Fried capelin in the oven on foil. Capelin on a baking sheet in the oven: a recipe for baked tender fish. Fried capelin in the oven according to a recipe with photos

Capelin fried in the oven on a baking sheet is a recipe that any housewife must have in her cookbook. The dish is prepared very quickly, simply, and the result: an excellent lunch or dinner of aromatic and tasty fish on the table in just 30 minutes.

Small (and inexpensive) capelin can be easily peeled, has a rich flavor, and goes well with rice, potatoes and fresh vegetables. Fish baked in the oven turns out to be pleasant to the taste: an appetizing golden crispy crust hides juicy tender meat underneath.

Ingredients:

  • one kilogram of fresh frozen capelin;
  • one glass of wheat flour;
  • salt and ground black pepper - to taste;
  • one tablespoon of fish seasoning;
  • 150 milliliters of vegetable oil.

Recipe

  1. Thaw freshly frozen capelin at room temperature, then rinse thoroughly and allow all the liquid to drain. I don’t clean the fish, it’s juicier and tastier this way. But you, if you wish, can cut off the head and take out all the insides: the capelin will be drier.
  2. Pour wheat flour into a bowl, add salt and ground black pepper to taste, and a tablespoon of fish seasoning. Mix everything thoroughly with a spoon.
  3. Cover the baking sheet with foil and grease well with vegetable oil.
  4. Bread each fish in flour with spices and place in one layer on a baking sheet.
  5. Place the baking sheet with the fish in the oven, preheated to 200 degrees, for 20 minutes.
  6. Then we take it out and generously grease the top of each fish with vegetable oil: this way it will turn out more beautiful, with a golden crust.
  7. If you wish, you can sprinkle lemon juice on top: the taste of the fish will be even more original.
  8. Place back in the oven for another 10 minutes.
  9. We transfer the fried fish to a dish and serve it on the table: as an independent appetizer or with a side dish of rice and mashed potatoes.
  10. If you like more satisfying and high-calorie dishes, bake capelin with mayonnaise or sour cream.
  11. Instead of breading in flour, you can use a batter on the eggs.

Cooking steps

    Since we will cook the fish without a side dish, special attention should be paid to the main ingredient. In stores, capelin is sold in several varieties. We need whole fish.

    This miniature fish does not require any cleaning or gutting. In general, there is nothing to clean there. And it will take a lot of time. Many, on the contrary, are very fond of cooked capelin entrails, and caviar in particular. When the fish is defrosted, wash it thoroughly under running water, place it on a clean flat surface, season with salt and pepper and sprinkle with fresh lemon juice.

    For baking, we will need odorless vegetable oil, since we will use a lot of it, and the fish should not absorb the smell of the oil. Pour oil onto a clean, dry baking sheet so that it rises above the bottom of the pan by about 2-3 millimeters.

    Sift the flour into a deep plate. If you don’t want to salt and pepper each fish individually, you can salt and pepper the flour. Dredge the fish on each side in flour.

    Preheat the oven to 200 degrees. Place the fish on the bottom of the baking sheet so that they do not overlap each other. Place in the oven and bake for an hour until done. There is no need to turn the capelin, just check for doneness.

    The finished capelin will acquire a pleasant golden hue and will also smell amazingly delicious. We serve the dish and serve it to the table.

    Capelin baked in the oven is ready.

(First method)

Products:

  • Capelin – 1 kg
  • Salt and pepper are the basis. You can add coriander, ready-made seasoning for fish, lemon juice.
  • Vegetable oil – 1-2 tbsp

Preparation:

Naturally, preparation will be required first. The fish is small, the task is painstaking.

Now step by step. To prevent the fish from becoming bitter, be sure to clean it thoroughly. First, cut off the head, then carefully cut the abdomen and remove the entrails. Remove not only them, but also the black film that is located inside the capelin’s belly. When all the required amount of capelin has been cleaned in this way, without being lazy, rinse each fish separately. If you mess around, you can spoil the taste of the dish with unpleasant bitterness.

While you are preparing, your oven is preheated to 180 degrees.

Salt the fish to taste, add spices as desired.

Place the capelin on a baking sheet, having previously covered it with a silicone mat (if you don’t have it, you can grease it with vegetable oil). Sprinkle the fish with about 1 tbsp. vegetable oil.

Place the baking sheet in the preheated oven on the middle shelf and leave there for 15 minutes.

It cannot be left unattended. Check periodically to make sure it doesn't overcook. When baking capelin, remember that the baked fish should not be too dry.
