Cookies with jam and grated dough on top, a recipe with a photo of which I offer, this is mine favorite cookies since childhood. How nice it is to eat crispy cookies with a layer of sweet jam inside. For me it was the most tasty treat. As a child, I didn’t even think about how to cook it, but now I’ve learned and am sharing my recipe with you. The recipe is proven, as my mother also baked it, and she told me how to cook delicious food. The cookie dough itself is slightly crispy and pleasant to the taste. A layer of jam makes the cookies slightly juicy and sweet.



Required Products:
- wheat flour, premium– 2 glasses,
- granulated sugar – 1 cup,
- chicken eggs – 1 pc.,
- baking soda– 1 tsp,
- margarine for baking – 1 pack (200 grams),
- vanillin – 1 pinch,
- thick jam- 200 grams.

How to cook with photos step by step





Melt cream margarine, set aside to cool. Only after cooling, add flour and a little soda. Soda will do shortbread dough a little softer and fluffier.




Drive in egg(yolk and white), stir until the egg in the dough is dispersed.




Add granulated sugar, a pinch of aromatic vanillin and mix everything.






Knead clean hands a lump of dough. You will get a wonderful shortbread dough that will not stick to your hands.




Divide the dough into two unequal parts. Roll out one (larger) part at once on a baking sheet, placing a piece parchment paper. Wrap the smaller part in cling film and put it in freezer for 20 minutes.




Spread the dough layer with jam. Use only thick jam so that it does not drip from the dough. Spread the jam over the entire surface.






Grate a piece of dough from the freezer on top. Place in the oven to bake. After 35 minutes, remove the baked cookies. A temperature of 180-190° is suitable for baking such cookies.




While the pie is still hot, cut it into large pieces. After cutting, leave the cookies on the table to cool.




Brew tea and serve cookies to the table.

These cookies are one of my favorites because the recipe for cookies with jam was one of the first ones I learned to bake. Lightly roll out the remaining half of the dough with a rolling pin, giving the required form according to the shape of the baking tray. You can line the bottom of the baking sheet with small pieces of dough, connecting them together. Next, let’s start preparing the filling: take the most thick jam or jam. If the house is made of thick wood - only store-bought apple jam, then to give it more rich taste you can add a part not too much liquid jam from cherries, plums, strawberries, raspberries. This time I prepared my filling from thick strawberry jam with the addition of fresh berries pitted cherries.

Spread the filling onto a layer of dough on a baking sheet. We take out the frozen half of the dough and rub it on a beet grater. If the dough has not hardened enough, it remains plastic and does not rub well, then it needs to be frozen a little longer. Spread the grated dough thickly over the filling. There are usually no gaps of jam left. Along the edges under the sides of the baking sheet, press the dough with your finger, pushing the jam away so that it does not burn.

Preheat the oven and place the grated pie in the oven to bake. Baking usually takes 40-50 minutes, the pie becomes yellow on top and slightly golden around the edges. To avoid problems with transferring the rolled dough onto the sheet, you can roll out the first layer directly on the baking sheet, and if the second one breaks, this is not critical, you can lay it in pieces. Because in the freezer now there is a magical remedy for covering up flaws with real beauty - the third portion of dough, so that the grated French cookies live up to their name. It’s not at all difficult to grate the frozen dough directly onto the top of the second layer of our pie! Carefully spread the grated mixture over the entire surface and bake at two hundred degrees for half an hour until the surface turns dark yellow and the edges are browned. Sprinkle the finished pie with powdered sugar and cut into diamonds or squares. When it cools down, put it on a dish and ask everyone for tea! Bon appetit!

Tangerine grated French cookies

You will need two and a half glasses of flour, two hundred grams soft margarine, an egg, half a glass of sugar, half a teaspoon of soda and a tablespoon of lemon juice to quench it, two tablespoons of mayonnaise and half a glass of thick tangerine jam.

Combine soda with flour, grind margarine into flour into crumbs, beat egg with sugar, add there lemon juice, mayonnaise, mix and from all the flour crumbs with egg mixture quickly knead smooth elastic dough. Divide it into two uneven parts. Wrap the smaller one in film and put it in the freezer, and roll out the larger one thinly on a greased surface. baking paper. Transfer the layer directly with the paper to a baking sheet, spread it on it tangerine jam. Then grate the frozen piece of dough over the entire surface using a coarse grater. Apricot cookies

These are crispier than crumbly, grated French cookies. The recipe is slightly different.

You will need two eggs, an incomplete glass of sugar, a quarter glass of milk, half a pack of margarine (130 g), a bag, three hundred grams of flour, half a teaspoon of soda and baking powder, a glass apricot jam and a little bit powdered sugar for sprinkles.

Mix margarine with soda, baking powder and flour, leaving half a glass for future needs, grind it all thoroughly with your hands; Beat the eggs with sugar and milk, combine with the grated flour and knead lightly, kneading the dough into a single lump. Literally pour a layer of dough onto a greased baking sheet, using about three-quarters of the amount. Place an even layer on top. Knead the remaining flour into the rest of the dough to make the dough stiffer. Freeze it slightly and rub it on a coarse grater on top of the jam, trying to distribute it evenly over the entire surface of the pie. Bake the future French cookies in an oven preheated to 180 degrees for twenty minutes. The recipe is not complicated, and the result is excellent. Cut the pie while it's hot, but don't rush to remove it onto a plate - the dough should cool and become dense. Sprinkle the top with powdered sugar.

French grated cookies

Holiday plan recipe. Very light, crumbly and melt-in-your-mouth cookies. The dough rolls out perfectly and is not sticky at all.

You will need almond extract or Amaretto - about a teaspoon, one yolk, a teaspoon of baking powder, a bag vanilla sugar, 150 grams of good butter, a quarter glass of milk and 250 grams of freshly sifted premium flour. Any thick jam is suitable for the filling.

Grind the butter with sugar, add the yolk, extract, vanillin and mix. Combine the flour with baking powder, mix, and knead the entire mass of dough into a ball. Separate a third part from it, wrap it in film and place it in the freezer. Roll out the rest of the layer on greased baking paper and transfer to a baking tray. Cover the entire surface with jam, take out a frozen piece of dough and rub evenly on top. Bake in an oven preheated to 180 degrees for twenty minutes until lightly browned.
