1. In fact, you can take any liver - chicken, pork or beef. This will not affect the cooking method. For my taste, chicken makes the best delicate cake because it is the softest. It will also be very good with veal liver, it contains less bile than beef liver and more useful microelements.

And the first thing you need to do is clean all the films. This can be done easily if you use one good method.

Fill the liver hot water(about 70º), but not boiling water, and leave for 3-5 minutes. After this, the film can be easily removed.

Another option is to grate coarse salt surface of the offal or pour over lemon juice. This will also help you remove unnecessary films with ease.

2. Scroll the cleaned main product through a meat grinder. You can also use a blender. In the latter case, you will get a more homogeneous and smooth mass.

3. Since milk is not added to the dough, you need to beat in 5 eggs. This way the pancakes will turn over well, won’t break, and will be the right thickness. Add salt and pepper to taste. Mix everything, you can do this with an immersion blender or a hand whisk.

6. You need to cook on medium heat, not high. When the top is set, flip the pancake over with a spatula. Fry on each side for about 1-2 minutes until golden brown.

7. If after the first cake there is oil left in the pan, then there is no need to pour it again. Or you can add a couple of tablespoons of butter to the dough itself. Continue baking the remaining cakes in the same way.

8. Stack all the liver preparations and let them cool. Now you need to make the “cream” for the cake. Cut the onion into small cubes and grate the carrots fine grater. Place vegetables in heated vegetable oil and simmer until done with the lid closed. This will take about 10 minutes. Lightly salt the filling while simmering. If desired, you can add spices to taste.

9. Cool the finished filling and you can start assembling the cake. Don't forget to prepare some more for greasing the pancakes. Place the first liver cake on the dish, spread the vegetable sauté on top, then brush with mayonnaise.

To make the cake easier and faster to assemble, simply mix the mayonnaise and filling. You can also blend the resulting mass with a blender, it will look like real cream. Fans of greens can add them fresh to vegetables.

10.Cover the filling with the second pancake and press it down lightly. And then continue to lubricate it with sauté and mayonnaise. Collect the whole pie this way.

If you have a lettuce ring available, you can use it while baking the first side to ensure even edges.

4.Bake all the cakes, stack them in a delicious stack and start preparing the filling. Cut the carrots into strips and the onion into cubes. Fry these vegetables together in vegetable oil until cooked. You can add a little salt and pepper. Taste what softness you want to feel in your cake, and leave it there. For some reason, beef liver is not so often used in home kitchen, usually in the form of a pate, although its benefits are known. Not everyone loves it, or maybe they haven’t even tried other dishes made from it. It’s completely in vain, because a lot of goodies are prepared from it.

For example, liver cake is delicious, nutritious dish, although of course because of the mayonnaise, diet cake you can’t name it, but you can find a replacement for mayonnaise if it doesn’t suit you. By the way, not only beef liver is suitable, but chicken liver is also perfect; the liver cake from it will be more tender.

The main difficulty in cooking is that the pancakes are too fragile, it is inconvenient to turn them over, and they are very brittle. But even if the pancakes are broken, it’s okay - fold the pancakes end to end, it won’t be visible even on taste qualities will not affect.

Ingredients:

  • beef liver (0.7 kg)
  • large chicken eggs (5 pcs.), two for dough and three for decoration
  • premium wheat flour (half a cup)
  • milk (1/2 cup)
  • medium onion (3 pcs.)
  • small carrots (3 pcs.)
  • garlic (3 cloves)
  • mayonnaise (500 g)
  • vegetable or olive oil
  • herbs for garnishing the finished dish

Liver cake - step by step recipe:

  1. Peel, finely chop the onion and throw in a frying pan. Pour a little oil, otherwise excess oil will flow down from the plate and spoil the appearance. Peel the carrots, grate them with a coarse grater, throw them into a frying pan with onions and fry them.
  2. Put three eggs to boil (for decoration), hard boil and cool. Wash the beef liver, dry it, it is advisable to strip it of the film with veins, cut it into small pieces. The carrots and onions are fried, let them cool and put them in a bowl. Liver cake recipe with photos.
  3. Grind the beef liver into pancakes with a meat grinder, add two chicken eggs, milk and flour, salt and pepper and mix.
  4. Prepare the sauce for greasing the liver pancakes - chop the garlic, add to the mayonnaise and stir.
  5. Frying pancakes for liver cake. Heat a frying pan with oil, put the gas on medium, lay out some of the dough, bake the liver pancake. Now the most difficult part begins - turning over the liver pancakes. To be honest, almost all of my pancakes broke, well, not much, partially. Place the broken pieces of liver pancakes end to end.

When flipping the pancakes, for convenience, I took two spatulas at once. Liver pancakes should not be made too thin, otherwise they will break even more. There is a way of flipping pancakes (it really didn’t help me, but maybe you’ll have better luck): if the pancake is fried on one side, then it rolls out of the frying pan onto the dish without any difficulty, then you put the liver pancake back on the frying pan on the other side and fry.

  1. When the first pancake is fried, remove it to a dish - brush the pancake with the prepared garlic-mayonnaise mixture, and top with a layer of fried onions and carrots. Repeat the algorithm for the remaining pancakes.
  1. When the pancakes are fried and greased (there is no need to put frying on the top pancake, just brush it with sauce), you need to decorate the cake. Excess oil leaked onto my plate and I put napkins on it to catch it.
  1. Let's separate y boiled eggs yolk and white, grate the white - coarsely, the yolk - finely.
  2. You need to level the cake a little and spread the sauce that has leaked from the sides; if there is not enough sauce, add and spread regular mayonnaise around the edges, decorate with egg whites, sprinkle the top with grated yolks, decorate with herbs and vegetables.

I decorated the top with stripes of red bell pepper and greens. It is advisable to leave the cake in the refrigerator. I cooked it in the evening, so we tried it the next day. My daughter, who hates liver, was still honored to try it - she praised it and liked it.
