Cooking steps

Soak white bread in water and let it soften, then squeeze out the liquid and grind it in a meat grinder. You can prepare the minced meat for these cutlets yourself by passing a piece of meat through a meat grinder. Pass the peeled onion through a meat grinder and add to the twisted bread and minced meat.

Add salt and pepper to the resulting mass, mix and the minced meat is ready.

To prepare the filling for the cutlets, grate the melted cheese and butter, add finely chopped herbs, and stir.

Place a small amount of filling on a minced flatbread (as in the photo) and form a cutlet. We form all the cutlets in the same way.

Soak the bread or roll in milk (or warm water). Squeeze and mix with minced meat.

Cut the cheese into small pieces.

Form a flat cake from the minced meat. Place cheese in its center (depending on the size of the pieces, 1 or more).

Form a cutlet.

Soak the loaf slices in water or milk. After 5 minutes, squeeze out the liquid from the loaf and mash it into crumbs with your hands. Add it to the minced meat.

Peel the onion and grate it on a fine grater. Add it to the minced meat.

Mix the minced meat well with your hands. Add spices and salt and knead again until smooth.

Lightly grease the baking dish with sunflower oil. This is necessary so that the cutlets do not stick. This is especially true for tin forms. Shape into the desired shape - round or oval. This time I decided to make them oval. To prevent the minced meat from sticking to your hands during modeling, your hands must be moistened with cold water. First of all, we decide on the base for any cutlets - meat. Pork, beef, turkey and even chicken (or a mixture of two or three types of meat) will do. I had a piece of pork weighing 800 g, from which I prepared minced meat.

Place the minced meat in a large container in which further preparations will take place.


Soak about a fifth of the white loaf in milk. We do it this way: Place a whole piece of loaf in a deep plate or break it into smaller pieces. Then add half a glass of milk to the plate and wait 5 minutes. During this time, the loaf will absorb all the milk and soften.


Peel the onion and chop it very finely or chop it in a blender. The finer you chop the onion, the tastier the cutlets will be.


Add the softened piece of loaf, onion, salt and pepper to the bowl with the minced meat.


Mix the minced meat thoroughly with your hands and leave it in the refrigerator for 10-15 minutes. Thanks to this standing, the minced meat becomes more sticky and it will be easier to make cutlets.


Meanwhile, prepare the cheese. Any hard cheese (piece weight approximately 100-120-150 g) is cut into cubes or grated on a coarse grater, as is more convenient for you.


We take the minced meat out of the refrigerator. Pour breadcrumbs into a separate deep plate. Using a spoon, scoop up a portion of minced meat, which we place in a plate with breadcrumbs.


Using your hand, flatten the minced meat into a flat cake, in the center of which we place a portion of cheese.


All that remains is to carefully take the tortilla with cheese in your palm and seal the edges. Then roll the cutlet blank in breadcrumbs on all sides and place it on the prepared board.


The board is full of still raw cutlets with cheese filling. The last three patties with dents are the ones that didn't have enough cheese. I designated them this way for myself.


Well, let's proceed to the last stage of preparing cutlets stuffed with cheese - frying.
