When the meat is sufficiently soaked, we begin to sauté 4 onions and 800 g of porcini mushrooms in oil. In another frying pan, lightly fry the marinated rabbit meat. Next, take a pan with thick walls and put mushrooms with onions, 3 diced eggplants and carrots in it in layers. At the same time, sprinkle each layer with salt, pepper and chopped garlic. Pour water into the pan so that it covers all the ingredients and simmer for 40 minutes on the lowest heat. Then put 500 g of sour cream in the pan and let the stew sit for a few more minutes. When serving the stew, you can garnish it with a sprig of spicy arugula.
