The dish turns out very juicy, tasty and satisfying if you add mushrooms to the recipe. To make liver cake with mushrooms at home, you will need the following ingredients:

  • 1 kilogram of pork liver
  • 4 eggs
  • 100 grams of milk
  • 60 grams wheat flour
  • 400 grams of champignons
  • 2 onions
  • 2 carrots
  • 2 packs processed cheese
  • 120 grams of mayonnaise
  • 5 cloves garlic
  • Salt, pepper, spices - to taste
  • Sunflower oil for frying

Preparation progress:

  1. For the first stage you will need a meat grinder. Using it, twist the liver, one onion, add two eggs, flour, milk, salt, pepper and mix. It turned out to be minced meat. It should be mixed thoroughly.
  2. Heat a frying pan and use a spoon to form thin round pancakes from the resulting minced meat. For a standard size you will need approximately 5 tablespoons. Fry them until fully cooked on both sides.
  3. The remaining onions should be peeled, finely chopped and fried.
  4. Rinse the champignons well, cut and fry until cooked (the liquid should completely evaporate).
  5. Combine onions and mushrooms, add carrots cut into strips. All this should be salted, peppered and sautéed until the onions are golden brown.
  6. Let's make the sauce. Chop finely chopped dill and garlic through a garlic press into mayonnaise. Ready sauce leave for half an hour so that the aroma of garlic and herbs is distributed evenly.
  7. Place the first pancake on a flat dish and spread the mushroom filling on top. Cover with the second pancake and spread melted cheese on top. Alternate the fillings, then you will get a very fragrant and beautiful liver cake. Ideally – 2 pancakes with mushroom filling and 1 with cheese spread.

Tip: after finishing cooking, do not rush to serve your cooking masterpiece. Let it sit in the refrigerator for several hours so that all the cakes are soaked.

Liver pie in a slow cooker

In a slow cooker, almost everything can be cooked quickly and without extra effort. You can also make a delicious and juicy liver cake with aromatic vegetable filling in it.

Ingredients:

  • 700 grams of chicken liver
  • 5 tablespoons flour
  • 3 eggs
  • 1 teaspoon baking powder
  • 70 ml milk
  • 2 onions - for the crust, 5 onions - for the filling
  • 3 tablespoons vegetable oil
  • Salt, pepper - to taste
  • 3 carrots
  • 200 grams of mayonnaise
  • Green onions

Preparation progress:

  1. Liver in this recipe you can take chicken, beef, pork - it doesn’t matter. It must be washed thoroughly and removed excess fat or films.
  2. Cut the onion in half and pass through a meat grinder together with the liver, stir.
  3. The next step is to add eggs, flour, milk and baking powder to the minced meat. Add salt and pepper to taste. Stir well so that there is no residue left flour lumps or homogeneous clots of one ingredient.

Ingredients:

  • 800 grams of chicken, beef or pork liver

For myself I have determined this simple proportion recipe: for every 200g of chicken liver add 1 egg, 1 spoon of sour cream 20%, 1 tablespoon of flour - such pancakes do not stick, do not break and are tender.

Their thickness is about 3 mm. Fry as you are used to frying regular thin pancakes in milk.

And so that they succeed and turn over well, make cakes with a diameter of NO more than 20 cm. The smaller the diameter of the frying pan, the more convenient it is to turn over and cook pancakes.

The frying pan should be oiled and well heated, I grease it with oil only before pouring the dough for the first time, but if you are afraid, grease it every 3-4 pancakes.

Wash the chicken liver, thoroughly remove films and remnants of the gallbladder (green).

Connect the liver and raw eggs in a large bowl. Add 3 tbsp. fat sour cream. Add 3 tbsp. flour. Beat everything with a blender. Add 1/2 tsp. salt. Mix.

Heat the frying pan (it must be clean and dry) thoroughly with 1 tbsp. l. oils Just before frying the first pancake, you should grease it with oil. In a ladle, you need to add a volume of liver dough sufficient for a thin pancake (3 mm) and completely cover the entire surface of the pan.

For my 20 cm frying pan, I take 1/2 a ladle, pour it onto a well-heated frying pan and spread the dough over the surface in a circular motion.

You need to fry the pancakes over medium heat, as soon as the pancake “seizes” and begins to move away from the edges of the walls (after 1-2 minutes) and almost ceases to be pink, carefully pass the spatula under the pancake and, making sure that it does not stick anywhere, turn it over onto a raw side.

Turn over in one confident motion. Even if the pancake is torn, don’t worry, finish frying it and place it among the layers in the cake - it will “camouflage” perfectly.

Fry for about 1 minute more, turning over, or until browned.

Chop the onion. Grate the carrots. In a frying pan, fry a mixture of onions and carrots over medium heat for 7-10 minutes. Salt (1/2 tsp salt), pepper (1/5 tsp)

Cool and divide by the amount required for each layer so that the frying is evenly distributed in the cake. There is no need to put the carrot-onion mixture on the last pancake, so if you have 10 pancakes, you need to divide the mixture into 9 servings.

Peel the garlic and squeeze into mayonnaise. Place the pancake on a plate. Coat with 1 tbsp. mayonnaise with garlic.
