Baking from flour - recipes

Rice flour pancakes

These pancakes turn out beautiful, but unlike those baked from wheat flour, they are a little tougher and crispier. Make as many pancakes as you can handle at one time. Be prepared for the fact that you will have to get used to pancake dough made from rice flour without eggs and milk, it is capricious, but you can adapt to it.

Ingredients: rice flour – 250 g; glass of water; 1 tsp. salt; 2-3 tbsp. l. Sahara; sunflower oil odorless - 50 g and a little more for greasing the pan.

Mix all ingredients except flour. When the sugar is completely dissolved, add rice flour little by little, after sifting it to make the pancakes softer. When the dough is ready, it may seem a little runny at first, so let it sit for about 20 minutes. During this time, the flour will absorb moisture and swell, and the mixture will become a little thicker.

If you have a non-stick frying pan, use it. Heat it thoroughly and grease it with oil, scoop out a little dough, stir it, and pour it into the frying pan. Try to immediately distribute the mass over the entire surface. The baking process is almost no different from making pancakes from wheat flour, it’s just that the dough is a little unusual in color and not as pliable.

How can you tell when it’s time to flip a pancake? When many bubbles form on its surface and the dough itself begins to change color from white to transparent, slightly lift the edge with a spatula. If the bottom of the pancake is browned, try moving the spatula closer to its center. If it works, turn it over. When the center is not baked enough, the pancake wrinkles and sticks. In this case, just wait a few more seconds and then try again.

The second side cooks a little faster, so don't hesitate. Place the finished pancakes on a plate, greasing them with butter (optional). Before adding the next portion of dough to the pan, stir it again. Do this every time because the rice flour will settle to the bottom when it rests.

These pancakes can be eaten with honey, jam, jam, condensed milk or syrup, provided that these products are not contraindicated for you.

Here are some other baked goods made from rice flour that are possible for allergies:

Let's prepare the ingredients. Take equal amounts of prunes, dried apricots and raisins for a total of 200 grams of dried fruit. Choose from a large apple or pear. You will also need Apple juice– 100 g; rice flour – 0.5 cups; corn - 1 cup; starch – 30 g (preferably corn); vegetable oil – 40 g, a pinch of soda (quench).

First, let's deal with dried fruits - they need to be soaked in boiling water for about a quarter of an hour, and then finely chopped. Now chop the apple into pieces and then use a blender to turn it into a paste. If you don't have a blender, grate fine grater, and mix its pulp with the prepared juice. After sifting the flour, combine all the ingredients, including apple or pear puree. You should get a homogeneous viscous mass with pieces of fruit. Fill greased muffin tins with it and bake for half an hour at 180 degrees.

First, sift the flour so that it is saturated with air, mix it with all the dry ingredients, except sugar. Now take butter, banana and sugar and beat these ingredients until homogeneous mass. Combine it with the bulk flour mixture gradually, mix well.

Let's prepare fruits and nuts. After pouring boiling water over the raisins, wait until they become soft, then drain the water. Chop the apple and nuts. Add these ingredients to the dough and mix again. Ready! Cover the baking tray with baking paper. Make small pucks from the dough, similar to cheesecakes. You can use some improvised means to give shape to future cookies. Preheat the oven to 180 degrees and place your creation there for 15-18 minutes.
