How to make a cupcake with curdled milk - recipe with photos step by step with jam

First you need to measure out the required amount of all the required ingredients.

Eggs should be broken into a deep container. Add granulated sugar to them.

Beat the mixture with a mixer. The volume of the mass should increase significantly. Approximately 1.5-2 times. At the same time, the egg mixture brightens greatly when beaten.

Heat the curdled milk and pour into the beaten eggs. Stir well.

Add sifted flour. Beat again with a mixer or thoroughly stir the flour with a silicone spatula.

Add blackcurrant jam to the dough. You should only take the thick part of the jam. An excessive amount of liquid in the dough will be unnecessary, because in this case the cake will not bake.

Mix. The pie dough should be quite thick and viscous.

During my school days, we called this cupcake "Student" (or "Student"). Because it is easy and simple to prepare. Its preparation requires simple and affordable products, the most important thing is kefir and jam.

And how to cook it, my sister’s classmate showed me for the first time when we came to visit her.

She quickly mixed everything on the kitchen table, dumped the mass onto a rectangular baking sheet, put it in the oven - and an hour later we were enjoying an unusual (in appearance), but very tasty cupcake.

Many years later, I remembered this recipe to show it to you.

I no longer used a rectangular iron baking tray (as in childhood), but a round and silicone one (very modern). Then the cupcake will benefit not only in taste, but also in appearance (see for yourself in the photo below).

The recipe is really simple.

We will need:

  • 3 eggs,
  • 1 cup granulated sugar,
  • 1 glass of kefir,
  • 3 tablespoons jam (blackcurrant or cherry without seeds),
  • 2.5 cups flour,
  • 3 tablespoons vegetable oil,
  • 1 packet of baking powder,
  • salt on the tip of a knife (many housewives don’t put salt in their muffins, but I do because I think it tastes better this way).

Break 3 eggs into a bowl:

Add salt on the tip of a knife and 1 cup of sugar:

I stir a little and add 1 glass of kefir and 3 tablespoons (heaped) of jam:

I added blackcurrant jam because I have a lot of it. My mother cooks it for us almost every year - it is very tasty and healthy. But I especially love adding it to cake because it gives it an amazing sourness.

And kefir, in turn, will also prevent us from getting fed up with excess sweets (it also adds natural acid to the taste).

Mix kefir and jam with a mixture of eggs and sugar:

The mass acquires a beautiful lilac color with veins (it’s a pity, the photo turned out not quite clear).

Then I add 2.5 cups of flour:

I'll sprinkle 1 packet of baking powder on top of the flour mound (they say it needs to be added specifically to the flour).

I had already started kneading the dough, but then I remembered that I still needed to add 3 tablespoons of vegetable oil:

Well, that's it. Now you can calmly stir everything.

I kneaded the dough with a regular spoon (without a broom, without a mixer) - where did the students get a mixer?

In principle, it was not difficult. And we got such a beautiful cake mixture:

The whole process took 5-10 minutes.

Now you can pour it into the mold (I pre-coated the walls of the mold with vegetable oil - just in case):

And we send our still raw and liquid cake to the oven.

We will bake it for 50-60 minutes at a temperature of 180 degrees.

And so, after an hour, I take out our hero, a little green on the surface (he somehow reminds me of the face of a very black black man) - probably it’s the kefir foam that gives this tint.

But if you take the cake out of the pan, you'll see how beautiful it really is:

A real royal dish (reminiscent of a royal headdress, right?).

How much does it cost to make a kefir cake with jam?

Let's calculate how much the student kefir cake cost us.

3 eggs cost about 15 rubles
1 glass of sugar - 6 rubles
1 glass of kefir - 8 rubles
3 tablespoons of jam - 25 rubles (if you buy it; making your own jam, of course, will cost less, no more than 10 rubles)
2.5 cups of flour (about 400 g by weight) - 10 rubles
baking powder for dough - 16 rubles (if you want to reduce the cost of this indicator, then instead of baking powder you can use 1 teaspoon of soda, slaked with vinegar - then it will cost you no more than one ruble)
3 tablespoons of vegetable oil (60 grams) cost approximately 5 rubles

In total, preparing a student cake with kefir will cost you a maximum of 85 rubles, a minimum (if you use your own jam and soda instead of baking powder) - 55 rubles.

And considering that it turns out to be quite weighty (I got it weighing 1 kilogram 90 grams) - this is not only tasty, but also economical baking.

I treated my mom and dad to my cupcake, my husband ate it, my youngest daughter has been eating it for two days now - and it’s not finished yet.

This is the kind of food I really respect - which is easy and quick to prepare, which comes out cheap, and which you can eat for a long, long time.

After my daughter said she really liked this cupcake, I knew what to make her when she finished eating it - another one just like it.

Calorie content of kefir cake with jam

3 eggs provide 300 kilocalories
1 glass of sugar - 200 g - 800 kcal
1 glass of kefir - 125 kcal
3 tablespoons jam - 90 g - 256 kcal
2.5 cups of flour (approximately 400 g by weight) - 1368 kcal
3 tablespoons of vegetable oil (60 grams) - 540 kcal

The total is 3389 kilocalories per 1 kilogram of cake (calorie content approximately 339 kcal per 100 g).

That is, it is better not to eat more than 150 grams of cupcake in one sitting (because this will already give 508 kilocalories, and this is already one fifth or one sixth of our daily calorie intake).

  • About one and a half cups of flour.

  • A couple of glasses of wheat flour.
  • Two thirds of a glass of sugar.
  • Half a teaspoon of soda.
  • Two hundred milliliters of kefir.
  • A teaspoon of baking powder.
  • Half a glass of vegetable oil and any jam.

Process description

Beat eggs with sugar and combine with kefir. Mix everything well. Then add vegetable oil to the resulting mass and beat again with a mixer. After this, sifted wheat flour, baking powder and soda are poured into the same container. Mix everything thoroughly until a homogeneous creamy mass is obtained.

Add any jam to the almost ready slightly liquid dough and beat again using a mixer operating at medium speed. The resulting mass is poured into a mold greased with any vegetable oil and sent to the oven. The product is baked at one hundred and eighty degrees for about forty-five minutes. If you have a round shape at your disposal, then the time in the oven must be increased to one hour. Check readiness with a toothpick. Without asking, take a glass of jam without seeds (and if you are especially gifted with teeth, you can have seeds), and add a teaspoon of baking soda to it.

The amount of flour depends on the liquid mixture to which it is added. If the jam is very liquid, and even 1% or low-fat kefir, then more flour will be needed (2.5 cups).

Mix everything thoroughly until a homogeneous mass is obtained.

In this case, the incomprehensibly unpleasant color of the dough is caused by the blackcurrant jam used.

Carefully pour the finished mixture into the container.

If you can’t do this carefully due to the high coefficient of hand curvature, then I recommend downloading utilities that alleviate suffering.

Place the device filled with “meaning” in a preheated oven over medium (or slightly less) heat. Since I couldn’t even find a temperature-measuring program for a stove from the Karpaty vendor even in Yandex, I can’t indicate the required number of degrees. We're waiting... about 35-45 minutes.

Necessary and sufficient criteria for readiness are: the edges of the product lag behind the sides of the device and the absence of sticky dough on the tines of the fork when trying to pierce the middle.

After tipping (not to take it literally) the finished cake from the frying pan onto the board, it needs to be allowed to cool.

Cut the cake in half as follows:

We make cream, in our case we used a glass of sour cream and 2 tbsp. spoons of sugar.

Spread 1-2 tbsp onto the bottom of a suitable sized dish. spoons of cream...

And lay out both halves of the cake, coating them with a sufficient amount of cream.

Place jam or jam in a bowl. Add baking soda dissolved in vinegar and stir. The mixture will increase in volume and change color.

In another bowl, beat eggs with sugar until light and fluffy. Pour in vegetable oil, kefir and continue beating.

Add sifted flour and cocoa. Beat until smooth.

Combine both mixtures, that is, dough and jam with soda.

Mix the resulting dough thoroughly; the consistency will resemble thick sour cream.

Bake for approximately 45 minutes. Baking time may vary depending on the height of the pan, so you should check the readiness of the jam cake with a wooden stick. Remove the finished cake from the oven and cool slightly.

If desired, a cupcake with jam baked in the oven can be topped with chocolate glaze and decorated. A very tasty, soft cake served with tea or milk.
