Preparation:

1. Today I have a large pink salmon, 1300 grams, such a nice thick fish. It needs to be cleared of scales, cut off all the fins and tail, remove the head (it’s somehow inhumane to write this...), and rinse thoroughly. The head can be left for fish soup. By adding some more fish, the fish will turn out great. Then dry the fish with paper towels and cut into steaks.

2. I got 8 steaks and a tail. The tail can also be left for fish soup, but for some reason I decided to use it. It’s still better to cut off the bone from the tail. You can, of course, cut off all the bones and bake the fillet. But today after work, everyone wants hurry up dinner, so I won't waste my time.


3. Steaks need to be marinated for a short time. I will do this in two stages. First I'll just salt the fish. I have one for such a case Himalayan salt. It is coarsely ground, with the addition of some spices, and most importantly, it contains a mixture of peppers. I don’t know how much this salt is truly Himalayan, but it is ideal for marinade.

I sprinkle it on the fish and rub the salt into the skin and flesh, both outside and inside.

If you don’t have such salt, then it’s not a problem at all. Take regular salt, mix it with pepper and a mixture of any spices for fish. You don’t need to use a lot of spices, just a pinch. The fish itself is tasty and has its own delicate aroma. So let's not interrupt all this. Our task is only to emphasize all the advantages of this delicious fish. Mix all the ingredients, then sprinkle them over the steaks and rub them into the flesh.

4. Leave the pink salmon to marinate for about 20 minutes. The second step is to pour the juice of half a lemon over the stacks. But we'll do that a little later. It is not advisable for the fish to be exposed to acid for a long time. Pink salmon meat is tender and marinates quickly. And if you immediately add lemon juice, it may become dry during the cooking process.

5. Now let's prepare all the vegetables. We wash them, clean them and cut them as our imagination dictates. My imagination suggested cutting them like this.


6. We also peel and cut the potatoes. I cut it into slices, but you can cut it into cubes or circles.

7. Now we begin to assemble our dish. Place a double layer of foil on a baking sheet. Lay out in such a way that there are overhanging edges. We will subsequently use them to cover the dish being prepared. Grease the foil with vegetable oil. If you don’t do this, you’ll have to pick out both fish and potatoes from it later.

10. Then lay out the pink salmon steaks. Sprinkle them with lemon juice. I didn’t squeeze the juice in advance. I squeeze it with my hands directly onto the fish. While we lay out the other ingredients, the fish will marinate a little in lemon juice.

12. My tomato is large, so I first cut it into two halves. And then I cut it into half rings. And I cover the fish with them.

For spices, I use a mixture of paprika, thyme, turmeric and coriander. We take a mixture of these spices, or those that you have, in a pinch, and distribute them evenly over the entire surface, as if adding salt.


14. Now you will need to do sour cream sauce. It is done very, very simply. Mix the eggs with sour cream, add half a teaspoon of salt and a pinch of pepper. Mix everything until smooth.



15. Pour the resulting mixture over the fish. I ended up with two full tablespoons for each steak.


16. Now you need to build a “tent” for the fish out of foil. It is advisable that the foil does not come into contact with the food. In this case, a closed space is formed where, with the help of steam, the dish will cook faster and become even tastier.


To do this, lift the hanging edges of the foil and make sides. Then we cut another piece of foil to the size we need. This will be the roof. We connect the roof with the sides using toothpicks. Press the foil where necessary to prevent steam from escaping. That's it, the “tent” is ready!

17. Place the baking sheet in the oven, which has been preheated to 200 degrees. Bake for 30 minutes.

18. During this time we relax, we can drink a glass of tea after work, spend time with the children and prepare food for the table. And also grate the cheese on a coarse grater. And chop the greens.
