The amount of ingredients for herring under a fur coat depends on the scale of the holiday and the dishes in which you will cook it. It is best to take a large and deep semicircular salad bowl. Since we will be boiling most of the ingredients, we will talk about this separately.

How long to cook vegetables for salad

We will boil all the ingredients, except herring and onions, and then grate them on a coarse grater.

  1. Finely chop the onion and pour boiling water for 10 minutes so that it is softer and does not have a strong smell.
  2. The potatoes take about 30 minutes to cook, but for some they will be large, for others small, and the cooking time depends on this. In the process, pierce with a fork or knife to determine its condition.
  3. Carrots - also 30-40 minutes.
  4. Beets - cook for a long time, about 2 hours, if the beets are large, then maybe longer.

This dish is one of the most inexpensive on the holiday table.

Although eggs are not vegetables, we cook them too, for about 10 minutes, very hard.

Potatoes and carrots can be boiled together, beets separately, eggs also separately.

When everything is ready, drain the water and cool the vegetables.

To make eggs easy to peel, immediately after boiling, hold them under running cold water and leave for 5 minutes.

To cool vegetables faster, place them on a balcony or loggia.

Preparing all ingredients for herring under a fur coat

Before you begin the process of preparing a fur coat, you need to prepare everything. Let's break it down point by point again.

  • Herring - just cut it into cubes; if you took a whole fish, then clean it first.
  • Finely chop the onion, pour boiling water over it, and after 10 minutes drain the water.
  • Potatoes, carrots, beets and eggs - three on a coarse grater and put everything on different plates.
  • Mayonnaise - it will serve as an impregnation between layers. To make it spread easily, I will tell you one trick.

Take a little boiled hot milk and mix with mayonnaise so that the consistency is like sour cream and then the mayonnaise will be easy to spread and the impregnation of the fur coat will be more tender!

Stages of forming salad layers step by step

Take a large and deep salad bowl, grease the bottom big amount vegetable oil.

  1. Lay out the potatoes as the first layer, take half of the total amount. Distribute evenly over the entire surface.
  2. Lubricate with mayonnaise, not so that the vegetables float, evenly, but coat completely.
  3. Then we lay out the herring - also half and distribute it in the same way.
  4. Onion - spread half of the volume on top throughout the herring.
  5. Coat with mayonnaise.
  6. Carrots - also 1/2 part.
  7. Mayonnaise.
  8. The egg is half of everything.
  9. Mayonnaise.
  10. Beets - also half.
  11. We also coat it with mayonnaise.

Then we repeat all the layers from the beginning again. Potatoes, mayonnaise, herring, onions, mayonnaise, carrots, mayonnaise, egg, mayonnaise, beets and mayonnaise on top.

At this point, the process of preparing a two-layer herring is almost complete. Now all that remains is to put it in the refrigerator for 8 hours so that all our ingredients are soaked. It will turn out to be just an awesome fur coat.

Sometimes you don't want to bother with two layers of salad preparation. And you can do everything in one. The order of things is the same, just don’t divide the ingredients into 2 parts, but lay them out in the same order in one layer. There is certainly a difference in the sensations during the eating process, but when you don’t have time, you don’t have to worry about two layers of fur coat.

The form in which the dish is served can be different and depends on the flight of fancy of the cook.

How to cook herring under a fur coat


  1. First you need to boil the potatoes, beets and carrots until tender, then cool and peel them. If you use an egg for decoration, do not forget to hard boil it too. It is better to take a herring in a barrel - you will have to clean it yourself of bones and entrails, but it is much tastier than from a jar. So, when all the vegetables and herring are peeled, I start assembling the salad.

  2. The first layer is half a potato (after the fish hits the potatoes, it imbues it with its flavor). I peel two potato tubers and chop them on a coarse grater. I spread it in an even layer on a plate. I add a little salt on top, literally a small pinch of salt. I generously cover it with a mayonnaise mesh, and then spread it over the layer of potatoes, without pressing with a spoon, so that the salad turns out airy.

  3. The second layer is herring. I fillet the fish and cut it into medium cubes so that the taste of the saddle is clearly present in the salad. I spread it on top of the potato layer. I cover it on top a small amount mayonnaise (I don’t spread it with a spoon).

  4. Third layer - onion. I peel it and cut it into cubes. I put it on top of the herring, sprinkle it with lemon juice and add a little more mayonnaise (I don’t spread it with a spoon). Instead of lemon juice can be used table vinegar. If the onion is bitter, you can first scald it with boiling water and thoroughly squeeze out excess moisture.

  5. The fourth layer is carrots. I chop it on a coarse grater and spread it in an even layer on the salad, pour the sauce on top and gently spread it with a spoon, without squeezing the carrots.

  6. The fifth layer is the second half of the potato. I salt it on top and cover it with mayonnaise. I spread the sauce with a spoon so that the potatoes drink well.

  7. The sixth layer is beets. I spread it in an even layer and cover it with mayonnaise.

  8. On top you can decorate the “Shuba” salad with grated egg, which we boiled in advance. Or cut flowers from carrots and beets. Or sprinkle with finely chopped dill. I simply decorated the top with a mayonnaise mesh.
  9. The finished salad should sit in the refrigerator for at least 2-3 hours so that all its layers are thoroughly saturated with the sauce.

Traditionally, herring under a fur coat is served on holidays, in particular on New Year.

  7. Carrots can be cooked together with potatoes, just keep in mind that their cooking time is about fifteen minutes longer. Therefore, get the potatoes earlier. Boil with the skin on. After cooking, cool and peel. Grate on a large grater. In the salad, the vegetable is the fourth layer.
  8. Burak is boiled in its skin. Its cooking time is twice that of other vegetables. Check readiness with a knife. If the tool easily and softly enters the pulp, then the vegetable is cooked. Cool, peel, grate. The filling for the fifth layer is ready.
  9. When forming a salad, lay out the layers strictly in order, greasing with mayonnaise. Decorate the top layer with sauce by drawing a mesh.

A less common option is to serve in large red wine glasses. This portioned version looks amazing. All layers are clearly visible, causing an appetite and a desire to try the colorful dish as soon as possible.

    You will need:

    • 100 gr. red fish;
    • 1 onion;
    • 1 beet;
    • 2 potatoes;
    • 1 carrot;
    • 2 garlic cloves;
    • 100 gr. mayonnaise;
    • 30 gr. dill.

    Delicious herring under a fur coat recipe:

    1. All vegetables need to be washed and boiled separately from each other. After cooking, cool and peel. Then grate using a grater for this purpose.
    2. Remove the bones from the fish and finely chop the fillet. Mix the crushed mass with very finely chopped herbs and crushed garlic using a press.
    3. The onion needs to be peeled and chopped.
    4. Place the fish in the salad bowl first and cover with a layer of onion, which, like all subsequent ones, should be soaked in mayonnaise sauce.
    5. Then add carrots and potatoes.

    I am not ready to claim that the recipe I described is truly classic and correct. Of course, we will not be able to accurately reproduce what was served in the taverns of the 19th century. But I don’t think there’s any point. The main thing is that what we do will be tasty and healthy. In principle, this is the sequence in which the ingredients will be located below, and this is how we need to lay the layers of our herring under the fur coat.

    1. Potatoes 1 pc. (why he comes first, I’ll explain below)
    2. Salted herring (preferably in barrel). It is possible to use preserves in a jar.
    3. Again potatoes 2 pcs. (total: 3 pcs.)
    4. Onion 1 pc.
    5. Eggs 2 - 3 pcs.
    6. Carrots 2 pcs.
    7. Beetroot 3 pcs.

    You will also need: 1 pack of mayonnaise, or homemade mayonnaise, which is better. Because it changes the taste quite significantly, you can make it a little spicier or a little sour, according to your taste. How to do delicious mayonnaise, I’ll tell you later, in a new publication.

    So let's get started. Step one - preparing the ingredients:


    After washing, we throw our root vegetables into the pan: potatoes, carrots, beets, fill them with good water and cook until tender.

    I’ve met people who write that all these ingredients need to be boiled, each in a separate container. But we won’t be perverted, we’ll just boil everything together. Taste difference You won’t notice here, but we’ll remove the show-off and our importance.Don’t forget that beets need more time to cook (about 20 minutes). But the eggs can be boiled separately.

    OK! Everything was cooked. Place on a plate and wait until it cools. Now the most unpleasant part (at least for me) is peeling boiled vegetables.

    We dealt with this too, peeled the eggs, put everything on plates and that’s it, ready! You can serve it on the table! This is what a herring looked like under a fur coat in the mid-19th century... Just kidding!!!

    You can immediately grate all the vegetables on a coarse grater. Go ahead.

    Onion. You can simply cut it into small cubes and put it in a “fur coat”, just like it is. Or you can marinate, thereby getting rid of the pungent smell and bitterness of onions, it’s not difficult. I prefer the natural option.

    If we marinate, then: pour chopped onion into a glass warm water, add 1 tablespoon of 9% vinegar, 1-2 tbsp. spoons of sugar, mix and wait for 10 - 20 minutes.

    Clean and prepare the herring. What can you do, this action must be performed. If it is a whole herring, then it is done approximately like this:

    We put the fish on cutting board, cut off the head, rip open the abdomen and clean the insides, rinse. We get rid of the fins, tail, remove the skin.

    By cutting along the ridge, we are dividing more than two parts. We remove the largest bone, the spine.

    Now let's be patient and get rid of small seeds. Now all that remains is to cut the cleaned carcasses into small pieces. Voila! And we did it! The bridgehead is ready.

    Let's proceed to the main action - sequentially laying layers of herring under the fur coat

    Deciding on the dishes. This could be a wide salad bowl, a large salad plate, or a so-called herring bowl.
