After baking the first pancake, I add about 1/4 cup of vegetable oil to the dough and no longer pour oil into the pan at all.     My method for making pancakes is simple. However, I don’t make them with pure milk, for some reason they are not airy and tender. For 1 liter of liquid, I combine 500g of milk and the same amount of boiled water. You need to take 2 or 3 cups of flour, and at first I don’t add a lot of liquid to the flour, but first stir until the sour cream is evenly thick. And only then I add the rest. Be sure to put 2 or 3 eggs in the dough, salt to taste, 1 tablespoon of sugar, maybe less, half a teaspoon of soda, quench it with vinegar. I also add 2 tablespoons of melted butter, add another 2 tablespoons of melted butter. Next, I mix everything well, without lumps, heat the pan and bake. Of course, if necessary, you can correct something in the test, but basically you get good pancakes. And another tip, let the dough sit, and the longer the better. In general, sometimes I prepare the dough in advance, and put it in the refrigerator, and bake it the next day, but this is rare, but I definitely let the dough rest before baking.

    It all depends on whether you like pancakes thin dough, or fluffy pancakes. I don’t like very thin ones, I cook pancakes often and for one carton of milk - one liter I need four eggs. Add flour by eye. Vegetable oil can be added directly to the dough, and you don’t have to add it to the frying pan every time, it’s more economical.

    You can also use a special Teflon-coated pancake pan for making pancakes, I have one, it’s very convenient.

Thin pancakes recipe for 1 liter of milk

  • Milk 1000 ml
  • Egg 3 pcs.
  • Flour premium 400 g
  • Vegetable oil (refined) 2 tbsp. l.
  • Butter 130 g
  • Baking soda 2 tsp. (without top)
  • Sugar 3 tbsp. l.

Step-by-step preparation of pancakes

  1. Step one. How to make pancake dough correctly. Break the eggs into a deep bowl (I remind you that they should be at room temperature).
  2. Add sugar to them and beat the mixture with a mixer until the mass doubles. The amount of sugar may be more or less. It all depends on what kind of pancakes you bake - sweet or for meat filling.
  3. Pour milk there, heated to 40 degrees. Stir and add two tablespoons of vegetable oil (refined). Thanks to the oil, we won’t have to grease the pan every time we bake, and the pancakes will turn over perfectly.
  4. Step two. In another bowl, carefully sift the flour through a sieve. The better you sift, the more oxygen it will pick up, and the more tender your dough will be. Add vanillin or vanilla sugar if desired.
  5. Pour the egg-milk mixture into the dough little by little and stir using a mixer or blender. There should be no lumps in the dough, so most often at this stage I use a blender.
  6. It's time to add two tablespoons of soda without top. It is this that will give the dough the porosity that fans of pancakes with a hole love.
  7. The dough should have a structure like homemade sour cream. It should spread easily throughout the pan.
  8. Step three. We leave it to rest for 15 minutes, and during this time you can start filling. This time I have pancakes without filling, so I'll just melt some butter and grease the hot surface with it. I needed 150 grams of butter for this.
  9. It’s time to add two tablespoons of boiling water to the rested, thickened pancake dough. You will get even more lacy baked goods. This will also help regulate the thickness of the dough. If it is very thick, add more boiling water. If it’s already liquid, then you don’t need to add boiling water.
  10. Step four. Let's start baking and remember the secret - a hot frying pan. There is no need to lubricate it, nothing will burn. Pour a ladle of batter into the center of the pan and tilt it in a circle until the bottom is completely covered. On your first pancakes you will adjust the amount of batter you need. And remember, the thinner the layer of dough you pour, the more lacy the surface will be. And vice versa, the thicker the layer, the more uniform the surface you will get.
  11. Turn over to the other side using a spatula. Each side takes approximately one minute.
  12. Lubricate each pancake with a brush melted butter and put them in a delicious pile. And you can wrap them with any filling according to your taste and wishes.

Thin pancakes for 1 liter of milk: step-by-step recipe

This recipe is classic for one liter of milk. It is simple and at the same time “multifunctional”.

That is, pancakes prepared in this way can be served in any form.

For example, put a small piece of butter on a still hot stack of pancakes, or you can pour condensed milk or honey on it.

And also, make rolls or envelopes, after putting absolutely any filling in them (berry, fruit, meat, caviar, etc.).

Required ingredients:

  • eggs - 2 pcs.,
  • milk - 1 liter,
  • sugar - 2 tbsp. spoons,
  • flour - 270 gr.,
  • sunflower oil - 3-4 tbsp. spoons,
  • salt - on the tip of a teaspoon,
  • soda - half a teaspoon,
  • butter - a small piece for greasing pancakes (optional).

Pour a liter of milk into a saucepan and place on low heat.


Heat slightly until it is warm.

In no case should the milk be very hot (with boiling water there will be a different recipe), otherwise the eggs into which we will pour it will simply boil.

Also, it should not be cold, because in this case the pancakes will turn out raw and will stick to the pan when turned over.

Then, break 2 eggs into a plate.

There, add 2 tablespoons of sugar, salt and half a teaspoon of soda.

Mix with a whisk.


Add 3-4 tablespoons of sunflower oil.

Sunflower oil can also be replaced with olive oil.

After 30 minutes, the dough needs to be mixed well again.

Now, let's get to the frying pan.

We put it on the biggest fire - to heat it up.

Grease a hot frying pan with sunflower oil.


As soon as you smell the strong smell of oil, you can start making pancakes.

Important: be very careful that when heating the pan, the oil does not start to burn.

Reduce the heat quite a bit.

But in no case do we make it weak, because then the whole process will take a lot of time and the pancakes will turn out hard.

Fill the ladle with batter, about halfway.

The amount of dough will directly depend on the size of the frying pan. bigger frying pan, the more the ladle should be filled.


Carefully pour the dough into the pan, while rotating it a little.

This is necessary to ensure that the dough is evenly distributed throughout the pan.


As soon as it is clear that the edges of the pancake have browned, approximately this will be visible in 20-23 seconds.

This means it's time to turn it over.

Lightly pry the edge of the pancake with the tip of a knife.

Then, with our fingers, we take hold of this bent edge and carefully lift the pancake.


The second side is browned - remove the pancake from the frying pan and place it on a previously prepared plate.
