  2. It is advisable to remove the skins from tomatoes in advance. This can be done as follows: the tomato skin is slightly cut at the top, and then the fruit is dipped in boiling water for 1-2 minutes. Take out the tomatoes and peel off the skin. The skin comes off very easily, without any difficulty, but the flesh remains intact.

You can use containers with a volume of 1.2, 3 liters. All jars must be sterilized before preparing the product. Sterilization is carried out over steam or the container is heated for one hour in the oven.
  5. Use of metal lids. To seal the jars you need an airtight lid. The twisting elements weaken over time and allow air to pass through, so the workpiece quickly deteriorates and does not last long. Plastic lids also have good flow capacity. Roll-up lids are durable. With them, air will definitely not get into the workpiece, it will be reliably protected.

Important! Cans are sterilized on the day of preparing tomato juice.

Tomato juice recipes

The most delicious and quick recipes tomato juice are described below. The average time spent on preparation is 80-90 minutes. IN specified recipes It is not necessary to use a juicer; a blender, meat grinder or regular sieve will do.

Through a meat grinder

The meat grinder perfectly turns the tomatoes into puree, so you can hardly feel the skin. After twisting, you can place the mixture in a colander to remove seeds and peels.

Ingredients:

  • 2 kilograms of ripe tomatoes;
  • half a glass of sugar;
  • 2 tbsp. l. salt;
  • 1 tbsp. l. vinegar 6%.

Hot cans are rolling up metal lids and after cooling, put it in a cool, dark place.

Classic recipe using a juicer

The most common way to obtain tomato juice is to run the fruit through a juicer. With this method, all the cake remaining from the fruit does not end up in the finished product.

To prepare you will need:

  • 2-2.5 kilograms of sweet tomatoes;
  • half a glass of water;
  • 2 celery roots;
  • 4-5 tbsp. l. Sahara:
  • 2 tbsp. l. salt.

Use a juicer to extract juice from tomatoes and celery, dilute it with water and put it on the stove to heat. Boil the contents for half an hour, and then add salt and sugar. Keep the pan on the stove for another 20 minutes. Hot juice is poured into jars and covered with a lid. The jars are turned over and covered with a warm blanket. They are kept in this position until they cool completely, and then they are put into the refrigerator or cellar.

Attention! If the juice is too thick, dilute it with water. Tomato pulp mixes well with any liquid.

Through a sieve

If you don’t have a juicer or meat grinder at home, you can use handy items in the kitchen: a sieve or colander. It is advisable to take an object with a fine mesh or holes so that the skin and seeds do not fall into the liquid mass.

Ingredients:

  • 1.5-2 kilograms of tomatoes;
  • 3-4 tbsp. l. Sahara;
  • 1 tbsp. l. salt;
  • 1 tbsp. l. vinegar;
  • half a glass of water.

Sliced tomatoes are placed in a saucepan and half a glass of water is added. The mixture is brought to a boil and cooked for 20-25 minutes. Then, when the pulp is well boiled, the contents of the pan are thrown into a sieve and colander to separate the juice from the seeds and peel. The resulting liquid mass is heated again, salt and sugar with vinegar are added, boiled for 6-7 minutes and the heating is stopped. The finished product is poured into containers, allowed to cool and stored.

Using a blender

Blender grinds tomato pulp in a few seconds, while the skin grinds well and is not felt.

Products:

  • 2-3 kilograms of tomatoes;
  • 1/2 cup sugar;
  • Art. l. salt;
  • nutmeg, on the tip of a knife;
  • black pepper, 1/2 tsp;
  • Art. l. vinegar 6%.

The skin of the tomatoes is separated in advance, and the pulp is cut in half and crushed with a blender. The resulting slurry is placed in a deep saucepan. Add sugar, salt and spices to the pulp, and then heat for half an hour. After 30 minutes, add vinegar and monitor the consistency of the product: it should be thin, but not completely liquid. Continue to boil the mixture for another 15-20 minutes, and then pour it into jars. The container filled with juice is placed in a large pan of water and the heat is turned on. Sterilize the jars for 10-15 minutes and close the lid. Tomato juice ready.

In a slow cooker

Instead of usual pan Many housewives prefer to use a slow cooker. The cooking time in it is reduced by 10-15 minutes, and the taste is more concentrated.

Ingredients:

  • 1.5-2 kilograms of tomatoes;
  • 2 tbsp. l. Sahara;
  • ½ glass of water;
  • tbsp salt;
  • 2 tsp vegetable oil;
  • black pepper to taste;
  • a couple of peas of cloves;

Half a glass of water is poured into the multicooker, and then the chopped tomato slices and turn on the soup cooking mode. Boil the slices until a homogeneous reddish paste forms. Pass the mixture through a colander, keeping only the liquid part. Grease the bottom of the multicooker container with oil and transfer the remaining tomato mass, sugar, salt and spices into it. Close the lid and cook for 15-20 minutes. Open the lid after the time has elapsed and remove the pink foam from the surface. Pour the juice into jars, close the lids and turn over until cool.
