Step-by-step instruction:

  1. Using a mixer, beat raw eggs in a bowl until foamy.
  2. Warm the milk until room temperature and pour 200 ml into egg mixture, add salt and granulated sugar.
  3. In several stages, add sifted flour to the main ingredients, mix the mixture with a spoon, avoiding the formation of lumps.
  4. Add the remaining milk, add butter and finish preparing the dough.
  5. Soften a piece of butter for the filling. Apply it to each fried pancake and place them in a stack.
  6. Place sour cream in a separate bowl and mix it with finely chopped dill.
  7. Pour caviar into the mixture and mix carefully.
  8. All that remains is to distribute the filling over the buttered pancakes and roll the pancakes themselves.
  9. Now you can serve the appetizer to the table. Bon appetit!

Pancakes with caviar and red fish

What to take:

  • red caviar – 100 g;
  • salt – 5 g;
  • milk cheese – 100 g;
  • flour – 270 g;
  • salmon fillet – 150 g;
  • milk – 0.5 l;
  • vegetable oil– 50 ml;
  • sugar – 8 g.

Cooking process:

  1. Combine sugar, raw eggs and salt in a cup, process the mixture with a mixer.
  2. Pour 100 ml of milk, add flour crushed in a sieve and turn on the mixer again.
  3. Add the rest of the milk, vegetable oil and mix.
  4. We bake a slide golden pancakes, put it on a plate.
  5. Cut the fish fillet into thin strips.
  6. In another frying pan, melt the cheese and apply a layer of this cheese on each pancake.
  7. Place fish slices on top, roll the dough into a tube and cut it into several pieces.
  8. We place the resulting small tubes vertically on a plate and place a little caviar on the top of each tube. This way you can beautifully serve pancakes with caviar.

With crab sticks and mascarpone

List of ingredients:

  • red caviar – 150 g;
  • fresh dill – 1 handful;
  • mascarpone cheese – 140 g;
  • crab sticks – 5 pcs;
  • green onion arrows – 5 pcs.

Algorithm of actions:

  1. Finely chop the peeled dill and mix it with melted cheese.
  2. Chop the crab sticks into small pieces and add to the cheese mixture.
  3. Let's bake the pancakes in advance and stack them to cool.
  4. Place a mixture of cheese and crab sticks and a little red caviar into each pancake and roll it into an envelope shape.
  5. Serve amazingly tasty treat in a warm form. Bon appetit!

Cooking with avocado

You will need:

For filling:

  • lemon juice– 8 ml;
  • avocado – 1 piece;
  • cucumber – 1 piece;
  • fresh dill – 3 sprigs;
  • caviar – 80 g;
  • cream cheese – 90 g;

for test:

  • milk – 0.2 l;
  • softened butter – 30 g;
  • baking powder – 10 g;
  • egg – 1 pc;
  • salt – 4 g;
  • flour – 130 g;
  • sugar – 8 g.

Step-by-step instruction:

  1. Pass the mixture of flour, salt and baking powder through a sieve.
  2. In another bowl, combine a raw egg, milk and sugar. Pour the contents of this cup into flour and knead the dough.
  3. After 10 minutes, add butter to the dough and mix again.
  4. Place the peeled avocado in a blender bowl, add cheese to it, add salt, chopped dill, pour in lemon juice and grind.
  5. We bake pancakes the size of pancakes in a frying pan and let them cool.
  6. Spread the avocado mixture on each flatbread and sprinkle some caviar on top. Cucumber cut into small cubes completes the delicacy. Bon appetit!

The dough for making these pancakes was chosen to be the simplest and I will be happy to share it with you. Break the eggs and mix them with salt, sugar, soda, then add milk and flour.

Knead the dough until we get the consistency of liquid sour cream. The resulting dough can be left to stand for half an hour, this will make it even better.

Everyone has their own technique for frying pancakes. I personally fry without any oil in a dry, well-heated frying pan. You can add oil to the solution itself, but not much, about one tablespoon. When pouring pancake liquid into a frying pan, it is better to hold it in your hand over the stove, this will make it more convenient to distribute the liquid over the entire surface. You should not pour too much solution, for example, two ladles, the pancake will be thick and then you will not be able to wrap the filling in it. It is best to take one incomplete ladle. You should turn the pancake over to the other side when it dries on the visible side. Help yourself with a spatula, maybe even two. The coup is made with a sharp movement. In principle, if you get the hang of it, you will even enjoy frying pancakes.

Thus, from the dough we mixed, we get such a stack of pancakes; if you want more, just increase the composition of the ingredients.

Now let's move on to filling and rolling our pancakes. To do this, we will need this kind of curd cheese; it will be curd or processed, in principle it does not matter, it is a matter of taste. The main thing is that it spreads well on the pancake.

After greasing, wrap the pancake in a tight tube.

Then we roll this tube into such a shell, and to keep it in place we tie it with one of the strings of the cheese braid.

We put a spoonful of red caviar on top and the pancake is basically ready to serve. It looks quite chic and original, although there is nothing complicated.

Now I will show you the second method of wrapping pancakes. Here we will have caviar inside along with cheese.

Place the edges of the pancake together and tie it green onions, if it is not there, you can use the same cheese braid. The pancake now looks like a small but very tasty bag.

In fact, you can experiment with the presentation yourself and come up with something of your own. But you can use my idea, because you will agree, it looks very appetizing.

For those who don't like large portions and prefers size XXS, I can offer pancakes in the form of rolls. They are made quite simply. Grease the pancake with cheese, roll it into a tube and cut into small rolls. We will also tie them with a cheese braid, and decorate the top with caviar and a small stem green onions.
