How to cook:

You will need:

300 g chicken fillet
250 g frozen green beans
4 eggs
5 small potatoes
50 g pitted olives (kalamata)
150 g cherry tomatoes (or regular tomatoes)

2 garlic cloves

How to cook:

Boil the chicken fillet until tender. Cool and cut into 1.5 cm wide pieces. For dressing, peel and chop the garlic. Beat mustard oil and add garlic and lemon juice. Whisk again.

Bring the chicken broth to a boil, boil the beans in it until soft. Drain in a colander and chill.

Boil the potatoes in their skins, cool and cut into quarters. Boil the eggs in a bag - 5-6 minutes, peel and cut into halves. Olives can be cut into circles, or you can leave them whole, cut the tomatoes into halves.

You will need:

pork ham (without bone) - 2 kg
carrots - 1 pc.
onion - 1 pc.
ginger - 50 g
lime juice (lemon) - 8 tbsp. l.
Brown sugar(honey) - 2 tbsp. l.

lemon - 1 pc.

How to cook:

Peel the carrots, onions and ginger and chop coarsely. Ham put in a large convenient saucepan, add water, add onions, carrots, ginger and 6 tablespoons of lime juice, bring to a boil, reduce heat, cover and cook for 2.5 hours until the meat is soft. Remove from heat and let cool slightly in broth.

We rub the carcass on all sides with salt and ground pepper (salt is not needed if you previously soaked the goose). Use wooden skewers or toothpicks to cover the throat of the goose with the skin. We stuff the goose with apples and onions with cumin and sew up the hole (skewers or toothpicks will do). We tie the legs with a non-synthetic thread. Using a skewer or other sharp object, we make punctures in the skin of the carcass so that fat is better rendered from it. We send the goose with apples to the oven preheated to 180 degrees for 50-70 minutes. The goose should lie on the breast, back up.

After the specified time, carefully turn the carcass over and fry the same amount more, periodically pouring the goose with melted fat. Next, bring to readiness (when the meat is punctured, the juice from the carcass should flow transparently), depending on the oven and the size of the bird.

While the goose with apples is cooking, you can do the sauce. First the broth. We put cut wings, giblets, cut fat, spices, chopped carrots and a second onion fried in a dry frying pan. Fill with water, bring to a boil and cook for about 10 minutes. Approximately 10 tablespoons of goose fat, melted during the roasting of the bird, mix with a couple of tablespoons of flour, put on fire, add a glass of alcohol, salt, a couple of ladles of goose broth and cook together, stirring, until the sauce thickens.

We let the finished bird stand for 10-15 minutes, covering it with foil to make it juicier. Serve to the table with sauce, and the filling can be used as a side dish.

You can also make a bird with cranberry sauce. In this case, we cook the bird according to the recipe, inside we just put onion sliced ​​​​into rings and lemon slices. Topped with cranberry sauce.

How to make it: Peel the apple and remove the core. Cut the pulp into small cubes. Onion cut into feathers, garlic - thin slices. Chop the ginger. Heat vegetable oil in a saucepan. Cut the salmon fillet into small pieces and place on a baking sheet previously greased with vegetable oil. Pour the sauce over the fillet and let stand for 20 minutes. After that, sprinkle the salmon pieces with grated cheese. Now you need to send the baking sheet to the oven, heated to 180 degrees. Fish should be baked for 30-35 minutes.

For the garnish you will need: 10 large or 15 medium potatoes, 2 egg whites, seasonings and olive oil.

First you need to make a light batter in which the potatoes will be cooked. To do this, beat well egg whites. Potatoes must be cut into slices and mixed in whipped proteins. Then add all the seasonings to your taste. A small amount of olive oil is added to a baking sheet, and put the potato wedges. If desired, you can sprinkle herbs on top. Bake potatoes at 220 degrees for about 40 minutes. while the potatoes should be stirred every 10-15 minutes.

Pork rolls with prunes and cheese


Ingredients: 1 kg pork neck, 200 g of cheese, 200 g of prunes, 250 g of sour cream, no more than 25% fat, 1 tablespoon of olive oil, 4 tablespoons of mustard with grains, 2 teaspoons of dried basil, salt and pepper to taste.

The first step is to prepare the prunes. To do this, it must be soaked in warm water for swelling. Rinse the pork well and cut into longitudinal strips 2 centimeters thick (meat should be cut across the fibers) and beat well.

Mix sour cream with butter, mustard, basil and spices. With this sauce, you need to grease each piece of meat on both sides. Let the meat brew for 10-15 minutes. Now you need to dry the prunes well and cut them into small pieces, also cut the cheese.

Now the cheese and prunes need to be laid out on ¼ of the pork and carefully twist the roll. Rolls are laid out on a baking sheet and baked at 180 degrees for about an hour.
