Chicken salad recipe

First of all, soak the raisins in rum. If you don’t have it, then cognac or brandy will do just fine. Also no? Well then, let there be water. Place the salad mix on a large flat plate. Today I had regular lettuce leaves and arugula on hand (I love it). Chop the onion into thin half rings (I have half a rather small head) and place it on the salad mix. Next come the grapes. It should be of the sweet variety. If the grapes are large and contain seeds, cut each berry into 2 halves and remove the seeds.

I always make this salad if I previously had oven-baked chicken on the menu. Our family is not the most ardent fan of breast, so it always remains partially and its direct path is in salads. Cut the breast into small pieces and distribute over the salad.

On top - raisins. Dressing - just mix vinegar, oil, a pinch of salt and sugar with a fork. If you don’t have fresh tarragon, use dry tarragon like I did this time (you need a couple of pinches). Is there none? Well, we’ll get by, although he’s very much on topic there! About the Provence spice mixture. I have tried a lot in my time and have definitely settled on one company. For a light aroma you literally need 3 turns of the mill.

How to make a feta cheese appetizer

Peel and press the garlic. Place the cheese in a bowl, add a tablespoon of fresh oregano leaves (chop if large), a tablespoon of thyme leaves, garlic and mix well with a fork. This time I didn’t have fresh thyme, I used dry thyme and not a tablespoon, but a teaspoon. Of course, you can mix it in a blender, but then the consistency of the cheese will slightly liquefy and the “snowballs” will blur a little. But, if you put everything in the refrigerator, after a while the cheese mixture will thicken again. Next is basil. I suggest taking a mortar and grinding it thoroughly. If you don’t have a mortar, then use a blender again: pour oil into it, add basil and mix until smooth.

Place the basil along with the resulting juice in a bowl, add olive oil and mix. Of course, if you don’t like or don’t have olive oil, you can totally use vegetable oil. In a plate, mix crackers (they should be white) and grated cheese. With wet hands, form small balls from the cheese mixture and roll them. We take a plate in which we will serve the appetizer and pour our food into it through a strainer. aroma oil. I don't always remove the basil. I'm quite comfortable with him too. Serve with sliced ​​baguette, for example. You can dry it a little in a frying pan or oven, or you can just fresh it, with a delicious crispy crust.

Hot:

Fish baked with sauce

Preparation:

Place the fish in a baking dish. Sprinkle the fish with lemon juice on all sides (this is done not only to add flavor, but also to make the fish less boiled). Salt and pepper. Next, let's make the sauce. In a separate bowl, melt the butter and fry the flour in it until golden color. Stirring continuously, pour in a glass of cream or milk. Add mustard nutmeg, pepper, salt and finely chopped parsley. Stir everything continuously and bring to a boil (but do not boil).

The sauce should thicken. Pour the sauce over the fish, add on top of each butter pieces and place in the oven at 200 degrees for 15 minutes. It is very important not to overcook the fish, otherwise it will turn out boiled and fall apart. 5. We take out the fish baked in the sauce, everything is ready. Before serving, you can garnish with lemon and tomato slices.

Dessert:

Chocolate truffles

Preparation:

In a small saucepan, combine cream, cinnamon and chili powder. Bring to a boil while heating over low heat and stirring. Add chocolate, broken into small pieces, and butter. Remove from heat and stir until all ingredients are combined into a homogeneous mass. If the mixture cools too quickly and the butter and chocolate do not have time to melt (for example, if you forgot to take the butter out of the refrigerator first to soften it), gently heat the entire mixture over water bath. Then add cognac and stir until smooth. Cover with cling film and refrigerate for at least 4 hours until the mixture is completely cool and firm.

Place cocoa powder in a small bowl. Using a ball scoop or a simple small spoon, “scoop” the frozen chocolate mixture and roll it into a ball. Truffles don't have to be perfectly round. The less perfect they are in shape, the more they justify their name, because truffle mushrooms are precisely irregular in shape. Dip the truffles in cocoa powder and place on a plate or in a special paper mold. Serve immediately or refrigerate in a tightly sealed container. You may need to recoat truffles that have been stored in the refrigerator in cocoa.

Preparation:

Wash the potatoes and carrots thoroughly and boil them in their skins until tender. Cool, peel and cut into small cubes. Peel the hard-boiled eggs and cut them in the same way.

Cut a piece of pork so that you get a “book” - leaves on the cover. The thickness of the “sheets” should be at least 1 cm. Make a mixture for coating: mix mustard, mayonnaise, salt. Bake in the oven without removing from the foil at t=200°C for about 1 hour. Shortly before the end of baking, open the foil to create a golden brown crust.
In my oven, it took me 50 minutes of baking in foil, and then another 20 minutes with open foil. I checked the degree of readiness with a long sharp knife: I pierced the pork in the thickest place. When the juice flowing from the puncture site turned from red-pink to transparent, the pork, baked in a piece, was cooked.

Preparation:

Place the dough on a baking tray lined with baking paper in a layer of 0.5 cm. Bake for 10-15 minutes at 180, until dry. Cool and soak in cherry juice.

Place the dough layer without defrosting on a baking sheet lined with baking paper. We ship to cold oven, turn on the heat to 180 degrees and bake until browned (25-30 minutes). Defrost the spinach. If it is not chopped, chop it finely.

Cut the champignons into thin slices.

Melt the butter in a frying pan over medium heat and fry the spinach in it for two minutes.

Add the mushrooms and cook until the moisture has completely evaporated. Salt and pepper to taste. Cool completely.

Grind cottage cheese with horseradish and sour cream. Carefully separate the baked dough layer by layer (it crumbles, but that’s not a big deal). You should get 4 layers. Moreover, the convex upper layer will be the base, and the lower flat one will be the top.

Lubricate the bottom layer with half curd filling, lay out thin slices of smoked salmon.

Preparation:

Preheat the oven to 220 degrees. Line a baking tray with baking paper.
Lightly beat the egg with a fork or small whisk. Brush it onto a sheet of puff pastry (previously defrosted). Then cut the dough into strips 1 cm thick.

Twist them into spirals and place on a prepared baking sheet (greased, lined with baking paper or silicone mat). Sprinkle with grated cheese and sesame seeds. Bake until golden brown crust for about 10 minutes. Let cool slightly before serving.

Salad with bell pepper, cucumber and cheese

Wash the lettuce leaves, dry them and tear them with your hands. We cut everything else: cucumbers, cheese, peppers into thin, short strips. bell pepper I like the green one in this salad. Puff pastry roll with turkey

Wash spinach or chard leaves and blanch for a couple of minutes in boiling water. Remove and place on a towel to blot off excess water.

Mix ground turkey with two raw eggs, ground breadcrumbs (I never use ready-made breadcrumbs, I always grind dry bread myself in a blender), mustard, salt and pepper well. In principle, you can add a little finely chopped and fried onion to the minced meat if you want. Mix the minced meat thoroughly.

Line a baking sheet with baking parchment and place a layer of ready-made, defrosted puff pastry. I usually transfer it from the freezer to the refrigerator in the evening and in the morning the dough is ready to use.
Place the minced meat on the dough in an even layer, stepping back one centimeter from the edge. Place a layer of blanched spinach leaves (if using) and 4 hard-boiled, peeled eggs on top of the minced meat.

Preparation:

First, remove the ice cream from the freezer and let it melt at room temperature. You want it to be at least soft.

Meanwhile, grind the cookies into fine crumbs. All methods are good here. You can put it in a bag and roll it several times with a rolling pin. Or just grind it in a blender. Add butter. Then combine all this with condensed milk. You should end up with a soft sticky mass that can easily take any shape.

And we begin to spread this mass into a mold covered with cling film. The edges of the film must hang down.

Try to spread the layer of cookies evenly; to do this, use a smaller pan. “Tamp down” the cookies as much as possible. Next, simply whip the cream according to the instructions on the package and combine it with the melted ice cream. Also add to ice cream chocolate syrup and mix everything again. Now you can safely pour the sweet mass into the bowl. Cover it with the hanging ends and place it in freezer for the night. In the morning, carefully pull the ends of the film and turn the cake over onto a plate, then remove the film. Decorate as desired fresh berries or nuts.

Then coat the piece of meat thickly with mustard on all sides. Place in a bowl or container, cover with foil, poke a few holes in the foil and place in the refrigerator.

6. Beef on Olivier salad. Pour water, salt, cook for 45 minutes after boiling. Remove from heat and cool without removing from the broth. Once it cools down, take it out, wrap it in film and put it in the refrigerator. Strain the broth and cook soup in it.

7. Salt the salmon. Cut 1/5 of the salmon. Season it with a tablespoon of salt, sprinkle with red pepper and finely chopped dill. Cover with lemon slices. Wrap in parchment ( baking paper). Rinse the liver well, cut into smaller pieces (if beef or pork). Place in a bowl, cover with film, make a couple of holes in the film and put in the refrigerator.

Second day .

1. Cook potatoes, half of what you bought. Fill with water, salt and cook until tender. Then drain the water. Place the cooled potatoes in the refrigerator overnight. We'll clean it tomorrow.

2. Cook carrots. Almost all of it. We leave one carrot for the pate. Cook it the same way as potatoes.

3. Cook the beets. Just like potatoes and carrots. We cook all the vegetables separately and be sure to add salt during cooking.

4. Bake boiled pork. Wrap the marinated piece of meat in several layers of foil and bake for 1 hour 20 minutes at 150 degrees in the oven. Cool the cooked boiled pork without unwrapping it and put it in the refrigerator.

5. Salted fish transfer from refrigerator to freezer.

6. Prepare roulade for cold cuts. We cut the chicken along the back, you can cut out the spine. Unfold skin side down. Remove the bones. We trim the wings and cut off the bone from the leg. We also cut the legs. You should get a layer of chicken meat on the skin. If you damage the skin somewhere when removing bones, it’s not at all scary. Beat the meat a little and add salt. Separately, stir 5-6 eggs with a fork and fry a thin omelette in a wide frying pan. Transfer the omelette to a layer of chicken meat and roll it up. Wrap the roll in two layers of cloth or gauze. Sew or tie. Wrapped roll place in a saucepan. Fill with water so that the water covers the roll by 2-3 centimeters. Bring to a boil, then reduce heat to very low. Cook for an hour and a half. Remove the pan from the stove and leave to cool along with the roll. When it cools down, take out the roll and place it in a bowl, pressing something heavy on top. The remaining broth can be strained and cooked into soup - the New Year is still far away, don’t let your family die of hunger. Don’t throw away the bones from cutting up the chicken; put them in the refrigerator until tomorrow.

7. Cook pears for dessert in advance. Peel the pears, cutting them thinly with a potato peeler. We leave the cuttings. Place the pears in a saucepan. Mix 300 grams of sugar, 300 ml of water and the same amount of wine. Pour this mixture over the pears, bring to a boil and cook for 20 minutes. Remove the pan from the heat and leave the pears in the syrup to cool. When it cools down, take it out, put it in a plate, wrap it in film and put it in the refrigerator.

8. Wash the remaining potatoes well with a dishwashing sponge. And put it in the refrigerator.

9. Boil eggs. 10 pieces hard-boiled.
