200 g fresh raspberries, 200 g fresh strawberries, 4 celery stalks, a bunch lettuce, a handful of nuts (walnuts or pecans), 200 g of Adyghe cheese, balsamic vinegar, olive oil, salt, pepper.

How to cook?

5. Spanish soup gazpacho

What do you need?

5 large tomatoes, 2 sweet peppers (red and yellow), 1 small cucumber, 2 cloves garlic, salt, 1 teaspoon sweet paprika, 1 tbsp. spoon balsamic vinegar, 2 tbsp. spoons of olive oil.

How to cook?

Preheat the oven to 180 degrees. Place tomatoes and seeded peppers, cut into halves, on a baking sheet. Spray them olive oil, lightly add salt and place in the oven for 40 minutes. Meanwhile, puree the garlic, spices, balsamic oil and oil in a food processor or blender. When the vegetables are ready, add them to garlic sauce, chop and mix. You can add a little water - about 100 ml and put it in the refrigerator to cool. Before serving, garnish with chopped cucumbers, celery stalks and herb leaves.

6. Bulgarian soup tarator

What do you need?

½ liter of kefir, 2 cucumbers, 3-4 cloves of garlic, 10 chopped walnuts, 1 tbsp. spoon vegetable oil, 1 bunch of dill, 1 teaspoon of vinegar, pepper, salt.

How to cook?

Chop the garlic and put it in kefir, add oil and vinegar, mix. Add finely chopped cucumbers and leave to cool. Before serving, garnish with dill and nuts.

7. Cucumber-mint sorbet

What do you need?

150 sugar, ¾ cup water, a handful of fresh mint, 300 g chopped cucumbers.

How to cook?

Prepare mint syrup: Place water, sugar and mint in a saucepan and heat until sugar dissolves. Do not bring to a boil! Cool.

Peel the cucumbers and puree them in a blender. Add the cooled mint syrup and stir until smooth and silky.

When the mixture is ready, you can pour it into popsicle molds - then you will get a homogeneous fruit ice. If you want to achieve soft consistency sorbet, the mixture will need to be cooled in a large container and stirred every hour to break up the ice crystals. Before serving (at least 5-7 hours later), place the balls into the mold and let sit in a warm place for five minutes to soften the sorbet. Garnish with mint leaves.
