Cut the meat into large pieces, pass the third part through a meat grinder 2 times or grind using a blender. Mix the meat with minced meat, add the remaining ingredients. Place in the refrigerator to marinate for 3 hours. You can leave it overnight, or you can put it through a marinator (2 cycles).

For a milk or juice box with a foil-lined inner layer, carefully cut off the top sealed seam. Cut the baking sleeve the length of the box, leaving allowances for tying the ends. We tie one end of the sleeve and insert it into the box. The sleeve width is much larger than the box, but that's not a big deal. Preparation:

  1. To prepare this ham we use exotic meat. But in absolutely the same way, pork ham is prepared in a ham maker in the oven. You can add beef tenderloin for variety.
  2. We start by preparing the necessary products. Remember that only chilled meat is suitable for cooking ham.
  3. We thoroughly wash the meat components and dry them.
  4. Cut one type of meat into small pieces. In this form we will add it to the ham.
  5. The second type of meat, in our case it is elk fillet, is washed, dried and cut into portions.
  6. Grind the elk meat in a meat grinder until it reaches the consistency of minced meat. To make the mass more homogeneous, you can grind it two or three times.
  7. Wash the peeled sweet bell peppers and cut the pulp into small cubes.
  8. We peel the carrot root, wash it thoroughly and cut it into cubes.


  9. Add gelatin. We do not dilute the thickener with water.
  10. We also add semolina, salt and a mixture of ground peppers.
  11. Mix everything actively until a mass of homogeneous consistency is obtained.
  12. Cover the ham pan with a baking sleeve.
  13. Transfer the prepared mass into the ham dish and compact it.
  14. Close the ham maker and place it in a fireproof dish.
  15. Fill the form with water. Add about ½ cup.
  16. We will bake in the oven for an hour and a half at a temperature of 180°.
  17. Leave the ham to harden. And then we place it in the refrigerator for another day until it hardens.

  3. Place the beef offal into a saucepan, add water and boil until done for 2.5 hours.
  4. About half an hour before the end of cooking the beef offal, add the peeled carrot root, onion, bay leaf and allspice peas to the broth.
  5. Fill the tongue with chilled water and carefully remove the skin. Cut the boiled tongue into cubes.
  6. Wash the cooled turkey fillet, dry it and grind it in a meat grinder to the consistency of minced meat.
  7. Add ground nutmeg and whole milk powder to the minced meat.
  8. Mix all ingredients thoroughly, add salt and a mixture of ground peppers.
  9. Combine the minced meat with the boiled tongue, knead until a mass of homogeneous consistency is obtained.
  10. Transfer the mixture into the sleeve and then into the ham pan.
  11. Place the ham in the oven for an hour and a half.
  12. Cool the cooked ham and leave it in the refrigerator for several hours.

4. Make 1-2 holes with a thin needle, put the ham in a baking dish and put it in the oven.

Recipe 2: Homemade chicken and pork ham with olives

A festive recipe for homemade pork and chicken ham with a very rich composition. The product is very aromatic, and the olives add a piquant flavor.

Ingredients

800 grams of chicken fillet;

600 grams of pork;

150 grams of cheese;

1 onion;

Salt pepper;

2 tablespoons of mayonnaise;

A little dry greens.

Preparation

1. Cut the chicken into pieces and place in a bowl.

2. Add chopped onion, mayonnaise and herbs. Salt and leave to marinate for half an hour.

Recipe 3: Puff pastry from chicken and pork at home

Ingredients

400 grams of pork;

400 grams of chicken;

15 grams of gelatin.

Preparation

7. Cover the mold with a piece of foil on top and bake for 80 minutes at 200 degrees.

8. Remove from the oven and, without removing the foil, place pressure on top. You can simply lower the foil onto the meat itself and place a pack of salt on it.

9. Cool to room temperature, and then put it in the refrigerator in this form. It is better to let it sit overnight so that the ham can harden well.

A very interesting way to prepare ham, for which you will need an empty juice pack of at least a liter. You can also take a milk carton.

6. Place the structure in a saucepan, pour in water and cook the ham after boiling for 1 hour and 40 minutes.

7. Cool, put in the refrigerator and wait for it to harden.

Recipe 5: Marbled ham from chicken and pork at home

Detailed technology for making the famous marbled ham at home. It can be prepared not only from chicken and pork, but also from any other meat. And to make the finished product truly marbled, we use bright spices: paprika, curry, herbs.

400 grams of pork;

5. Add dry gelatin, add salt and stir. Cover the bowl and put it in the refrigerator to marinate for 10 hours.

6. Take it out, mix it again and put it in the ham maker. Or we form a log (rectangle) in any other way.

7. Bake in the oven for at least two hours. If you use a ham maker, don’t forget to add a little water to the pan. If the ham is baked in a sleeve, then you can periodically turn it over to the other side.

8. Then cool and leave in the refrigerator for at least 5 hours before removing from the mold.

Homemade chicken and pork ham - useful tips and tricks

Ham really likes heat. But besides pepper, you can also add mustard to it. Just one spoon added to the minced meat will make it much more aromatic and tastier.

Homemade sausages are never prepared from fresh meat; the pieces must be well cooled. And if you need to prepare chopped mass, it is better to freeze it a little. It will be easier to cut, and the pieces will turn out neater.

  3. Divide the pork neck into two equal pieces. We cut one of them into cubes, and from the second we make very fine minced meat. To do this, you can use a meat grinder or blender: grind the fillet to a paste. We need minced meat to bind the pieces of meat together.
  4. Pour the chopped meat and chopped minced meat into a deep container.
  5. Pour peppercorns into a mortar (I use both black and allspice), crush them thoroughly, and add to the meat.
