In the summer, you want to prepare more and more of everything, but as winter approaches, it becomes clear that you won’t be able to eat everything before the new harvest. That’s when the recipe for jam pie becomes especially relevant, especially if it’s a quick pie. I cook it from shortcrust pastry, the filling goes thick plum jam. However, any jam that tastes sour will do, and in the recipe I will tell you how and with what you can thicken it.

To prepare a simple and quick jam pie you will need:

  • margarine – 180 g;
  • eggs – 2 pcs;
  • granulated sugar – 1 cup;
  • thick plum jam - 2/3 of a half-liter jar;
  • baking powder - 1.5 tsp;
  • vanilla sugar - 0.5 packets;
  • wheat flour – 3-3.5 cups.

The base of the jam pie is shortcrust pastry. I made it with margarine, you can use butter. I put the bowl with margarine on low heat, and while it softens, I prepare other products. Break two eggs into a deep bowl and add sugar.

As soon as all the ingredients are combined, the lump becomes smooth and oily - the dough is ready. If it’s too oily or too soft, I add flour and quickly mix it in. I divide the dough in half. One part will be the base, I will roll it out on a baking sheet. I flatten the second one into a thinner layer, wrap it in film and put it in the freezer for 15-20 minutes. Just while the oven is heating up to 180 degrees, the dough will harden.

I decided to make the pie higher, instead of using a baking sheet I used round shape with a diameter of 30 cm. I did not roll out the dough, but put it in a mold and kneaded it with my palm into a layer of equal thickness.

Lay out thick plum jam and spread evenly over the dough. The layer can be made thin or thicker.

Advice.If your jam is not very thick, remember two ways to thicken it. The first is to add starch to the syrup and mash the berries. Mix everything and put it on the pie. When heated, starch will prevent the jam from spreading. The second way is to add crushed nuts. I'm drying walnuts in a dry frying pan, grind in a mortar or grind in a blender into very fine crumbs. I combine it with jam and spread it on the pie. In this case the taste finished baked goods acquires a slight nutty note.

The dough has hardened a little in the freezer, now you can grate it through a coarse grater. I rub it directly onto the filling. A simpler option is not to freeze it, but to roll it out and cover the filling. But I like this particular one - the jam pie is not only tasty, but also elegant, with cute curls.
