. It was prepared very simply: water, sugar, lemons and oranges. Everything is natural, which is probably why it’s so tasty.

The bottle had a label with a picture of Buratino, and the cost of the drink was 10 kopecks “excluding the cost of tableware,” as they liked to write on Soviet bottles.)

2 lemons;

2 oranges;

2 liters of water;

2 liters of soda;

½ cup sugar.

Squeeze juice from lemons and oranges. Strain it.

Place sugar in a small bowl, moisten it with a few tablespoons of water, stir, put on heat and bring to a boil.

Cook over low heat until the sugar turns light brown.

Add juice and water to sugar. Stir.

Pour halfway into glasses filled with ice. Top up the second half with soda.

Can be passed through a siphon. Then add another 2 liters of water to the lemonade. And carbonate everything in a siphon.

Tarragon(10 servings)


(The recipe for “Tarragon” appeared in the 19th century. It was invented by the pharmacist Mitrofan Lagidze, who lived in Tiflis (modern Tbilisi). He was the first to think of adding the extract of the famous Caucasian plant tarragon (tarragon) to sweetened sparkling water.

The drink appeared in mass production in 1981. And starting in 1983, “Tarragon” began to be produced and sold in many republics of the former USSR. The drink was made from water, citric acid, sugar and tarragon extract.)

1 bunch of fresh tarragon;

2 lemons;

2 limes;

1 cup of sugar;

In the kitchen of any housewife there will always be ingredients with which you can prepare our favorite drink. First you need to remember what carbon dioxide is released from. This will happen if lemon juice or vinegar is dropped onto baking soda. Let's get an idea of ​​how to make soda at home. Let's give you two specific examples.

First. We make the drink “Baikal” - our answer to “Coca-Cola”. To get three liters of the drink, we take: St. John's wort, licorice, eleutherococcus, fir needles - only 10 grams each, a glass of sugar and half a lemon. Pour pine needles and herbs for three hours hot water. Then we filter the liquid, boil it, add granulated sugar, cool it, add the juice of half a lemon mixed with soda. Ready!

Second example. In this method, all catalysts are mixed directly in a glass. Make fresh juice from the juicy pear fruit and dissolve sugar in it to taste. Squeeze the juice of a third of a lemon into this mixture. Pour a little soda into a separate glass and pour the juice into it. “Duchess” is ready!

Making sweet soda

Knowing how to make soda at home, you can try to prepare the syrup for it yourself to get a completely natural, homemade product. The first option is “Tarragon”. For it we need: a medium-sized bunch of tarragon, a glass of water and granulated sugar - 2/3 cup.

Wash the tarragon and cut into several pieces. Boil water, put our herb in it and cook over low heat for about 20 minutes. Cool, filter, dissolve the granulated sugar in the broth, and put it back on the fire. While stirring, wait for it to thicken and add lemon juice. The syrup is ready, it can be diluted with sparkling water to taste. In order to get a sweet soda of a different taste, consider another recipe for syrup - “Refreshing” lemonade. Ingredients: sugar - one glass, for caramel taste you can use brown sugar, water - one glass, lemons - 5-6 pieces, cinnamon - half a teaspoon. Mix water and sugar and cook the syrup, cool it. Lemon juice, about one glass, pour into the syrup, mix again and add cinnamon. Let it cool and the syrup is ready; you can dilute it with soda.

For sparkling water, it is recommended to use pressure-resistant bottles, specially designed, including by siphon manufacturers. They have a shelf life of at least three years, sealed lids, and can be of various shapes. It is recommended to buy gas cylinders made of lightweight aluminum. One cylinder is most often enough to prepare at least 60 liters of sparkling water. Request: buy both of these elements as a set.
