It can easily be called vegan. Why not? Both vegan and lenten dishes are those that do not contain animal products. That is, no meat, fish, eggs, dairy products, or animal fats.

Don't be alarmed, the cheese will not be of animal origin, it's just tofu. Moreover, smoked. It's wildly delicious, believe me! Also tomatoes, chickpeas, avocados. This one is a real treat.

For lean Chinese cabbage salad you need:

  • 1 cup chickpeas;
  • 3 small tomatoes;
  • 1 fresh cucumber;
  • 1 avocado;
  • 100 grams of tofu;
  • 60 ml olive oil;
  • 30 ml lemon juice;
  • 3 grams of asafoetida;
  • 10 grams of chopped fresh dill;
  • 2-3 leaves of Chinese cabbage.

Chinese cabbage salad with butter:

  1. The chickpeas need to be boiled. Rinse the beans in advance and soak them in water for four hours.
  2. After four hours, drain the water and transfer the chickpeas to a saucepan to cook.
  3. Pour water over the chickpeas and place on the stove.
  4. As soon as the water boils, you need to remove the foam from the surface of the water.
  5. Cook the beans for 40 minutes, covered.
  6. After forty minutes, drain the water. Chickpeas are ready to eat.
  7. Wash the tomatoes, dry them and cut out the stems. Cut them into slices.
  8. Wash the avocado and cut it in half along the pit. Roll the halves of the fruit against each other.
  9. Separate the halves and remove the pit by prying it with the tip of a sharp knife.
  10. Next, remove the skin from the avocado. It will be as simple as with an orange, if the fruit is perfectly ripe and has not become overripe.
  11. If that doesn’t work, use a vegetable peeler.
  12. Wash the cucumbers, rid them of their “butts”. Cut both cucumbers and avocados into slices.
  13. Cut the cheese into cubes.
  14. Wash the cabbage leaves and finely chop them.
  15. In a salad bowl, combine avocado, tomatoes, chickpeas, cabbage leaves and cucumbers. Add tofu there.
  16. For dressing, combine oil, citrus juice, asafoetida and dill. Season with salt and pepper.
  17. Pour dressing over salad ingredients and mix well. The salad is ready to serve!

Important: among lean (vegan) cheeses, this can also be cheddar, mozzarella, feta cheese. But, as you understand, this is not ordinary cheese, namely without ingredients of animal origin.

Recipe 3: Delicious Chinese Cabbage Salad

In order for a salad to be dietary, it must contain only fresh ingredients. These are Chinese cabbage and tomatoes.

To make a salad with Chinese cabbage and mussels, a recipe with a photo of the preparation of which is offered, I put pickled mussels in it. Since the mussels are marinated and already salted, I don’t put salt in the salad itself. It is worth noting the high value of such a product as mussels. Their meat contains valuable protein, and there is no fat in them. Thus, having prepared and eaten a salad of mussels, Chinese cabbage and tomatoes, you will have a hearty lunch and will be able to do whatever you want until the evening: walk, work, relax. This salad does not weigh down the body and stomach, but at the same time fills you with strength and energy. This salad has few calories, so it can safely be called dietary. Low-calorie salads will help you watch your figure and be in great shape without starving yourself.

  • 1/3 head of Chinese cabbage;
  • 200 grams of tomato;
  • 150 grams of marinated mussels;
  • 30-40 grams of mayonnaise.

I cut tender, fresh cabbage thinly using a sharp knife. Peking cabbage is very easy to chop, because its leaves are very soft and not hard.

I cut fresh tomatoes into large slices. There is no point in cutting the tomatoes finely, otherwise they will release a lot of juice in the salad and a puddle may form at the bottom of the plate.

I add tomatoes to the cabbage and start assembling the salad.

I drain the marinade from the pickled mussels and put the shellfish in the salad.

I pour a small amount of mayonnaise over the salad and mix lightly using a couple of spoons or forks. I don’t crush the salad so that it retains its fluffy shape. The less mayonnaise you add, the better. But you shouldn’t completely exclude this sauce from the salad. The taste will not be the same. You always need to know when to stop. One or two spoons of mayonnaise for a large portion of salad will not harm you.

Immediately transfer the prepared salad onto a plate. I spread it in a heap.

Sprinkle with any herbs and lunch is ready!

I serve a salad with Chinese cabbage and mussels to the table so that everyone can try a tasty, dietary and unusual appetizer.
