  • 600 grams wheat flour v/s.

  • 30 grams of semolina.
  • Raw chicken egg.
  • 10 grams of dry instant yeast.
  • A couple of large heads of white onions.
  • 600 grams fresh fillet cod.
  • ½ teaspoon dried garlic.
  • 20 grams of ghee.
  • Salt and ground white pepper.

Process description

On initial stage you should work on the dough, from which the cod pie will then be baked. To prepare it in deep container Place a pack of butter and 250 milliliters of heated water.

In a separate bowl, combine the sifted flour, instant yeast and a couple of pinches of salt. The resulting dry mixture is poured into the dissolved oil and whisked with a regular whisk, trying to prevent the formation of lumps. In the meantime, you can pay attention to the filling. To prepare it, add thinly chopped onion to a frying pan in which it is already lying, fry it until transparent and cool.

Place the dough that has increased in volume on a work surface, knead it lightly with your hands and leave for another half hour. Then it is divided into two unequal parts. Bigger piece roll out into a thin layer and place on a baking sheet. Sprinkle semolina on top of the dough and place fried onions on it. The next layer consists of washed and cut fish fillet. All this is sprinkled with salt, seasoned with spices and covered with a second piece of rolled out dough, not forgetting to carefully pinch the edges. Several punctures are made on top and brushed with beaten egg. The future cod pie is baked at one hundred and ninety degrees. As a rule, the time spent in the oven does not exceed half an hour.

Puff pastry option

This delicious and aromatic pastry turns out to be quite satisfying. Therefore, you can easily feed a large family with it. In addition, this puff pastry cod pie is not a shame to offer to unexpected guests. To prepare it you will need:

  • 250 grams of fresh mushrooms.
  • Half a kilo of store-bought puff pastry.
  • 600 grams of cod fillet.
  • Onion.
  • 5 tablespoons breadcrumbs.
  • Yolk of one egg.
  • Salt, any spices and refined vegetable oil.

Sequencing

Since in in this case used store-bought dough, you need to start with the filling. In a heated frying pan, fry chopped mushrooms and chopped onions and leave to cool.

Roll out on a work surface puff pastry. The dimensions of the resulting layer should be twice the size of the fillet. Sour cream version

This cod pie recipe calls for... simple products, many of which are almost always found in every home. Therefore, it is possible that you will not even have to go shopping. In this case, you should have at hand:

  • About 3 cups of premium wheat flour.
  • A couple of tablespoons of sour cream.
  • A stick of butter.
  • Egg.
  • Baking powder and salt.

All this is needed to knead the dough. To prepare the filling you will also need:

  • 800 grams of cod fillet.
  • A couple of processed cheeses.
  • 3 chicken eggs.
  • A couple of tablespoons of sour cream.
  • 100 milliliters of 10% cream.
  • A tablespoon of flour.
  • salt, lemon juice and any spices.

In a bowl, combine melted butter, salt, egg and sour cream. Whip all this with a whisk and mix with flour and baking powder. The resulting dough is distributed by hand over the bottom of a heat-resistant form and sent to the refrigerator.

The washed fish is cut into small pieces, combined with chopped onion, salted, seasoned with spices and sprinkled with lemon juice. After a quarter of an hour, all this is laid out on a base of chilled dough, covered with pieces processed cheese and pour in a mixture consisting of beaten eggs, sour cream, cream, dill and flour. Bake the cake at standard temperature for at least forty minutes.

Cod pie - delicious and valuable dish, because fish have mass beneficial properties. Cod is considered dietary because it contains a very small amount of fat. Instead of fillet for baking, you can take fish liver, especially since it is a prophylactic for joint and cardiovascular diseases. To make cod pie, you can use both fresh and frozen fish.

Cod pie made from yeast dough

Ingredients

For filling

  • cod (fillet) – 1 kg;
  • salt - to taste;
  • pepper - to taste;
  • onion – 3 heads;
  • thyme – 2 – 3 sprigs;
  • carrots – 2 pcs.;
  • lemon - quarter;
  • egg – 1 pc.;
  • animal fat – 50 gr.;
  • parsley - 1 bunch.

For the test

  • flour – 3.5 cups;
  • yeast – ½ packet;
  • warm milk – 1 glass;
  • egg – 1 pc.;
  • salt – ½ tsp;
  • sugar – 1 tbsp. l.

Take the dough and divide it into two parts (larger and smaller). Roll out the larger one into the shape of a baking sheet. Grease it with oil and transfer the dough.

Distribute the cod evenly, then the roasted vegetables. Chop the parsley. Place a few small pieces of butter on top.

Roll out the second part of the dough into the shape of a baking sheet, cover the pie, and seal the edges. Leave for 17 - 20 minutes, then brush with egg and pierce with a toothpick over the entire surface. Bake 40 min. at a temperature of 200° C.

Cod pie made from puff pastry

Ingredients

  • Egg - 1 pc.
  • puff pastry – 500 gr.;
  • salt - to taste;
  • cod fillet – 2 pcs.;

  • potatoes – 1 – 2 pcs.;
  • onions – 1 – 2 pcs.;
  • animal fat – 60 g;
  • vegetable fat – 4 – 5 tbsp. l.

Preparation

  1. Defrost the dough.
  2. Boil the fish a little, then separate the fillets. Tear it into pieces with your hands.
  3. Chop the onion and fry a little. Combine with fish, season with pepper and salt.
  4. Grate the potatoes and add salt.
  5. Roll out the dough into an oval and place in the pan.
  6. Place the potatoes in the middle, not reaching the edge by 10 cm.
  7. Place fish and onions on top.
  8. Form the dough into a fish. To do this, cut the free edges into strips and intertwine them together.
  9. Beat the egg and coat the pie with it, and insert pieces of butter into the slits.
  10. Heat the oven to 160° C and cook the dish for 30 minutes.

Open cod pie

Ingredients

  • salt – ½ tsp;
  • milk – 110 ml;
  • egg – 1 pc.;
  • yeast – 5 g;
  • butter – 70 gr.;
  • sugar – 1 tsp;
  • flour – 400 gr.

For filling

  • suluguni cheese - to taste;
  • cod – 500 gr.;
  • tomato – 1 pc.;
  • sweet pepper (red) – 1 pc.

Preparation

  1. Dissolve the yeast in warm milk and set aside for 15 minutes.
  2. Melt the butter and add to the milk.
  3. Add salt, egg, sugar, flour there.
  4. Knead and leave for 1 – 2 hours.
  5. Form the dough into a thin circle using a rolling pin.
  6. Distribute the filling at a distance of 4 cm from the edge.
  7. Cover it with the edges, bringing the dough together well.
  8. Cut (like rolls), turn with the filling up.
  9. Place the remaining fish in the center. Garnish with tomatoes and peppers. Place cheese on top and salt the pie. Cook for 30 minutes. At a temperature of 180° C.

Cod jellied pie

Ingredients

  • kefir – 200 ml;
  • mayonnaise – 3 tbsp. l.;
  • baking powder – 2 tsp;
  • salt - to taste;
  • cod – 500 gr.;
  • onion – 1 pc.;
  • flour – 1 tbsp.;
  • dill – 2 – 3 sprigs;
  • pepper - to taste;
  • egg – 3 pcs.

Preparation

  1. Roughly chop the onion. Remove the bones from the fish and cut it into cubes, add salt and sprinkle with dill.
  2. Fry the onion in a frying pan.
  3. Turn on the oven at 200° C.
  4. Stir eggs, kefir and mayonnaise, add baking powder and flour.
  5. Pour some of it into the bottom of the mold batter, then place the fish cubes and onions, then the third layer of dough.
  6. Bake for about 35 minutes.

Quick cod pie

Ingredients

  • yeast-free puff pastry – 400 g;
  • cod fillet – 400 gr.;
  • cheese – 200 gr.;
  • salt - to taste;
  • tomato – 100 gr.;
  • onion – 100 gr.;
  • egg – 1 pc.

Preparation

  1. Thaw the dough and roll it out onto a baking sheet.
  2. Chop the fillet coarsely, tomato and onion into small cubes, grate the cheese, beat the egg.
  3. Place the dough on a baking sheet, do not forget about the sides, distribute the pieces of fish, add salt, then add the tomatoes and onions. Sprinkle with cheese.
  4. Brush the sides with egg and place in the oven for 30 minutes.

Kefir pie with cod

Ingredients

  • cod (fillet) – 300 gr.;
  • pepper - to taste;
  • onion – 110 gr.;
  • flour - 3 tbsp. l.;
  • carrots – 2 pcs.;
  • salt – ½ tsp;
  • tomato – 1 pc.;
  • potatoes – 200 gr.;
  • vegetable oil – 3 tbsp. l.;
  • kefir – ½ glass;
  • egg – 1 pc.;
  • butter – 1 tbsp. l.

Preparation

  1. Cut the onion and carrot into circles, and the tomato and fish into cubes. Salt and pepper the cod, dip in flour and fry. Then transfer the fish to a plate, and fry the carrots and onions in the same frying pan. Add tomatoes and cook covered for 10 minutes.
  2. Cut the potatoes as convenient and boil in salted water for 13 minutes. Pour kefir and butter into the pan, add pepper and salt. Reheat well. Pour into a bowl. Pass the hot potatoes through a sieve. Beat in the egg and stir.
  3. Heat oil in a frying pan, add 1 tbsp. l. flour. Pour in vegetable liquid and cook until thickened (about 2 minutes), stirring. This is the sauce.
  4. Place the stewed vegetables in a deep dish, followed by pieces of fried cod. Pour in the sauce. Distribute on top mashed potatoes. Bake for 15 minutes. at 200° C. Eat hot.

Canned cod pie

Ingredients

  • yeast dough – 500 gr.;
  • potatoes – 1 pc.;
  • canned cod – 1 can;
  • salt - to taste;
  • vegetable oil – 2 tsp;

Preparation

  1. Place parchment paper in a baking dish and grease with oil.
  2. Divide the dough in half (uneven halves). Flatten most of it into shape and make walls.
  3. Slice the potatoes very thinly and place on top of the dough. Sprinkle with salt and pepper.
  4. Remove the fish from the jar and mash with a fork. Spread on top of potatoes.
  5. Roll out the remaining dough, cover the pie and carefully join the edges. Pierce with something sharp. Bake for about 30 minutes. At a temperature of 180° C.
  1. To cut cod into a pie, you need to remove the scales and cut off the fins using cuts. After making an incision along the spine and to the end of the tail, remove the fillet. Using an elastic knife, remove the rib bones, and pull out the small ones with tweezers.

Rybnik is a Russian pie; in places where fishing was done, they were and remain the most popular. The fish usually taken is one that has few bones. But the most delicious fish soups are those with trout or salmon. Today I have a cod fisherman.

Rybniks most often bake with yeast dough, because unleavened is fragile and juice may leak out of the pie. But today I still took a risk and prepared unleavened dough.

Fishmonger's recipe with cod

Ingredients:

  • kefir – 1 glass,
  • eggs – 1 pc.
  • sour cream – 3 tablespoons,
  • baking powder - 1 pack,
  • salt – 0.5 teaspoons,
  • flour - how much dough will take.
  • cod – 500 g,
  • onions – 4 pcs.
  • butter – 80 g,
  • salt, black pepper.

Method of preparation: Knead the dough. Break an egg into a cup, pour in kefir, add sour cream, add baking powder and salt. Stir well and add flour, knead into a loose dough. Let it rest under the cup.
During this time we will cook the fish. Wash the cod, salt and pepper the fillet.
Cut the onion into half rings. Roll out the dough oval shape, cut the edges, place the onion on top of the fish in the middle, place pieces of butter on the fish.
Close the pie, intertwining the ends. Place on a greased pan and place in a preheated oven, bake for 1 hour.

Cut the red onion and leek into thin rings, place in boiling salted water and after 1 minute. Using a slotted spoon, transfer to a bowl of ice water and drain. Cut carrots into circles, tomatoes into cubes.
Cut the cod into 3.5–4 cm pieces. Salt, pepper and roll in sifted flour. Fry in 2 tbsp. l. heated oil for 1 min. on each side along with garlic cloves cut in half. Without removing the saucepan from the heat, transfer the fish to a platter. Remove the garlic.
Pour wine into the saucepan in which the fish was fried. After 1 min. add 1 cup water, rosemary leaves, onion and carrots. Stir, bring to a boil, add tomatoes. Reduce heat and cook covered for 10 minutes. Carefully pour the liquid from the saucepan into the gravy boat.
Heat the remaining oil in a frying pan, add 1 tbsp. l. flour. Stir so that there are no lumps. Pour in the liquid from the vegetables. Cook, whisking constantly until thickened, 2 minutes.

For the potato “lid,” cut the potatoes and carrots as desired and boil in boiling salted water for 10–15 minutes. Heat the cream and butter in a saucepan, season with salt and pepper. Pour into a bowl and rub the hot potatoes and carrots through a sieve. Stir in the egg.

Place in a fireproof form stewed onions and carrots, place pieces of fried fish in the next layer. Carefully pour in the prepared sauce.

Place potato and carrot puree in an even layer on top. Using a tablespoon, make a “wave” on its surface. Bake in a 200°C oven until the top of the pie is golden, about 15 minutes. Serve warm.

Grocery tip
In this dish, instead of cod, you can use pike perch fillet or sea ​​bass. It is important that the fish is not very fatty.

Add 1 small parsnip root and a pinch to the potatoes and carrots brown sugar– the puree will be more tender and flavorful.

Let's start by preparing the yeast dough. First, crumble the yeast in a bowl and add warm milk.

Stir, add sugar, salt and melted butter (cool slightly).

Mix and add the egg.

Gradually add flour and mix soft dough. Place the dough in a bowl, cover with a towel and leave to rise for an hour and a half.

While the dough is rising, let's make the filling. How to fillet pike perch, I. We cut the fillet into flat pieces, mine are about 2*3 cm, you can cut them smaller.

Peel the onion and cut it as desired, into cubes or into half rings.

When the dough has risen, knead it and divide it into two parts: one larger (for the lower part), the other smaller (for the upper part of the pie). Roll out the bottom part and place it in a mold (or on a baking sheet).

Place the first layer of fish, placing the pieces tightly (after all, we want a lot of fish in the pie!).

Salt and pepper the fish and place a layer of onion on top.

And another layer of fish! Our pie will only contain fish and onions. If you don’t have a lot of fish, then you can add potatoes cut into plastic pieces or a layer of boiled rice as the first layer.

Add salt and pepper again. Already delicious, right?

Now lay out a layer of onions, add a little butter on top, since pike perch is lean fish. If you have salmon or trout, then, of course, it is not necessary to add oil.

Roll out the second part of the dough, cover the pie, pinch the edges. You need to make a hole in the middle for steam to escape. The top can be brushed with egg or milk.

Bake the fish pie in the oven at 180 degrees for 40-50 minutes. If the top browns too quickly, cover the pie with foil. This is such a handsome guy we have.
