Lush charlotte with apples in the oven - step-by-step recipe with photos:

It doesn’t take long to prepare a delicious charlotte and it’s simple even for a beginner in cooking. First you need to thoroughly wash the apples and separate them from the core. Then cut into thin slices.

After this, place in a deep bowl and sprinkle the apples with sugar so that they release the juice.

To prepare the charlotte dough, thoroughly beat the eggs using a mixer into a thick, fluffy and viscous foam, slowly adding sugar and salt as you beat.

If vanillin is added to the dough, it must also be added at this stage so that it can be evenly distributed throughout the dough.

After the eggs and sugar have been properly beaten, soda slaked with vinegar is added. It is necessary to ensure that absolutely all the soda is quenched with vinegar, otherwise it will leave an unpleasant aftertaste or smell in the finished charlotte.

To avoid this, add a drop of ordinary table vinegar to the soda until it stops fizzing.

Then add all the flour to the dough, stirring from top to bottom with a regular spoon until the whole mass becomes homogeneous and smooth, achieving the consistency of sour cream. The jellied dough for delicious apple charlotte is ready.

Place a third of the dough into a greased mold with a volume of approximately 20 cm. The apples must be separated from the juice they have released and carefully placed over the entire surface of the dough, sprinkled with cinnamon and poured with the remaining dough.

Bake the apple pie in the oven for about 40-50 minutes, at 160-180 degrees, depending on the oven.

Cool the finished charlotte at room temperature and sprinkle with powdered sugar. Delicious apple charlotte is ready.
Now delicious apple pie can be served at home. It will be tender, light and very airy. Maximum taste and aroma with a minimum cost of food and cooking time.

A famous dish all over the world, charlotte with apples is not just an apple pie, but a real delicacy, from the French culinary specialist Marie-Antoine Carême, who served at the court of Alexander I. It was he who brought to Russia at the beginning of the 19th century a recipe for a dish named after Queen Charlotte, which is still incredibly popular in our country.

Health benefits of charlotte

It’s worth saying right away that among the variety of delicacies that you can prepare in your own kitchen, charlotte is one of the most healthy, and above all, due to the presence of apples. The dish has absorbed all the benefits of the famous fruit, and therefore, while enjoying another aromatic piece of charlotte, you not only get pleasure, but also replenish your reserves of valuable vitamins and minerals that apples are rich in.

Moreover, thanks to the high content of iron, potassium, pectin, fiber and other beneficial substances, you improve blood composition, support the heart muscle, remove toxins, strengthen the immune system and even supply the body with antioxidants that prevent the development of cancer! Agree, this benefit is very unusual for a dessert.

Now let’s move on directly to the recipes for apple charlotte, telling you along the way how to make this dessert as healthy and dietary as possible.

Little tricks

First of all, let's pay attention to the fact that classic charlotte is prepared from four eggs, 5-6 apples, a glass of flour and the same amount of sugar. This recipe cannot be called dietary, since 100 g of delicacy will contain approximately 155 calories. This is quite a lot, so we will make some useful changes in the recipes described below. Such a replacement will allow even diabetics not to exclude charlotte from their menu.

1. Egg yolk contains quite a lot of fat, and therefore when preparing a delicacy for yourself and your family, we take only the whites from three eggs, and use the fourth whole. With this approach, the dough will also rise well, and the calorie content of the finished dish will be significantly reduced.

2. When choosing flour for your charlotte, take exclusively hard varieties; it will take longer to break them down in the stomach and intestines. It is not surprising that you will be satisfied much faster with such a pie and at the same time you will not eat much of it. You can also dilute the flour with oatmeal crushed in a coffee grinder. Such flakes contain complex carbohydrates, and besides, their calorie content is 4 times lower than flour, which means that in the end you will get a low-calorie flour dish.

3. Sugar is another harmful component in charlotte, which is quite difficult to do without. However, no one is stopping us from replacing it with honey. But honey is sweeter than sugar, so you need to take less honey, a quarter or even half.

4. Before putting the charlotte in the oven, the baking dish is greased with oil, which also adds a certain amount of calories. To avoid this, instead of greasing the pan, line the bottom with parchment paper (baking paper).

Video: delicious charlotte with apples

There are a great many recipes for baking with apples. One of the most popular options is charlotte. And they even came up with many different ways to prepare it.

Charlotte is prepared quickly and easily, and always turns out delicious.

Ingredients

For Charlotte

  • 2 cups of flour;
  • 1 cup of sugar;
  • 3 eggs;
  • 150 g butter;
  • 0.5 tsp. baking powder;
  • a pinch of salt;
  • 1 lemon for zest;
  • 4-5 large apples;
  • powdered sugar for sprinkling the finished charlotte.

For syrup

  • 2 glasses of water;
  • 1 cup sugar;
  • cinnamon to taste.

You should choose firm apples so that they soften when cooked but do not lose their shape.

For the beauty of the finished dish, you can choose apples with green, yellow and red peel.

Preparation

  1. Wash the apples, wipe them or let them dry. Without removing the peel, cut the fruit into halves and remove the core. Next, carefully cut the apples into thin slices (about 2 mm thick). These slices will be used to make roses. Cut those slices that are not very even and thin into small pieces and use them to add to the dough.
  2. Pour water into a saucepan, add sugar and cinnamon, put on fire and bring to a boil. The sugar should completely dissolve. Only after this, dip the thin apple slices from which you will make roses into the syrup and cook over low heat until soft. Do not overcook the apples, otherwise you will not be able to form roses. Next, remove the fruit slices from the syrup and place on a plate to cool and dry. Do not pour out the syrup - it is used to pour over the finished pie.
  3. Wash the lemon, scald with boiling water, remove the zest. Finely chop the zest.
  4. Keep the butter at room temperature until softened. Do not heat or melt.
  5. Sift flour, mix with baking powder.
  6. Beat eggs with sugar and salt, add lemon zest without stopping beating.
  7. Add the butter in small pieces to the egg-sugar mixture, continuing to beat.
  8. Add flour to the resulting mixture, mix all ingredients. The dough is ready.
  9. Line a baking pan with parchment, pour the dough to a level of about a third of the height of the pan. Place finely chopped apples on the dough and pour the remaining dough on top.
  10. To prevent the apples from sinking to the bottom of the pan, you can first lightly roll them in flour.
  11. To form roses, place 7 thin apple slices overlapping each other and roll into a tube. Adjust the number of roses depending on the surface area of the charlotte.
  12. Another method allows you to get roses that are more accurate and hold their shape. To do this, you need to cut thin strips of puff pastry (you can use scraps). Place apple slices on them lengthwise so that half the width of the puff strip remains uncovered. Lightly pour syrup over the apples, cover with the remaining free strip of dough, as a result, the fruit slices will end up in the dough pocket. Roll up the strips to form roses.
  13. Place the resulting flowers on the surface of the charlotte, partially immersing it in the dough. There is no need to press the roses too hard - just enough to keep them on the surface of the dough. Please note that the dough will rise during baking.

Bakery

  1. Bake at 160 degrees for 30-35 minutes until done. Check readiness with a wooden stick - if after immersion in the dough the wooden stick remains dry, then the baked goods are ready.
  2. Remove the charlotte from the oven and lightly pour the syrup over the roses. Allow the baked goods to cool slightly, during which time the syrup will saturate the fruit.
  3. Sprinkle with powdered sugar before serving.

It is better to serve charlotte with tea.

There are two recipes for apple charlotte, which have been “arguing” with each other for the title of classic for several years now. One is made from slices or crumbs of white bread, similar in preparation technology to bread pudding. And the second is the charlotte that I now invite you to bake - fluffy, soft and tender, like a sponge cake; with apple pieces, cinnamon flavor and a light snow of powdered sugar on a thin, crispy crust!

This charlotte is also called “five-minute apple pie,” although it is baked not for 5, but for 25 minutes, but it is prepared very quickly and simply. This is why biscuit charlotte with apples is the most favorite pie during autumn tea parties. What to bake quickly and with a minimum of ingredients for the family for breakfast, or for the children for an afternoon snack; to the arrival of unexpected guests? Of course, charlotte! While you are chatting at the table, Charlotte will be in time.

I offer you a basic charlotte recipe, but you can vary it countless times!

Firstly, charlotte dough can be prepared not only from wheat flour, but also with the addition of corn, oatmeal, buckwheat, and nut flour (half with wheat). Each time the charlotte will turn out with a new taste!

Secondly, in addition to different types of flour, you can add various spices to the dough: cinnamon or vanillin; turmeric, ginger! You can even pour in cocoa, it will be a chocolate charlotte - but the classic version, in my opinion, is better. But if you add a couple of spoons of poppy seeds or chopped nuts to the dough, it turns out very tasty!

Then, you can add not only apples to the pie, but also any seasonal fruits and berries. I tried charlotte with pears and plums; with cherries and apricots, raspberries, strawberries! And each option is delicious in its own way. But let's start with the apple charlotte.

Ingredients for charlotte with apples for a 20-24 cm pan

  • 3 large eggs;
  • 150-180 g of sugar (incomplete 200 gram glass);
  • 130 g flour (1 glass without top);
  • 1 tsp. baking powder (or 1 tsp soda, quench with 9% vinegar in flour);
  • 1/4-1/2 tsp. cinnamon;
  • 2-3 tbsp. l. powdered sugar for decoration;
  • 5-7 medium apples.

Method for preparing charlotte with apples

Charlotte tastes best with sweet and sour fruits of green and yellow varieties: Antonovka, Granny Smith, Simirenko, Golden. Loose apples are not very suitable for this pie: they will “melt” in the dough and the taste will not be the same.

Since the dough for charlotte is biscuit, it must be baked immediately after preparation so that the fluffy mass does not settle. Therefore, it is better to prepare the apples and the mold in advance. We also take the eggs out of the refrigerator in advance: when they are at room temperature, they are beaten into a more fluffy mass.

Wash the apples and remove the cores. If you are in a hurry and the apple peel is not very hard, you don’t have to peel it. But I still advise you to spend a little more time and peel the peel, then the charlotte will turn out much more tender!

Cut the peeled apples into small cubes or slices, as you prefer. To prevent the apples from darkening while preparing the dough, you can sprinkle them with lemon juice.

It is convenient to bake charlotte in a springform pan: then the fluffy, tender pie is easy to take out and transfer to a dish. I cover the bottom of the mold with confectionery parchment, similar to how embroidery canvas is put on a hoop: I cover the bottom of the mold with paper, then put the sides on top and close it, and trim off the excess paper. Then I lightly grease the parchment and the walls of the mold with odorless sunflower oil so that the charlotte does not stick. If there is no parchment, grease the pan with butter and sprinkle with flour or breadcrumbs.

If you don’t have a springform pan, you can bake the charlotte in a solid metal pan or even in a cast iron frying pan, only then it will be a little more difficult to get out. But it’s quite possible to cut the charlotte into a mold and eat it straight from there. If you bake in a silicone pan, remove the charlotte only after it has completely cooled, otherwise part of the dough will remain stuck to the pan.

The mold and apples are prepared, it’s time to turn on the oven to warm up to 180-200 °C.

Let's prepare the dough for charlotte. We begin to beat the eggs with sugar first at the minimum speed of the mixer; after 30-45 seconds we switch to medium and then to maximum. In total, beat for 2-3 minutes until the mass becomes light and very fluffy (two to three times more than the original volume).

Sift the flour mixed with baking powder into the beaten eggs and mix gently from bottom to top, in a circular motion. You can add cinnamon to flour or sprinkle it on apples.

You can pour the apples into the mold and pour the dough over them, or put them directly into the dough and mix gently.

In the first case, you will get a tender apple layer at the bottom of the charlotte, in the second, the fruit will be distributed evenly. There is a third option - pour out half the dough, then pour in the apples and pour the second half of the dough over them.

Does the dough spread out like a thick, wide ribbon? You did everything right!

Place the pan in a preheated oven and bake the charlotte at 180°C for about 25-35 minutes. After about 10 minutes, you can carefully look into the oven. If the charlotte is in no hurry to rise and brown, turn up the heat a little (up to 190-200 °C); if, on the contrary, the top crust is already browned, but the middle is still liquid, reduce the temperature slightly, to 170 ° C.

You can cover the charlotte pan with foil to prevent the top from burning while the center bakes. The exact temperature setting will be different for each oven, so be guided by the type of pie: when the crust turns golden brown and a wooden skewer comes out dry from the dough, the charlotte is ready.

Let the charlotte cool in the oven for 5-10 minutes: if you take it out right away, the change in temperature may cause the sponge cake to settle a little. Then let it sit in the pan for another 10 minutes: it is easier to remove the parchment from a cooled cake than from a warm one.

Having opened the mold, move the charlotte onto a plate. I invert it onto the pan lid, remove the parchment, cover the pie with a dish and invert it again.

Sprinkle the charlotte with powdered sugar through a small strainer - it will become more elegant and tastier. Then cut into portions with a sharp knife.

And we invite your family to enjoy tea with aromatic apple charlotte!
