  3. Rinse. Leave the berries in a colander so that all the water drains out.

Now you can safely choose which recipe to make cloudberry jam for the winter. When assessing the cooking method, be guided by your own tastes, availability of free time and whether you have a desire to experiment.

Classical

Peculiarities . This recipe is considered a “classic” and one of the simplest. But where exactly it scattered all over the world is unknown.

Compound:

  • cloudberries - 1 kg;
  • sugar - 1 kg;
  • water - 300-350 ml.

How to cook

  1. Pour water and sugar into the pan.
  2. Boil the syrup for ten minutes.
  3. Carefully add the berries. Do not plump the entire volume at once - the fruits will be crushed and instead beautiful jam you will end up with an unappetizing mess.
  4. Simmer on low heat for half an hour.
  5. If the seeds don’t bother you, then the jam is ready.
  6. If you don’t like to “crunch” the seeds, carefully remove the berries from the syrup and rub through a sieve. This way you will get a seedless delicacy, but its consistency will be closer to jam.
  7. Dip the pureed berries back into the syrup.
  8. Cook for another ten minutes.

Roll hot jam into sterilized jars. Or you can do without rolling. Cloudberry jam keeps well in the refrigerator. Simply pour it into sterile jars and seal with hot (also sterilized) screw caps.

Swedish

Peculiarities . Here is another simple cloudberry jam recipe that is easy to use at home. They say that this is how Swedish housewives cook. This involves cooking without water, but... with preservatives.

Compound:

  • fresh berries - 4 kg;
  • sugar - 1 kg;
  • sodium benzoate - half a teaspoon;
  • potassium sorbate - half a teaspoon.

How to cook

  1. Place pre-prepared and dried berries in a saucepan or basin for cooking.
  2. Sprinkle sugar on top.
  3. Cover with a lid and leave for an hour and a half so that the fruits release juice.
  4. Place the container over low heat.
  5. Cook, skimming off the foam, for no more than 20 minutes. Do not mix the berries with metal objects - it is better to gently shake and rotate the container.
  6. Pour a small amount of syrup into a separate bowl and add preservatives there.
  7. Stir and add again to the jam.
  8. After five to seven minutes, remove from heat.

Most likely, the addition of preservatives came with the development of the chemical industry. The Swedes claim that such jam can be easily stored in ordinary kitchen cabinet several years without losing either beneficial or organoleptic properties.

Five minutes

Peculiarities . And here is a recipe in which you do not need to cook the jam for a long time, because with prolonged heat treatment some of the vitamins will disappear from the cloudberries. Here the boiling lasts no more than five minutes.

Compound:

  • fresh cloudberries - 1 kg;
  • sugar - 1 kg;
  • water - 300-350 ml.

How to cook

  1. Place the prepared and dried fruits in a saucepan or basin for cooking.
  2. In a separate container, boil syrup from water and sugar.
  3. Pour hot syrup over cloudberries and turn on low heat.
  4. Cook for no more than five minutes.
  5. Allow the composition to cool naturally.
  6. Reheat and cook for another five minutes.
  7. If you want to remove the seeds, wipe the berries and boil again.

Five-minute cloudberry jam is a good option when the housewife is limited in time. If you are not a sweet tooth, the proportions can be changed. Feel free to reduce the amount of sugar by half, then your jam will acquire a piquant sourness.

Silt

Peculiarities . Swedish housewives know exactly how to make jam correctly. Be it from cloudberries or from any other berry. This is the so-called silt.

Compound:

  • cloudberries - 1 kg;
  • sugar - 700 g (if the berry is very sweet, then you can take 500 g).

How to cook

  1. Place the prepared fruits in a cooking container and place on low heat.
  2. Cook for about 15 minutes. During this time, the berries will give juice.
  3. Remove the pan from the heat.
  4. Add sugar.
  5. Stir gently with a silicone spatula until the sugar dissolves.
  6. All. Silt is ready.

By the way, did you know that jars can not be sterilized with hot steam (after all, this takes a very long time), but simply heated in the microwave? Yes, just wash the jars, preferably baking soda, and place in the microwave oven for about five minutes. Silt can even be covered with nylon lids (heat them in the microwave too) and it will not spoil.

Without water

Peculiarities . This method is longer than the previous ones: the berries must stand in their own juice all night before cooking.

Compound:

  • cloudberries - 2 kg;
  • sugar - 2 kg.

How to cook

  1. Place the washed and dried berries in a saucepan, sprinkling them with sugar: a layer of cloudberries, a layer of sugar.
  2. Cover with a lid and leave until morning.
  3. The berry will give juice overnight.
  4. Tomite on low heat until the sugar melts.
  5. Turn up the heat and cook for another ten minutes.
  6. Ready.

No cooking

Peculiarities . Or you can do without cooking at all. Then all the benefits of cloudberries will remain in their original form.

Compound:

  • fresh cloudberries;
  • rum (can be replaced with simple alcohol).

How to cook

  1. Sterilize the container in the classic way(lids too).
  2. Treat the inside of the jars with rum or alcohol. To do this, simply pour in the alcohol, press the lid on, shake a few times and pour out.
  3. Place the prepared berries in jars.
  4. Fill with boiled, but not hot water.
  5. Roll up the lids.
  6. Send to a cold place (with a constant temperature no higher than 5-7°C).

And in the old days they made soaked cloudberries: for 10 liters of water they took 1 kg of sugar and 30 g of salt. Spices were added and syrup was boiled. Then the berries were poured with boiling syrup, put under a press, and the cloudberries were stored in the cellar all winter.

With lemon juice

Peculiarities . This is a super vitamin option cloudberry jam- with lemon. Considering that cloudberries already contain a loading dose of ascorbic acid, then in combination with lemon juice it turns out simply " vitamin bomb" This jam will be useful for ARVI and vitamin deficiency.

Compound:

  • cloudberries - 1 kg;
  • sugar - 1 kg;
  • lemon - 1 pc.

How to cook

  1. Place the prepared berries in a cooking vessel.
  2. Add sugar and mix gently with a silicone spatula.
  3. Squeeze the juice from the lemon and pour over the berries.
  4. Cover with a lid and place in the refrigerator or cellar for a day.
  5. Remove the container and let the cloudberries warm to room temperature.
  6. Simmer on low heat for 40-50 minutes.
  7. Don't forget to remove the foam. Shake and swirl the pan to stir the contents.

Or you can not throw away the lemon zest, but grate it on fine grater and add to jam. Then your dessert will acquire a more pronounced citrus aroma.

With lingonberries

Peculiarities . Interesting recipe with lingonberries. Here the benefits of two northern berries are combined. If you have both, be sure to try this jam.

Compound:

  • cloudberries - 1 kg;
  • lingonberries - 1 kg;
  • sugar - 600 g.

How to cook

  1. Place peeled, washed and dried berries in a saucepan.
  2. Add sugar and mix gently.
  3. Simmer over low heat for 20 minutes.
  4. Ready. You can roll it up.

With honey

Peculiarities . You can enhance the healing properties of cloudberries with honey. This jam is not only super healthy, but also has an indescribable delicate taste and aroma.

Compound:

  • cloudberries - 1 kg;
  • honey - 1.5 kg;
  • water - 0.5 l.

How to cook

  1. Heat the honey slightly with water until it dissolves completely. But don't boil it.
  2. Pour the syrup over the cloudberries and bring to a boil over low heat.
  3. Cool.
  4. Repeat the steps twice more.
  5. Bring the mixture to a boil for the last time and cook for half an hour.

With white wine

Peculiarities . It is not known for certain where this recipe came from. But that doesn't matter. It is important what aroma white wine brings to the jam. The component is, of course, unexpected, but worth a try.

Compound:

  • cloudberries - 2 kg;
  • sugar - 2 kg;
  • lemon - 1 piece (large);
  • white wine - 750 ml (dry).

How to cook

  1. Pour lemon juice over the prepared berries.
  2. Mix half a kilo of sugar with a glass of wine and pour over the cloudberries.
  3. Let it sit for half an hour.
  4. Simmer on low heat for half an hour.
  5. Place into sterile jars.
  6. Make syrup from the remaining sugar and wine.
  7. Pour boiling syrup over the berries in the jars.
  8. Roll up the lids.

In a slow cooker

Peculiarities . “Smart pots” have already become a part of our everyday life. It is not surprising that housewives adapted the cloudberry jam recipe for cooking in a slow cooker.

Compound:

  • cloudberries - 1 kg;
  • sugar - 1 kg.

How to cook

  1. Place the cloudberries and sugar into the multicooker bowl.
  2. Mix gently with a silicone spatula.
  3. Leave for half an hour, let the berry give juice.
  4. Without closing the lid, set the “Extinguishing” mode.
  5. Time - 40-50 minutes.
  6. Skim off any foam during cooking.
  7. Ready.

This option is convenient when there is no access to gas stove, and the harvest needs to be processed, because cloudberries are a very fragile berry and cannot withstand transportation (they wrinkle and turn sour).

How to diversify your taste

Cloudberry jam itself has bright taste: Sweet, slightly citrus-like. But everything gets boring someday, and women’s irrepressible imagination pushes them to experiment... Here are several options on how to diversify the taste of cloudberry jam.

  • With an apple. It is better to take green varieties. Except interesting taste, you will also get a very unusual color. Grind the fruits in a blender or cut them into small cubes and add them during the process - ten minutes before the end of cooking.
  • With orange. Peel the citrus, remove the seeds and chop. Add during cooking. This jam will have a bright “sunny” color and an invigorating orange aroma.
  • With strawberries. Mix the berries with sugar before cooking, as in the recipe with lingonberries. The color of this jam is very unusual. If you don’t have strawberries, you can cook it with strawberries.
  • WITH pine nuts . Pre-fry the kernels in a dry frying pan. There is no need to fry too much - wait until the nuts “golden” and it will go delicate aroma. Add the kernels at the very beginning of cooking, but to the cloudberries that have already given juice. Cook a little longer than usual - about an hour.

Quantity additional ingredients You can vary it according to your taste or availability (how much you have). The amount of sugar is the same: if you don’t like sweets, reduce its dosage.

Interesting fact: beneficial features Cloudberry jam is preserved throughout the entire storage period, just like taste qualities product. Choose the recipe that you like best and seems most convenient to execute. And another tip: try adding a little of your favorite spice, for example, cinnamon or vanilla, and you will see that treating a cold is not only tasty, but can also lift your mood for the whole day.

Which is tastier: reviews

I am a water tourist. And I have been making preparations for the home for a long time. Since it is not possible to carry a lot of sugar with you in your backpack, and there is nothing to say about glass containers, my recipe is simple (it may not be correct, but the jam is stored for a long time). I pick the berries, put them in an aluminum cauldron, pour sugar on top (for 5 kg of berries - 1 kg of sugar), put it on the fire (the fire should not be strong), stir it while heating, and when it boils, skim off the foam. Cook without adding water for 5 minutes. I put the cauldron in the water so that the jam cools. And then the worst thing is - I take it plastic bottle, rinse it in running water (usually cereal is stored in these bottles while camping) and pour jam into it through an adapter. All is ready.

Olga Bykova, https://otvet.mail.ru/question/16718329

Cloudberry is a very healthy berry!!! By the way, cloudberry sepals are also useful for colds, kidney diseases...
Cloudberries can stand for a long time fresh, but in cold places, namely in cellars. And so, usually make the jam for five minutes (we make it from cloudberries and sugar, without water) and roll it up with lids. Very delicious compotes!!! Put cloudberries (0.5-1.0 liter) into 3-liter sterilized jars, then pour in hot boiling syrup, cover with clean gauze, let stand, then drain through this gauze, let boil and fill again and roll up the lids - such a compote costs as much as you like (even a few years)!!! Tasty!
You can also pass it through a juicer, but since there are a lot of seeds in it, it is better through a juicer that is attached to our regular meat grinder. Boil the same quickly with or without sugar and swirl. This filling can be added to cottage cheese...

I don’t like jam, so I don’t cook cloudberries at all... they are stored well in the refrigerator (I put a gauze with vodka under the lid) and in winter you open them fresh, mix with sugar and enjoy.

Something like this... put a tablespoon of sugar in the bottom of a saucepan (for about 1.5 kg of berries - I close two 700 gram jars). Make a syrup, when it boils, pour the berries in there and quickly stir in this syrup, just not too much so that the berries don’t fall apart. There is no need to cook, you don’t need a lot of syrup, just a little. Then transfer to a sterile hot jar and close.
