For one serving we will need:

  • Pumpkin pieces – 350 g
  • Sugar – 1 tbsp.

Wash the pepper, remove seeds, and chop into strips. Peel the carrots and grate them on a coarse grater. Divide the peeled onion into 4 parts and cut into strips. Wash the tomatoes, scald with boiling water, remove the skin and chop into small cubes. Chop the meat into medium cubes.

Place the frying pan on the fire, heat the vegetable oil in it and fry the meat until half cooked over medium heat, stirring constantly. Wash the pumpkins well. Cut off the top, which will act as a lid. We free the fruits from the entrails. It is important that the pumpkins stand up straight when baking, so if necessary, trim the bottom so that the fruit stands up securely.

Cut the meat into medium-sized pieces. Grate clean carrots on a coarse grater or cut into small cubes. Peel the onion and chop finely. Chop the champignons into medium cubes. Peel the potatoes and chop them into cubes. Chop the celery into small pieces.

Heat oil in a frying pan and fry briefly meat pieces so that they turn white. We don't need it to be completely ready. We want it to fry in hot oil, but still be juicy inside.

After a couple of minutes, add onions and carrots and fry for 2-3 minutes. Now add celery, mushrooms, potatoes. Mix well.

Add half a glass boiled water, seasonings, salt, mix thoroughly and add potatoes. Simmer the mixture for a couple of minutes and remove from heat.

Stuff our pumpkin pots with the mixture. Pour the liquid that formed during stewing equally into each pumpkin. Spread sour cream on top. Cover with lids.

To prevent them from falling during baking, you can secure them with toothpicks. Preheat the oven to 180 degrees, place the baking sheet for about 1 hour, then turn the temperature to 130 degrees and simmer for another 30 minutes.

We check the readiness with a fork; as soon as the skin has become soft and can be easily pierced, it’s ready. We take the pumpkins out of the oven, transfer the filling to a dish along with the pulp.
