  4. Eggs – 5 pcs.
  5. Apples – 3 large

Ingredients optional: *I used raisins and vanilla

  1. Citric acid – 1/2 tsp.
  2. Raisins - a handful
  3. Vanilla - to taste

A small digression:

*Jam can be added in any part relative to sugar up to a glass. For me, a glass of jam is too much, but 3-4 tbsp. spoons are the best option.

**In its finished form, due to the jam, the charlotte turns out to have a slightly different crumb. Not as airy as the classic one, but still very soft. It just crumbles and wrinkles less :) Well, the color “changes” depending on the jam :)

***A glass of sugar is NOT EQUAL in weight to a glass of flour, so I write in grams.

****If you If you don’t add enough sugar, you will have a very obvious thick crust on top(that means a lot of eggs for this amount of sugar), if If you pour sugar, you will have a delicious crumbling crust on top, which after a day or two, if you haven’t had time to eat it, becomes soft) In all cases, charlotte is edible, of course :)

*****I have standard eggs, if you have small or large homemade eggs, then the amount of flour and sugar may differ from the recipe. (well, this is in very extreme cases, if you have domestic eggs or very small ones)

Preparation:

  1. Grease the mold with butter, pour boiling water over the raisins, cut the apples into squares/slices/triangles
  2. Beat eggs + sugar (+ vanilla + citric acid) so that it rises 3 times! At this stage, we monitor the kneading, if the proportions are correct, then the dough rises instantly, it takes 2-3 minutes to beat, the dough becomes like foam!
  3. Add flour, mix our foam with flour
  4. Add jam
  5. Beat well again
  6. Add apples and raisins and mix *In general, I always put apples on the bottom of the mold and pour the dough on top, but today I baked for the first time in a mold with a hole and decided to mix everything before pouring it into the mold
  7. Oven at 170-180 gr. and bake until nicely crusted. (30 minutes +) Pierce with a toothpick. If it is dry, the charlotte is ready!

Cool and eat! *Of course, my family was guarding the charlotte already in the process of photographing, so they gobbled it up while it was warm :)
