This is the perfect recipe for New Year's Eve. It is simply perfect, because it does not require extraordinary efforts (time is always short on New Year's Eve), and the result is excellent - the dish is not only tasty and beautiful, but also "unused" with a rare side dish.

We use pre-washed, dried and peeled products.

  • We mix salt and selected spices (we crush the spices with peas with a rolling pin).
  • The pork pulp is deeply cut into two connected layers.
  • From the outside and from the inside, rub the meat with a spicy mixture and marinate from 3 to 10 hours.
  • Mix honey with 0.5 tbsp. guilt.
  • Dust a piece of marinated pork with flour.
  • Now lubricate the inside and outside with “honey” wine, wrap in cling film and leave for an hour and a half.
  • Cut the garlic into large slices.
  • Roast the nuts and cut them into pieces.
  • Bacon cut into pieces, mix with nuts and sour cream until a thick slurry.
  • Fill the meat cavity with garlic and minced nut.
  • We form a dense meat "log", tying the pulp with twine.
  • Fry the pork in a mixture of butter and vegetable oils until golden brown.

  1. Apricot-Honey Glaze: Blend apricot jam and honey in a blender until smooth.
  2. Place the goose in a large pot of boiling water and boil for half an hour with any spices and a little salt. This will soften the goose and speed up the browning process.
  3. Pat the goose dry with paper towels. It is advisable to place it in the refrigerator to dry overnight. But not necessarily - you can fry right away.
  4. Rub the bird with salt and pepper inside and out.
  5. Push dried fruits and small sour apples into the abdomen (leave the remaining apples and dried fruits at the end of frying).
  6. Place in an oven preheated to 200 degrees.
  7. Pour half a bottle of red wine over and roast the goose, basting with juice from time to time.
  8. After about an hour, put the rest of the fruit in a baking dish and add more wine.
  9. 15 minutes before the end of frying, grease the goose with apricot-honey glaze.

Fried Chicken by Jamie Oliver

Jamie Oliver is one of the most famous chefs and TV presenters in the world. He offered his recipe for oven-baked chicken.

Ingredients (for 8 servings):

  • 2 chickens
  • sea ​​salt and ground black pepper
  • 4 kg potatoes
  • 2 lemons or 3 limes
  • 2 heads of garlic
  • thyme, rosemary
  • olive oil
  1. Season the chicken with salt and black pepper, wrap in cling film and refrigerate.
  2. Cut potatoes into 4 parts. Disassemble the garlic into cloves.
  3. Preheat oven to 190 degrees.
  4. Place potatoes, lemon and garlic in a pot of boiling salted water and cook for 12 minutes.
  5. Drain the water and let the potatoes dry for 1 minute on the fire, shaking the pan. Remove lemon and garlic. Close the pot to keep the potatoes hot.
  6. While the lemon is hot, pierce it about 10 times. Remove chicken from refrigerator, pat dry with paper towels and rub with olive oil.
  7. Put the lemon, garlic and thyme into the chicken, then place it in a deep pan and cook in the preheated oven for 45 minutes.
  8. Transfer the chicken to a plate. Place potatoes with rosemary leaves on a baking sheet and toss to combine. Make a well in the center and mark the chicken there. Cook for 45 more minutes or until chicken is cooked through and potatoes are browned.
  9. When the chicken is ready, remove the lemon and garlic. Peel the garlic, mash and rub the chicken with it, remove the rosemary leaves.

Ham with honey and mustard

Pork prepared in this way is a real homemade ham that can be served cold as an appetizer or hot with a side dish of vegetables and mustard sauce.

Ingredients (for 8 servings):

  • 5–5.5 kg pork leg
  • 2-2.5 heads of onions
  • 2 carrots
  • 2.5 egg yolks
  • 2.5 st. l. honey
  • 1.5 st. l. espresso
  • 6.5 st. l. Dijon mustard
  • cloves and salt to taste
  1. Put the ham overnight in a large pot of salted water (150 g per 4 liters of water).
  2. Preheat the oven to 120-150 degrees. Peel the bulbs and stick a few cloves in each. Put the ham in a mold, place the onion and a whole peeled carrot next to it.
  3. Pour in enough water to cover the vegetables. Bake at 120 degrees for about 2 hours. Or, if you have a cooking thermometer, until the temperature inside the meat reaches 75 degrees. Remove from oven and cool.
  4. Separate the whites from the yolks. Whisk the yolks with honey, chilled espresso and mustard. Increase the temperature in the oven to 230 degrees. Transfer the ham from the broth to a baking sheet with a wire rack, cover the ham with glaze.

    1. Remove the eggs, butter and milk from the refrigerator in advance so that they warm up.
    2. Mix flour, baking powder, spices and salt. In another bowl, beat sugar and butter, add eggs, honey, milk and soda, mix.
    3. Mix both mixtures until smooth. Add dried cranberries to taste.
    4. Grease a cake pan with butter and sprinkle with flour. Pour the dough and send it to the oven preheated to 180 degrees for 40-45 minutes.
    5. The finished cake can be poured with icing: to 3-4 tbsp. l. powdered sugar, add a few drops of lemon juice and mix. The mass should be thick and opaque.
