Pour sugar into a saucepan (the proportion is easy to remember - sugar is 10 times less than fruit), put it on the stove, heat low. Warm up the puree, stirring until the sugar dissolves – 2-3 minutes. No need to boil.

Take a baking tray and cover it baking paper so that it sticks out above the sides (otherwise the pastille risks spilling onto the baking sheet and burning, but this is not part of our plans).

If the layer of marshmallow lies unevenly, then take the baking sheet from both sides and lightly tap it on the table - the surface will become absolutely smooth.


Preheat the oven to 75 degrees. If there is convection, then be sure to turn it on. Place a baking sheet with the future marshmallow. Drying time with convection is 6 hours. Without convection – 8-10 hours. After the time is up, leave the marshmallow in the switched off oven for another hour and a half.

This is what dried marshmallow looks like. It is still impossible to separate it from the parchment - it is not dry enough in the center. You can put it out to dry entirely, or if you want to make curls, I’ll show you how to cut it.


Ideally, use a round pizza cutter. Or you can just take a sharp knife and make relatively even cuts.


Then we turn the baking sheet over, put the paper with marshmallow on it, take scissors and, holding the cutting edge of the parchment, carefully cut the paper along the line.


These are the stripes you get. Place them back on the baking sheet and leave to dry for a day. Just on the windowsill or, for example, like me, on the closet.


The finished pastille is easily separated from the parchment.
