Let's prepare it like this:

  3. Place 3-4 tablespoons of the resulting mixture into a separate bowl. Add pre-washed raisins to the remaining portion and mix everything thoroughly.
  4. At the same time, grate the chocolate on a fine grater.
  5. Now the cookies are dipped in milk and placed in the mold where the cake will be placed.
  6. Spread the curd filling evenly over it. Place more cookies, grease again and at the end cover the last layer with the reserved part without raisins.

The main ingredients of a no-bake cottage cheese cake are cottage cheese and cookies. We take any cottage cheese, but preferably dry, so that moisture does not spoil the cream. The best option is store-bought cottage cheese from a pack; it is elastic, smooth, without lumps. If the cottage cheese is homemade, like mine, we will fight the lumps using a blender. And the cottage cheese must be fresh! Any cookies you like will also work. Of course, it is better to take a square or rectangular one, neither thick nor thin, so that you can easily form a cake and soak the cookies without problems. I use Lyubyatovo “Baked Milk” cookies; although they are thick, they are very soft and absorb moisture very well.

In addition to cottage cheese, we will need sour cream, sugar and butter for the cream. And for impregnation - any sweet liquid. It could be coffee, tea, milk, some kind of juice or just a syrup of sugar and water. Next we turn on our imagination. The filling for a curd cake with cookies can be nuts, dried fruits, fresh or canned fruits, berries, chocolate, coconut, etc. Of course, fruit in jars is the best option for any time of year, so I take canned peaches and use the syrup from the jar as a soak.

The ingredients are ready! Now it will take us no more than 30 minutes to prepare a no-bake cheesecake. So let's get started!

We break the cottage cheese with a blender to get rid of lumps. If necessary, place it on cheesecloth in advance to drain excess liquid (if the cottage cheese is very wet).

Add sugar to taste (I took 5 level tablespoons for a moderately sweet cream), soft butter, sour cream 20% fat.

Beat thoroughly with a blender until smooth. The result is a smooth curd cream.

Cut the fruits into small pieces. We leave one half to decorate the finished cake.

Let's start forming. Line the bottom of the mold with cling film and grease with a small amount of cream. Dip the cookies in syrup and place on the bottom.

Grease the cookies with a layer of cream, distributing it evenly.

Place fruit on top of the cream.

And then we again lay out a layer of cookies, which we first dip in syrup.

You can form a cake in completely different ways, varying the layers of cookies, cream, fruit or other filling. I got the following sequence: cookies, cream, cookies, cream and fruit, cookies, cream and fruit, cookies, cream, cookies.

Last layer: we leave the top cookies without cream, as this will become the bottom layer of the no-bake cheesecake. We wrap the edges of the cling film and cover with another layer on top so that the cake does not smell like a refrigerator. Refrigerate for at least 2 hours, preferably overnight. The cream will set and the cookies will become softer. You can take a risk and decorate and eat the cake right away :)

For decoration, namely for glaze, we will need: cocoa, sugar and sour cream.

Combine the necessary ingredients in a saucepan.

Stir until smooth.

Place on the fire and bring to a boil, stirring constantly, then remove from the heat.

Remove the cake from the refrigerator in advance and remove it from the mold, turning it over onto a serving dish. We compare the sides of the cake with a knife or spatula and start decorating.

Decorate the top with canned peach and, if desired, other fruits and berries. Don’t forget that we are making a birthday cake, which means the decoration should be elegant!

Pour slightly cooled glaze over the top of the no-bake curd cake and sprinkle with cookie crumbs. In principle, you can serve the cake right away, otherwise we store it in the refrigerator.

Look how bright, festive and elegant the cake turned out!

Not only is it rich in calcium and good for teeth, nails, and hair, but it is also incredibly tasty. And if you choose low-fat cottage cheese, it will not harm your figure at all!

Curd cake with cookies "Jubilee"


Cooking method:

  1. Cream: beat sour cream, sugar, vanillin until thick foam;
  2. Add cottage cheese and mix until smooth. Make sure there are no lumps;
  3. Pour milk into a deep plate. When laying out the cookies, you will need to soak them in milk. This is necessary so that later the cookies absorb the cream better;
  4. Take a baking sheet. Soak cookies in milk and place approximately 6 by 6 squares on a baking sheet;
  5. Spread the cookie layer with cream. Place pre-cut banana rings on top;
  6. We make layers of cookies and grease them with cream. Carefully coat the top and sides of the cake;
  7. Decorate the cake with walnuts and grated cookie topping;
  8. Leave to soak in the refrigerator for several hours.

Delicate “Coconut Iceberg”

Ingredients:

  • Biscuit cookies - 0.5 kg;
  • Coconut milk - 0.4 kg;
  • Coconut flakes - 0.2 kg;
  • Cottage cheese - 0.5 kg;
  • Milk - 0.5 l;
  • Semolina – 100 gr;
  • Granulated sugar - 0.2 kg;
  • Vanillin - 5 g;
  • Gelatin – 10 g;
  • Coconut liqueur - 70 g;
  • Pineapple syrup - 50 g;
  • Water - 50 g;
  • Cream - 100g.

Cooking method:

  1. Heat the milk (do not boil), add semolina. Let stand for 13-15 minutes;
  2. Mix with the mixture – coconut flakes, vanillin;
  3. Mix cottage cheese with coconut milk;
  4. Mix the curd mixture with the rest of the mixture;
  5. Dissolve gelatin in water in advance. Add gelatin to the prepared mass. Mix everything thoroughly and heat it on gas. Leave to cool slightly for 15 minutes;
  6. Syrup: mix coconut syrup with pineapple and water;
  7. Place cling film in a deep bowl and place biscuit cookies on it;
  8. Pour the gelatin mass (cooled slightly) onto the cookies. Place another layer of biscuit on top;
  9. Wrap the dish in cling film and put the cake in the refrigerator until completely frozen;
  10. Before removing the cake from the refrigerator, whip the cream and spread it over the cake, freed from the film and turned upside down.

Curd cake “Elementary”

Ingredients:

  • Biscuit cookies - 0.5 kg;
  • Cottage cheese - 0.5 kg;
  • Butter - 180-200 g;
  • Granulated sugar - 0.2 kg;
  • Sour cream – 3 l. st;
  • Cocoa - 1 l. Art.

Cooking method:

    1. Mix sugar with butter;

    1. Add cottage cheese to the homogeneous mass and beat thoroughly;

    1. Place a layer of biscuits on a plate;

    1. Spread the resulting cream on top. And again lay out a layer of sponge cake, greased with cream;

    1. Glaze: mix cocoa, sugar (3 tablespoons) and sour cream;

    1. Fill the last layer of the cake with frosting;

  1. Decorate as desired and refrigerate overnight.

Original cake "Frosty"

Ingredients:

  • Gingerbread - 0.5 kg;
  • Banana - 2 pcs;
  • Powdered sugar – 150 g;
  • Walnuts - 80-100 g;
  • Sour cream - 0.5 l.

Let's prepare it like this:

  1. Beat powdered sugar with sour cream;
  2. Cut the gingerbread cookies in half and cut the bananas into rings;
  3. We cover a deep dish with cling film, put gingerbread cookies on it, pre-soaked in sour cream and sugar;
  4. Place bananas on gingerbread cookies and sprinkle with pre-crushed walnuts;
  5. Cover the dish with film and place the cake in the refrigerator overnight;
  6. We take out the cake, remove the film, turn it over.

"Gelatin grapes"

Ingredients:

  • Sour cream - 0.5 kg;
  • Cracker - 0.3 kg;
  • Raisins - 0.1 kg;
  • Chocolate - 1 bar;
  • Gelatin - 25 g;
  • Jelly - 100 gr;
  • Green grapes without seeds;
  • Granulated sugar - 200 gr;
  • Vanillin - 5 ml.

Cooking method:

  1. Soak the gelatin in water. We also dilute the jelly in 0.3 liters of water;
  2. We break the cracker into several sloppy pieces. Cut the chocolate into pieces;
  3. Beat sour cream with sugar and vanilla;
  4. Add gelatin to the resulting mixture and stir again;
  5. Mix raisins with sour cream and crackers;
  6. Place a third of the cream on a bowl and sprinkle it with chopped chocolate. Then put the cream and chocolate on top again;
  7. Place in the refrigerator to cool;
  8. When the cake has frozen, pour the jelly onto it and arrange the grapes carefully;
  9. When the jelly hardens, you can eat the treat.

No-bake cake made from cookies and cottage cheese “Tsarsky”

Ingredients:

  • Biscuit roll - 2 pcs;
  • Ready-made cakes - 1 piece;
  • Curd mass - 0.3 g;
  • Cream - 0.5 l;
  • Gelatin – 10 g;
  • Canned pineapple pieces;
  • Sugar - 5 tbsp. l.

Culinary process:

  1. Place cling film in a deep bowl;
  2. Cut the roll into slices 2 cm wide;
  3. Beat the curd mass with sugar until thick;
  4. Mix the cream thoroughly with sugar until foamy;
  5. Place the rolls in a deep bowl;
  6. Mix the remaining ingredients into one, add gelatin. Pour this mixture over the rolls;
  7. Wrap the dishes in film and put them in the refrigerator to harden for a couple of hours.

If the cottage cheese has dried out in the refrigerator, you can soak it in milk and slightly heat it on the stove. After this procedure, immediately use it for its intended purpose.

Nuts are a healthy and necessary product in the house. Buy nuts in large quantities at once so that you can always use them when baking. They make the sweetness tastier and the taste more refined.

To prevent the cake from absorbing refrigerator odors, place it in a deep bowl and wrap it in cling film.

If you suddenly run out of gelatin and really need the dish to harden, add starch.
