Cooking method:

1. Peel and chop the onion in large pieces. Take a blender bowl and add chopped onion, a clove of garlic and chop. If you don’t have a blender, finely chop everything with a knife.


2. Take a deep plate. Place fresh minced meat in it and beat in the egg. Add onion and garlic and add pre-washed rice. Season with salt and pepper.


3. Mix everything well and form medium balls from the mass. Place them in a frying pan, pour vegetable oil and fry on each side for 4 minutes.



4. Now you need to prepare the sauce. To do this, combine tomato paste, sour cream and water. Salt and pepper to taste.


5. Pour our “hedgehogs” with this consistency and simmer them under a closed lid over medium heat until the rice is ready.

  • Water - 100 ml;
  • Greens - 1 bunch.

Cooking method:

1. First, wash the rice and boil it for 10 minutes in slightly salted water.


2. Peel the onion and finely cut into cubes.


3. In a deep bowl, mix the minced meat, rice, and onion. Salt and pepper, add spices.


4. Form the meat mixture into balls and place them on a baking sheet greased with vegetable oil.


5. Wash and cut the tomatoes. Place them between the cutlets. You can also add additional chopped onions.


6. Separately, mix water and ketchup in a glass. Pour this liquid over each piece.


7. Sprinkle everything with grated cheese and finely chopped herbs on top.


8. Cover the baking sheet with foil so that it does not come into contact with the cheese. Place in the oven for 40 minutes, turning the temperature to 180 degrees.


9. When the time is up, remove the foil and leave to cook for another 15 minutes.


Meatballs in a frying pan in sour cream sauce

Ingredients:

  • Minced meat - 0.8 kg;
  • Onion - 2 pcs.;
  • Fat sour cream - 4 tbsp. spoons;
  • Pepper, salt - to taste;
  • Eggs - 2 pcs.;
  • Vegetable oil - for frying;
  • Carrots - 1 pc.;
  • Rice - 200 gr.;
  • Flour - for breading.

Cooking method:

1. Rinse the meat and chop into pieces. Make minced meat, or buy ready-made.


2. Pre-boil the rice for 10 minutes.


3. Now combine the minced meat, rice, eggs, salt and pepper.

4. Peel and cut the onion into cubes, add it to the minced meat. Mix everything well.


5. Pour oil into a frying pan and heat it up.


6. Use your hands to form round balls and roll them in flour.


7. Fry the workpieces in a hot frying pan until golden color. Then place them in a saucepan.


8. Take the carrots and the remaining onion, peel and grate. In a frying pan with the remaining vegetable oil, fry the vegetables.



10. Pour the resulting sauce over the meatballs, close the lid and simmer them over low heat for 25 minutes. Season with salt and pepper, and add a bay leaf if desired. Then serve with any side dish.


How to cook minced meatballs with rice in a slow cooker

So, I suggest you steam them in a slow cooker, and in the form of the most authentic spiny hedgehogs. If you don’t want to surprise, then in this miracle device you can cook them with gravy according to the previous recipes.

Ingredients:

  • Minced meat - 450 gr.;
  • Onion - 1 pc.;
  • Eggs - 2 pcs.;
  • Rice - 100 gr.;
  • Loaf - 30 gr.;
  • Salt, pepper - to taste.

Cooking method:

1. Boil the rice in the usual way until half cooked.


2. Now soak the loaf in warm water or milk. Add minced meat to the softened bread, beat in the eggs. Season with salt and pepper. Finely chop or grate the onion and also add to the mixture.

Ingredients

  • chicken egg - 1 piece
  • medium onion - 1 piece
  • salt, pepper - to taste
  • spices - coriander, cumin (to taste)
  • flour - 2 - 3 tbsp. spoons

For our tomato sauce

  • carrot - 1 pc.
  • medium onion - 1 piece
  • garlic - 1 - 2 cloves
  • tomato paste - 1 tbsp. heaped spoon
  • sugar - 1 tbsp. spoon
  • paprika - 1 tbsp. spoon
  • dill
  • bay leaf - 2 pcs
  • salt, pepper - to taste
  • boiled hot water

Preparation

Chop the onion. It is better if the pieces are very small, so that after cooking they do not stand out in the meat and do not crunch on the teeth.

Grate carrots onto fine grater.

Chop the garlic. If you don’t like it, you don’t have to add it, but then the dish will lose some of its flavor.

We use pork/beef minced meat, and if you want the meatballs to be more dietary, then chicken or turkey will do.

Boil the rice until half cooked, 10 minutes, then drain the water. You can take round grain or long grain rice, depending on which one you prefer.

Mix rice with minced meat, onion and garlic.

Put the egg there, salt, pepper, and add spices to taste.

Mix everything in homogeneous mass. You should get beautiful, aromatic minced meat.

We begin to form meatballs.

Scoop up the minced meat with a tablespoon and roll it into a ball between your palms. They should be the same size so that it doesn’t happen that some of them will already be ready, and those that are too large will remain raw.

If you wet your hands with water before molding, the stuffing will not stick to your hands.

Then each ball needs to be rolled in flour and placed on a cutting board.

Place our meatballs in a frying pan.

Fry until golden.

Place the fried balls in a separate pan.

It's time to prepare the tomato sauce. To do this, place the chopped onion in a frying pan and fry until soft and light golden brown.

Then add the carrots, and together they should simmer until the carrots become soft.

Mix tomato paste with sugar and place in a frying pan. Stir and simmer for another 3-4 minutes.

Pour 1-3 cups of boiling water into the frying, at your discretion. If you add less water, then the sauce will be thicker and there will be less of it.

If you add more water, then there will be more sauce and it will turn out more liquid.

Bring the sauce to a boil and add paprika, pepper, salt and bay leaf. Let it simmer for 5-7 minutes.

Pour in the prepared sauce meat balls and simmer everything together under the lid over low heat for 30 minutes.

Place the finished ones on a dish, pour over the sauce and sprinkle with fresh herbs.

These meatballs are not ordinary. There is no shame in presenting them even on a festive table!

Ingredients

  • beef - 400 gr
  • lard - 100 gr
  • fresh or frozen mushrooms - 180 -200 gr
  • onion - 1 - 2 pcs
  • potatoes - 8 pcs.
  • butter or vegetable oil - 100 g
  • salt, pepper to taste
  • flour - 2 - 3 tbsp. spoons

For gravy (sauce)

  • sour cream - 3/4 cup
  • butter- 50 gr

Preparation

Grind the meat and lard in a meat grinder and add salt to taste.

Beef can be replaced with other meat, including leaner ones, it’s a matter of your preference.

If you take frozen mushrooms, they need to be thawed.

You can use any mushrooms you like. We will have forest boletuses own workpiece, but they can be successfully replaced with champignons.

Boil the mushrooms in salted water for 10 minutes, then remove them to a paper towel. Cut into small pieces.

Chop the onion finely.

With wet hands, scoop up portions of minced meat and form meatballs the size of large walnuts. After making sure that the meatball is intact, without cracks, we put it in a pre-prepared form, where the meatballs and rice will be baked. We do not lubricate the form with anything.

I managed to divide the minced meat into exactly 15 meatballs, which filled my baking dish perfectly.


We send the form and ours for now raw meatballs with rice in an oven preheated to 200 degrees, where they will be baked until a barely noticeable golden crust. In time it is approximately 40 minutes.


While the meatballs and rice are browning in the oven, let's start preparing the sauce. Why is there any sauce in this dish? The fact is that although meatballs with rice are tasty on their own, baked in tomato sauce they break all taste records. During the baking process, the meatballs will absorb some of the sauce and become incredibly juicy. Tomato sauce will give meatballs with rice a bright color saturated color, and also enriches their taste.

How to cook this simple sauce for baking meatballs. In two glasses of water, dilute 3 tablespoons of tomato paste, a tablespoon of sugar (without a slide) and a teaspoon of salt, and also add a little ground pepper. Stir the sauce until the salt and sugar dissolve in the liquid. Tomato sauce for baking meatballs with rice is ready.


Take the meatballs and rice, browned by this point, out of the oven and pour in the freshly prepared tomato sauce. Then we send the form with the meatballs back to the oven and bake the dish for another 25 minutes.


As you can see in the photo, the meatballs with rice absorbed almost all the tomato sauce. The finished meatballs look very appetizing, and the aroma emanates from them, dare I say it, divine :)

Finely chop a few sprigs of parsley and sprinkle it over the still hot meatballs right in the pan. The aroma and taste of fresh parsley will perfectly complement the already perfect meatballs with rice.


We serve these meatballs with rice as a separate dish or with a side dish. It would be ideal with mashed potatoes. And don’t forget to pour the remaining tomato sauce over the meatballs and garnish in which they were baked. Bon appetit and see you again!
