Inspired by American chocolate turtle cakes. The cake is unusual in preparation, but very simple. The most tender juicy biscuit, which does not require impregnation, and soft caramel. This cake can be eaten immediately after cooking!

Cake “Heart”

Compound:

glass – 250 ml
2 heart shapes – Ø 20-22 cm with high sides

For the chocolate sponge cake:

  • 2 cups flour (sifted)
  • 0.5 cups cocoa
  • 1.5 -2 cups (to taste) sugar
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons soda
  • a pinch of salt
  • vanillin (or vanilla sugar)
  • 1 cup sour cream (15-20%)
  • 0.5 cups vegetable oil
  • 1 teaspoon apple cider vinegar
  • 1 glass of water (hot)

For caramel:

  • 400 g (1 can) condensed milk
  • ¾ cup walnuts(finely chopped)
  • 110 g butter
  • 1 cup sugar (preferably brown)

For the glaze:

  • 200 g dark chocolate (break)
  • 150 g cream
  • 1 tbsp. spoon (without slide) cocoa
  • 40 g butter
  • ¼ cup (or to taste) sugar

How to make a heart-shaped cake:

  1. Preparing caramel. Place condensed milk, nuts, butter, sugar in a frying pan and place over medium heat. Stir occasionally. To achieve homogeneity of the mass, there is no need to boil, because the caramel will cook in the oven.

  2. Line two tall heart-shaped molds (since the sponge cake rises a lot during baking) with baking paper and pour caramel into them. Baking paper must be good quality so that the caramel does not stick to it after baking.

    If you don’t have two forms, then take a baking sheet with high sides, and then cut the cake into two parts (you can first cut the sponge cake in the shape of a heart). It is undesirable and inconvenient to bake the cakes one at a time.

  3. Prepare the dough. Pour flour, sugar, cocoa, soda, baking powder, salt and a pinch of vanillin into a bowl. Stir and pour sour cream, oil, vinegar and hot water. Mix with a whisk or spoon so that there are no lumps. The dough turns out runny.

  4. Pour the batter into both molds on top of the cooled caramel.

  5. We bake cake layers for the “Heart” cake. Place the molds with the dough in the oven preheated to 170-180 °C and bake for about 30-40 minutes (check the readiness of the biscuits with a match).

  6. Remove the finished heart cakes from the oven and leave to cool for 10 minutes so that the caramel sets. Then overturn the molds and remove the cakes without waiting for them to cool completely so that the caramel can easily separate from the paper. If any of it sticks, carefully remove and place on the crust.

  7. Preparing the glaze. While the cakes are cooling, combine the frosting ingredients in a small saucepan over medium heat and bring to a boil until the sugar dissolves. Cool until thickened and warm. (You can also decorate with this glaze.)

  8. Assembling the “Heart” cake. Apply a little less than half chocolate glaze onto the first cake layer directly onto the caramel. In the same way, place the second heart-shaped cake on top, caramel side up, and apply the remaining icing on it, as well as on the sides of the cake. Decorate with nuts as shown in the photo. The heart-shaped cake turns out tall, although it does not have cream.

As a base for the cake, I took a recipe for a very tasty chocolate honey cake with Nutella custard from Marie's Recipes website. I just divided the ingredients in half and made the cream a little differently. Thank you, Marinochka, for delicious recipe!!!

Ingredients:

Dough for honey cake:

  • 3 eggs;
  • half a glass of sugar;
  • 1.5 tablespoons of honey;
  • 50 g butter;
  • 3 tablespoons cocoa;
  • 1 teaspoon of soda (quench with the same amount of vinegar);
  • 3 cups flour.

For the custard:

  • 1 egg;
  • 1 cup of sugar;
  • half a glass of flour;
  • half a liter of milk;
  • half a stick of butter (100g).

How to bake:

Prepare the dough: in a non-stick saucepan, combine sugar, soft (but not melted!) butter, eggs, honey, cocoa, soda and vinegar, mix everything and, continuing to stir, heat over low heat until the butter and sugar melt.

After removing from the stove, gradually add flour and knead the dough - first in a saucepan, then on a table sprinkled with flour.

The resulting lump soft dough Divide into 7-8 parts, roll into balls, dust with a little flour and keep in a bowl covered with a towel.

Take out one at a time and roll out thinly on a floured table. Having wound it on the rocking chair, we transfer it to the lubricated vegetable oil baking sheet and place in a preheated oven. Thin honey cakes bake instantly, the first one takes a little longer until the oven “heats up”, and the second and subsequent ones take about 5 minutes. So while one is baking, roll out the second one!

How to make a heart-shaped cake without a mold:

Now comes the fun part. Using a spatula, place the finished, hot cake from the baking sheet onto the table and cut it out according to the template right there while it’s still warm! As soon as it starts to cool, it becomes brittle! As a template I used the bottom from split form, but you can just cut out a heart from cardboard.

How to make custard for honey cake:

Mix sugar, flour, egg, gradually pour in milk, set on small fire and cook until thickened, stirring all the time so that lumps do not form.
When the cream has cooled, add half a pack soft butter and beat with a mixer.

  • Vanillin – 1.5 sachets.
  • Red food coloring – 1 sachet.

Ingredients for cream:

  • Curd cheese – 450 gr.
  • Cream – 300ml. (30% and above).
  • Vanillin – 1 sachet.
  • Powdered sugar – 80-100 gr.

Preparation of the base:

  1. Set the oven to preheat at 180 degrees. Grease a mold (heart-shaped or whatever you have) with butter and lightly sprinkle with flour.
  2. Beat butter and sugar until white. Add eggs and vanilla and continue beating until smooth.
  3. Pour kefir into another bowl and dilute the dye in it.
  4. Continuing to beat, pour kefir into the egg-oil mixture.
  5. In another bowl, sift the flour, cocoa powder and baking powder, add salt and mix.
  6. Add the dry mixture to the liquid mixture and mix until smooth.
  7. Pour the finished dough into the mold and place in the oven for 40-45 minutes. Or, divide the dough into 2-3 parts and bake several cakes in turn, then the baking time will be 25-30 minutes.
  8. 5 minutes before the end of the cooking time, check the readiness of the base with a match or toothpick.
  9. Cool the finished cake(s). If your shape is not a heart, carefully trim it to make a heart. Set aside the trimmings - we will need them.

Preparation of cream:

  1. Mix cottage cheese, cream and vanilla in a mixing bowl.
  2. Beat them with a mixer until fluffy, adding powdered sugar taste.

Design and decoration:

  1. Coat the cakes with cream. Sprinkle the biscuit scraps ground into crumbs on top, or decorate to your liking.

  • Sugar – 180 gr.
  • Flour – 250 gr.

  • Condensed milk – 1 can (boiled).
  • Cream – 150ml. (15-20%).
  • Chocolate – 100 gr.

Preparation of the base:

  1. Set the oven to preheat at 190 degrees. Grease the baking dish with butter and lightly sprinkle with flour.
  2. Separate the yolks and whites. Beat the yolks with sugar, gradually add cocoa powder.
  3. The next step is to add the sifted flour and baking powder.
  4. In a separate bowl, beat the whites until stiff, then add them to the yolk mixture and mix gently.
  5. Pour the dough into the mold as in the previous recipe and place in the oven for 30 minutes.
  6. We take out the finished cakes, cool them and cut them into the shape of a heart.

Preparation of cream:

  1. Heat the cream and broken chocolate until it dissolves. Stirring constantly, boil down a little, then remove from heat and cool.
  2. Add boiled condensed milk and beat with a mixer until smooth.
  3. Cover the cakes with cream and decorate as desired.

  • 120 grams of heavy cream;
  • A pinch of vanilla extract;
  • Two tablespoons of sugar;
  • Half a spoon of cocoa powder;

For the ganache:

  • 230 grams of chocolate (break into small pieces);
  • 180 grams of heavy cream;
  • Two tablespoons of butter;
  • A tablespoon of cognac (optional);

For decoration:

  • Raspberries;
  • Raspberry sauce;

Preheat the oven to 180 degrees. Grease the mold with butter and sprinkle with flour. To prepare the dough, add egg whites to the whites and cover with film, bring to room temperature. Then mix all the dry ingredients and set aside. Beat butter, water and vanilla. In a mixer, beat the yolks and slowly pour the butter mixture into the yolks. Gradually add the dry mixture without ceasing to beat. Now beat the whites until foamy, add vanilla and beat a little more, add sugar and add to the main dough.

Bake a heart-shaped cake according to this recipe for 45 minutes. Then cool the cake and start preparing the cream. Combine cream, vanilla extract and cocoa, add sugar. Beat everything with a mixer, then cover with a lid and put in the refrigerator for half an hour. Beat again. When the cake has cooled, cut it into two layers.

Place the top layer of the cake down, spread the cream on it and place the second layer on top, pressing lightly. Spread with remaining cream and cover with plastic wrap. Place in the refrigerator for two hours. To prepare the ganache, bring the cream to a boil and then pour it over the chocolate pieces. Stir with a whisk, adding brandy. Pour ganache into the center of the settled cake and spread throughout the cake. Cool again before serving and garnish with fresh raspberries or raspberry sauce.
