Today I cooked pancakes with boiling water and kefir, they are incredibly tasty and tender, and they are all lacy, with a hole, and thin. As my husband noted, you can strain vermicelli through pancakes.

From the specified amount of ingredients I got 35 pancakes. I baked it in a frying pan with a diameter of 15 cm.

The pancakes turn out not even thin, but rather thin. Most important secret, pour half a ladle of dough into the frying pan. And also fry them in a hot frying pan.

This recipe can be watched in a 2-minute video from photographs, which is presented at the end of the article.

Kefir pancakes with boiling water - openwork, thin, with a hole, recipe with photo

The recipe is simple and ideal; frying pancakes is a pleasure, as they really all come out in a hole.

Kefir

Kefir is one of the important ingredients in these pancakes. You can use homemade (country) kefir or store-bought.

I use homemade kefir from milk. If you are going to use this kind of kefir for dough, then don’t take it. fresh product, because fresh kefir not sour. But if kefir stands for at least a day at room temperature it will already be more sour.

If you buy kefir in a store, then take at least 2.5% - 3.2% fat content. I hope this has been sorted out.

Prepare the ingredients and a bowl in which you will knead the dough. Beat 2 eggs into a bowl, I use country eggs. Add salt and sugar.

I use the whisk attachment on my blender to beat. But without fanaticism. Next I pour in warm kefir. I heat the kefir a little, but only so that it becomes warm, not hot. I have 0.500 ml. kefir

I mix everything with a whisk. I sifted the flour first. I have exactly 2 glasses, 250 gram glasses.

Pour out the flour in portions, I pour out one glass and mix everything with a whisk, and then a second glass and mix again. Here you can already do a good job so that there are no lumps.

The result is a homogeneous dough. The dough turns out like pancakes, thick.

Pour boiling water in a thin stream into the pancake batter. At the same time, beat the dough with a whisk.

We continue to beat the dough for pancakes with whisks, the dough will no longer be so thick. Next, I add vegetable oil to the dough, mix everything and leave for half an hour at room temperature. I usually leave it on the kitchen counter. Sometimes they say. “Let the dough rest.”

Fry pancakes in a hot frying pan. For the first pancake, I grease the pan with vegetable oil. Sometimes the first pancake turns out to be lumpy, it is even considered normal when the first pancake is lumpy. But this is most likely due to the frying pan not being hot enough.

I admit honestly that my first pancake was, as expected, “lumpy”; I hurried to pour in the dough. I even thought that I needed to add a little flour. But when the frying pan was hot enough, the pancakes turned out amazing, in a hole. That's why I didn't add any flour.

Pour the dough from the center to the edges; it’s more convenient for me to do this by weight, and as if turning the pan so that the dough spreads and forms a circle.

To make the pancakes thin, pour in half a ladle of batter.

The pancakes turn out to be delicate, holey and thin, so during the baking process I realized that the proportions in this recipe are ideal.

Fry pancakes on both sides. My frying pan has a non-stick coating. To fry or not, decide for yourself.

We don't like burnt pancakes, so I try to make them brown without burning. I turn it over with a special spatula.

During the frying process, if necessary, the frying pan should be greased with vegetable oil or a piece of lard, whichever is convenient.

This is how we fry each pancake. I stack the pancakes. Each pancake can be greased with butter. But I don’t do this because the pancakes turn out greasy. But that's my opinion.

My mother, for example, always greases every pancake with butter, and it doesn’t matter what recipe she uses. This makes the pancakes softer, tastier and with creamy notes.

I already wrote above, but I repeat, my frying pan is small, 15 cm in diameter. I got exactly 35 pancakes from this amount of ingredients. I specially counted it.

Ready-made pancakes can be served with honey, jam, jam, sour cream, condensed milk, chocolate, and also stuffed with various fillings.

We recently stuffed pancakes with cottage cheese and baked them in the oven with sour cream. Pancakes with cottage cheese in sour cream are tender and very tasty. If you like it, you can try it. Today I don’t stuff pancakes, but serve them with honey, jam and sour cream.

Decide for yourself what to do with the pancakes. My grandmother, for example, treated all her neighbors to baked goods on Maslenitsa. On Easter, I also treated my neighbors to pies.

The pancakes taste excellent, everything in moderation, there’s enough of everything. But I definitely recommend trying the pancakes when baking and adding sugar, for example, if it’s not enough for you. But if you serve pancakes with jam, then you don’t need sugar, since pancakes made with boiling water and kefir can be sickly sweet.

Thin custard pancakes made from kefir and milk - the simplest recipe

This recipe is quite successful because without special effort you can bake a whole bunch of delicious culinary delicacies. Because the dough will be kneaded correctly and therefore the structure of the pancakes will be quite bubbly and at the same time this will give us that very patterned effect, in other words, delicacy.

I don’t know why, but it is milk + kefir or sour cream that gives the dough an excellent consistency, so be sure to test this option live and then write a review. I really liked this look, I advise you to try it too.

We will need:

  • kefir or sour cream - 1 tbsp. or 250 g
  • sugar - 2 tbsp
  • water - 5 tbsp
  • soda - 1 tsp
  • milk - 1 tbsp. or 200 ml
  • egg - 2 pcs.

Cooking method:

1. Break the chicken eggs into a large, convenient bowl and immediately add salt and sugar. If you want the pancakes to be sweet, add 2 tbsp. granulated sugar, if ordinary and unleavened, then 1 tablespoon will be enough. Mix everything thoroughly with a regular hand whisk.

Then add sour cream or kefir, and mix everything as usual, take your time.

2. Add sifted flour and soda and stir; the mass will become quite dense and difficult to stir. As you can see, the dough turned out thick, it needs to be diluted with milk and hot water. I am often asked what kind of milk should be added, I always take unboiled milk.

Do this exactly so that the dough turns out without lumps.

3. Gradually the mass will begin to liquefy and become liquid. Cover it with a lid and let it rest for 20 minutes.

4. Then all that remains is to fry the prepared creations in a frying pan. It is important to bake in a very hot frying pan, then your first pancake will definitely not be lumpy))), having previously greased it with vegetable oil so that nothing sticks.

5. Serve the pancakes immediately warm, pour them with strawberry or These are so cool and delicious treats it will work out! Bon appetit!

Thin pancakes with kefir - so simple and straightforward, sometimes become an impassable quest for beginners. And the main problem is how to turn them over without tearing them. Do you think this requires some special technique? Nothing like this! We need a simple and proven recipe. With a secret, of course. And you will find out this secret right now. I'll teach you how to bake great pancakes on kefir, thin with holes, the recipe is simple and clear, you don’t have to measure anything by eye. The same amount of the main ingredients goes into the dough - exactly one cut glass. And even if you don’t find a glass of the required size, it doesn’t matter - use a mug, because in this recipe the main thing is the proportions of liquid and flour, and even if you want to mix them up, you won’t be able to mix them up.

Ingredients:

  • Flour - 1 glass of 250 ml,
  • Kefir 1% fat – 1 glass,
  • Boiling water – 1 glass,
  • 2 eggs,
  • 2-3 tablespoons of sugar (with two almost unsweetening),
  • ½ teaspoon salt,
  • ½ teaspoon of soda,
  • 3 tablespoons vegetable oil

How to cook thin kefir pancakes with holes

The beginning is traditional - beat eggs with sugar and salt. Without diligence. A couple of minutes is enough to get it like in the picture.

Add kefir. Let me remind you that the fat content of kefir should be no more than 1.5 percent. Mix.

Now it will go secret ingredient, which will help us make thin-pre thin pancakes on kefir. This ingredient is boiling water. Put a kettle of water on. Most are electric and boil water in two minutes. Next, pour the boiling water into a measuring cup. To prevent the glass from cracking, pour slowly. Brewing rule pancake dough very simple - take a broom in your right hand, begin to stir the dough and, without stopping, take it in left hand container with boiling water (be careful not to burn yourself, use an oven mitt!) and pour into the dough in a medium stream. I didn’t film the process because I only have two hands. But you see the result. The dough has already foamed.

Next up is flour. I especially like this recipe because there are no discouraging phrases “approximately”, “all flour is different”, “look at the consistency”. Exactly a glass of flour. And you don’t have to peer into the thickness of the dough in the hope that it will suddenly dawn on you - this is finally the consistency you were looking for... I took a photo so you can see what “a glass of flour” means. Do you see the hill from above? Make the same one.

Pour the flour into the bowl with the dough and mix with a broom. It disperses well in hot liquid - no lumps remain.

All that remains is to add soda and vegetable oil. So I showed how much soda I put in. This is a coffee spoon - its volume is about half a teaspoon. You can, in principle, put in a third of a teaspoon. But then the holes can be smaller.

The kneaded dough has already started to bubble - soda quickly reacts with sour kefir.

The dough turns out very liquid. So much so that in poor lighting it was not even possible to clearly capture the process of the dough dripping from the spoon. It drains very quickly. Liquid.

That's it, you can fry it. Place the frying pan on high heat. I know that many people grease the pan with oil only for the first time, but I literally pour two or three drops of oil before each pancake. To make sure the pancake doesn’t stick, and it looks prettier than those fried in a dry frying pan.

When the frying pan is hot, scoop up 2/3 of a ladle of dough and pour it strictly into the middle of the frying pan, and then begin to turn and tilt it in different directions so that the dough spreads. As you can see, holes appear on the pancakes immediately.

Fry for 2 minutes, turn over to the other side, another two minutes. The kefir pancake is ready. I took it out to light. And you saw this photo at the beginning of the recipe. Holes - the sea. Pancakes rolled into triangles and placed in a row on a plate also look impressive.

These pancakes have a neutral taste - they can be served with jam, sour cream, or berry sauce, they are also suitable for stuffing.
