How to cook chicken fillet with vegetables in the oven

The most basic step in baking is preparing the vegetables for baking. Wash all products thoroughly, clean them, cut out the stalks and remove the seeds from the pepper. Separate the cauliflower into individual balls. Vegetables: cut onions, carrots, pumpkin, peppers into small pieces, as in the photo.

Cut the eggplants into cubes along with the peel.

Although the recipe is vegetable, adding chicken fillet will give the dish richness, a special taste and a pleasant chicken aroma. Therefore, we will use chicken fillet, which we cut into pieces.

Mix all the vegetables with, add salt, ground black pepper and pour over vegetable oil.

Prepare in a mold greased with vegetable oil. Place the vegetables in a baking tray and cover the top with foil instead of a lid.

Chicken fillet with vegetables is cooked in the oven for about an hour at 200°C. At the end of baking, remove the foil and keep the dish in the oven for another 5-7 minutes to form a tasty crust. This is what the finished baked vegetables look like in the photo.

You can bake meat with vegetables, this will allow it to be saturated with vegetable juice and the aroma of spices and herbs, which will make the dish juicier and softer. It is important to monitor the temperature and baking time - no longer than 45 minutes and no higher than 250 C, otherwise the fillet and vegetables may dry out. That's all, nothing complicated. In addition, it is recommended to choose herbs and spices for the dish that complement and reveal the taste. Rosemary, thyme and nutmeg cope well with this task.

Ingredients

Chicken fillet -300-400 g
- medium-sized tomatoes – 2-3 pcs.
- fresh zucchini – 300 g
- medium carrots – 1-2 pcs.
- vegetable oil – 1-2 tbsp. spoons
- fresh rosemary – 1-2 sprigs
- salt, pepper and other spices - to taste
- baking sleeve or foil

Oven baked chicken recipe

To begin, rinse the fillet and divide it into small oblong pieces so that the meat is saturated with salt and pepper faster and also cooks faster.

Salt the wiped and cut pieces of fillet with a napkin, season with black pepper through a mill, mix, while lightly massaging the meat. Tear a sprig of rosemary on top of the fillet and leave for 25-30 minutes. You can also marinate meat in balsamic, honey, sour cream, etc.


For baked chicken fillet we need a dietary side dish. For us it will be zucchini, tomato and carrots. Naturally, depending on the season and personal preferences, you can choose other vegetables for baking.


Wash the vegetables, wipe them, cut them into relatively large slices/pieces/circles, add very little salt, and carefully distribute the salt over all the slices.

Tie one end of the baking sleeve, place the fillet with rosemary, and then the vegetables, lightly covering the sides of the meat. Sprinkle the workpiece with oil.


Tie the other end of the sleeve, leaving free space inside for the bag to “grow.” Place the diet fillet with vegetables in the oven (be sure to preheat it well). Bake for 40-45 minutes at 250 C.
